サンプルNo.1のβ−1,3−1,4−グルカン含量は11.7質量%であり、アラビノキシラン含量は1.2質量%であった。尚、アラビノキシランを構成するアラビノースとキシロースの構成比は、アラビノース:キシロース=1:2.5であった。

大麦粉砕物Bにおける、粒子径500μm以上の粒子は0体積%であり、粒子径40μm以下の粒子は53.9体積%であった。
大麦粉砕物Bの2kgを140メッシュの篩にて60分間処理し、篩ON品440g(粒子径50〜500μmの粒子が95.6体積%の画分であった。)を得た。これを粉砕機(商品名:ミクロパウダー、ウエスト社製)の粒度つまみを10ミクロンにセットしてさらに粉砕し、サンプルNo.2とした。
サンプルNo.2のβ−1,3−1,4−グルカン含量は13.2質量%であり、アラビノキシラン含量は4.2質量%であった。尚、アラビノキシランを構成するアラビノースとキシロースの構成比は、アラビノース:キシロース=1:1.6であった。

大麦粉砕物Cの30gを140メッシュの篩にて60分間処理し、篩ON品25g(粒子径50〜500μmの粒子が61.4体積%の画分であった。)を得た。これを粉砕機(商品名:ミクロパウダー、ウエスト社製)の粒度つまみを135ミクロンにセットして粉砕した後、同10ミクロンにセットしてさらに粉砕し、比較サンプルNo.3とした。
一方、上記で節を通過したOFF品5g(粒子径50〜500μmの粒子が38.3体積%の画分であった。)を、粉砕機(商品名:ミクロパウダー、ウエスト社製)の粒度つまみを135ミクロンにセットして扮砕した後、同10ミクロンにセットしてさらに粉砕し、比較サンプルNo.4とした。
比較サンプルNo.3のβ−1,3−1,4−グルカン含量は6.1質量%であり、アラビノキシラン含量は4.1質量%であった。尚、アラビノキシランを構成するアラビノースとキシロースの構成比は、アラビノース:キシロース=1:1.5であった。
また、比較サンプルNo.4のβ−1,3−1,4−グルカン含量は1.6質量%であり、アラビノキシラン含量は4.5質量%であった。尚、アラビノキシランを構成するアラビノースとキシロースの構成比は、アラビノース:キシロース=1:1.8であった。

〔実施例3〜4及び比較例6〜11〕
市販の小麦粉(商品名:クイン、日本製粉杜製、Lot.T/050912T445)285gに、サンプルNo.1〜2、比較サンプルNo.1〜6をそれぞれ15g添加し混合してから、2質量%食塩水130gを添加し、よく混練し、生麺(厚さ3mm、幅5mm、長さ20cmの形状に成形)を得た。この生麺を沸騰水中で12分間茹で上げ、流水にて30秒間冷却し、麺をそれぞれ得た。
麺の弾力性は食感に影響を与える。弾力性が弱すぎると歯ごたえを感じず、弾力性が強すぎると噛み切れない。麺の食感は適度な弾力性が要求される。本発明において弾力性の評価は麺を破断する際に必要なエネルギー、つまり破断応力の測定により行なった。弾力性が弱いと破断応力は低く、弾力性が高いと破断応力が高く測定される。
上記で得られた麺を20分間放置し、クリープメータ(RE−3305型、(株)山電社製)を用いて破断応力測定を行なった。プランジャーはNo.49(先端1mm幅 平面仕上げ)を用い、長さ5cmに切断した麺を試料台に乗せてテクスチヤー用サンプル押さえφ40で固定した。格納ピッチ0.05sec、測定歪率99%、測定速度0.5mm/secで破断応力を測定した。
弾力性を以下の基準で評価した。その結果を表1に示す。
◎ :15000N/m2 以上17000N/m2 未満
○ :13000N/m2 以上15000N/m2 未満
△ :11000N/m2 以上13000N/m2 未満
× :9000N/m2 以上11000N/m2 未満
×× :9000N/m2 未満
[Examples 3 to 4 and Comparative Examples 6 to 11]
To 285 g of commercially available wheat flour (trade name: Quinn, manufactured by Nippon Flour Mill, Lot. T / 050912T445), sample No. 1-2, comparative sample no. 15 g of each of 1 to 6 was added and mixed, and then 130 g of 2% by weight saline was added and kneaded well to obtain raw noodles (formed into a shape having a thickness of 3 mm, a width of 5 mm, and a length of 20 cm). The raw noodles were boiled in boiling water for 12 minutes and cooled with running water for 30 seconds to obtain noodles.
The elasticity of noodles affects the texture. If the elasticity is too weak, it will not feel crunchy, and if it is too strong, it will not chew. The noodle texture is required to have an appropriate elasticity. In the present invention, the elasticity was evaluated by measuring energy required for breaking noodles, that is, breaking stress. If the elasticity is weak, the breaking stress is low, and if the elasticity is high, the breaking stress is high.
The noodles obtained above were allowed to stand for 20 minutes, and the breaking stress was measured using a creep meter (RE-3305 type, manufactured by Yamaden Co., Ltd.). The plunger is no. 49 (tip 1 mm width flat finish), noodles cut to a length of 5 cm were placed on a sample table and fixed with a texture sample holder φ40. The breaking stress was measured at a storage pitch of 0.05 sec, a measurement strain rate of 99%, and a measurement speed of 0.5 mm / sec.
The elasticity was evaluated according to the following criteria. The results are shown in Table 1.
