本発明に用いるショ糖脂肪酸エステルは、HLB６以下である。特に好ましくはHLB２以下である。この様なものとしては前記の条件を満たすショ糖脂肪酸エステルであれば特に制限はないが、第一工業製薬株式会社より市販されている「DKエステルR10」が特に好ましく例示できる。また、HLBが６を超えるものであると、本発明の目的を達成することができない。本発明におけるこの様なショ糖脂肪酸エステルの好ましい含有量は、乳化組成物全量に対して、0.01〜10.0重量％であり、特に好ましくは、0.1〜5.0％である。 The sucrose fatty acid ester used in the present invention is HLB 6 or less.
