[発明の概要]
高アシルジェランガムと、糖と、緩衝剤とを添加する工程と;
植物性タンパク質と、コーヒー成分とを添加する工程と;
MCT油を添加する工程と;
続いて、141~148℃で2~6秒間UHT処理し、約15~25℃まで冷却する工程と;70~80℃で、約135/35barで均質化する工程と;
無菌条件下で容器に充填する工程と、
を含むレディ・トゥ・ドリンクコーヒー飲料の製造方法に関する。
MCTコーヒー飲料は、10kgのMCTと、4kgの糖と、1kgのアラビカコーヒー粉末と、600gのエンドウ豆タンパク質と、30gの高アシルジェランガムと、100gの重炭酸ナトリウムと、最終飲料を100kgにするのに必要な水と、を使用して調製した。
高アシルジェランガムを糖及び緩衝塩とドライブレンドした後、高撹拌下で、水が入った分離槽に添加した。
コーヒー粉末を、いくらかの量の水に予め溶解させた後、上記槽に添加した。
エンドウ豆タンパク質を添加した。
高撹拌及びいくらかの剪断力の下で、MCT油を槽内に注ぎ、予備エマルジョンを作製した。
生成物を、約142℃で約3秒間の超高温(UHT)熱処理に供した。
次いで、生成物を、75℃、135/35barで均質化した。
製品を20℃まで冷却し、好適な無菌容器、例えば、PETボトル、Tetra Pak(登録商標)、ジャー、ジャグ又はパウチに、RTD飲料を無菌充填した。
RTD飲料は、実施例1と同様に調製したが、アラビカの代わりにロブスタコーヒー粉末を添加した。より高い含有量のロブスタコーヒー(1.8kg)を添加して、最終製品のカフェイン含有量が同じになるようにした。
RTD飲料は、実施例1と同様に調製したが、糖を添加しなかった。結果は、良好な物理的安定性及び口当たりを示す。
RTD飲料は、実施例1と同様に調製したが、5kgのMCT油を添加しなかった。油の含有量が少ない方が、実施例1と比較して、色が濃くなり、クリーミーさが低下した。結果は、良好な物理的安定性及び風味を示す。
RTD飲料は、実施例1と同様に調製したが、45gの高アシルジェランガムを添加した。飲料粘度の著しい増加が確認され、ゲル化が観察された。
RTD飲料は、実施例1と同様に調製したが、5gの高アシルジェランガムを添加した。飲料の物理的安定性は良好であるが、サラサラした食感/口当たりが知覚された。
RTD飲料は、実施例1と同様に調製したが、エンドウ豆タンパク質を添加しなかった。重度の相分離が観察された。
RTD飲料は、実施例1と同様に調製したが、1.1kgのエンドウ豆タンパク質を添加した。飲料の物理的安定性は良好であったが、望ましくない風味(豆臭い(beany)、苦味など)が知覚された。
Claims (7)
- 可溶性コーヒー抽出物と;
中鎖トリグリセリド(MCT)と;
高アシルジェランガムと;
植物性タンパク質と;
緩衝剤と、を含み、
可溶性コーヒー抽出物が0.5~2.5w/w%であり、MCTが5~10w/w%であり、高アシルジェランガムが0.01~0.04w/w%であり、植物性タンパク質が0.3~1.0w/w%のエンドウ豆タンパク質である、
常温保存可能なレディ・トゥ・ドリンクコーヒー飲料。 - グアーガム、ペクチン、デンプン、及び/又はこれらの組み合わせを更に含む、請求項1に記載の飲料。
- 0~10w/w%の範囲の糖を更に含む、請求項1に記載の飲料。
- スクロース、ラクトース、グルコース、フルクトース、及び/又はこれらの組み合わせを含む糖を更に含む、請求項1に記載の飲料。
- 前記緩衝剤が、重炭酸ナトリウム、リン酸二カリウム、クエン酸塩、及び/又はこれらの組み合わせを含む、請求項1に記載の飲料。
- 0~0.3w/w%の範囲の重炭酸ナトリウムを含む、請求項5に記載の飲料。
- 高アシルジェランガムと、糖と、緩衝剤とを添加する工程と;
植物性タンパク質と、可溶性コーヒー抽出物とを添加する工程と;
MCT油を添加する工程と;
70~80℃で、約135/35barで均質化する工程と;
続いて、141~148℃で2~6秒間UHT処理し、15~25℃まで冷却する工程と;
無菌条件下で容器に充填する工程と、
を含む、請求項1~6のいずれか一項に記載のレディ・トゥ・ドリンクコーヒー飲料の、製造方法。
