Description
The present invention, beverages, and to manufacture how the beverage.
In recent years, the number of low-calorie foods and drinks has been increasing due to the growing health consciousness and diet consciousness, and among them, the demand for foods and drinks using high-sweetness sweeteners is increasing dramatically.
This high-sweetness sweetener has a sweetness of several tens to several hundred times that of sucrose, and even if it is added in a small amount, it can impart a sweetness of a desired strength. As a result, it is possible to reduce the calorie content of the food and drink as a whole.
However, this high-sweetness sweetener usually has a peculiar aftertaste such as bitterness and astringent taste, and the after-sweetness peculiar to the high-sweetness sweetener tends to be maintained. There was a problem that the taste of the food was reduced.
Conventionally, a method for improving the drawbacks of such a high-sweetness sweetener has been made.
For example, Patent Document 1 discloses a sugar substitute sweetener in which a tea extract containing a non-polymeric catechin or the like is blended with a high-sweetness sweetener, and this sweetener has the same taste as sugar. It has been shown to have.
Further, Patent Document 2 discloses a food or drink containing a sweetener and a polymerized polyphenol. According to this food or drink, the sweetness of the peak sweetness of the sweetener is hardly reduced, and the food or drink is tastefully. It has been shown that persistent sweetness can be suppressed as an unfavorable aftertaste. Further, Patent Document 2 shows that a high-sweetness sweetener is preferably used as the sweetener.
Further, Patent Document 3 discloses a method for improving the taste of a high-sweetness sweetener, which comprises combining a high-sweetness sweetener with an enzyme-treated isoquercitrine and / or an apple polyphenol.
However, as a result of studies by the present inventors, in the above-mentioned techniques, in order to exhibit the effect of improving the taste of high-sweetness sweeteners, a specific amount or more of additives must be added, whereby It has been found that foods and drinks may be given aroma and taste derived from additives, and depending on the concentration, turbidity may occur in appearance.
For this reason, it has been desired to develop a technique capable of improving the taste of a high-sweetness sweetener even with a small amount of addition.
In view of such circumstances, it is an object of the present invention to provide a food or drink in which the aftertaste peculiar to a high-sweetness sweetener is effectively improved.
In order to solve the above problems, the present inventors have diligently studied, and when a specific plant extract or mash extract is allowed to act on a food or drink containing a high-sweetness sweetener, the taste is extremely remarkable. It was found that the improvement effect is exhibited.
Further, since these extracts bring about a remarkable taste improving effect, it is possible to sufficiently improve the taste of various products even with a limited amount of addition.
