ーゼ2500単位で含有する水溶液0.2mlを加え、温
度40℃で反応させた。この反応液1mlずつを経時
的にサンプリングして、反応液中に生成するオリ
ゴ糖の還元力をソモジー・ネルソン法(520nmで
の吸光度の増加量を測定)で測定した。その結果
は、第2図に示すように、本発明のα−グリコシ
ルプルランは、プルランに比較しイソアミラーゼ
により極めて作用を受け易すく、イソアミラーゼ
活性測定用基質として好適に利用し得ることが判
