柑橘系の果実丸ごと又は皮と実を破砕するに際し、破砕の前、後、あるいは途上で、前記果実丸ごと又は皮と実の重量の0.2〜5倍量の水を加え、
破砕後、固液分離するものであり、
前記固液分離は、周壁がスクリーンで構成され、内部の軸周りにスパイラル状のスクリュー羽根が設けられた円筒体を、軸が水平方向となるように設置し、
前記円筒体の軸方向の一端部に、水を含む破砕後の前記柑橘系の果実丸ごと又は皮と実を投入し、前記スクリュー羽根によって前記円筒体内を他端部に移行する間に、されるものである
ことを特徴とする柑橘系果実の加工方法。
