【発明の属する技術分野】
本発明は乾燥チーズ及びその製造方法に関する。特に本発明はチーズ類を加熱溶融する際に、レシチン等の乳化剤を添加して製造したチーズを凍結乾燥することで、きしみのない新規の食感を有する乾燥チーズを製造する方法及びその方法によって製造した乾燥チーズに関する。

【従来の技術】
チーズは、使用する乳酸菌や酵素あるいは熟成温度や熟成期間等の製造条件によって、風味や食感も異なるものが得られることが知られているが、保存性の向上や用途の拡大等を意図してチーズを乾燥する方法が種々提案されている。

例えば、原料ナチュラルチーズの一種類もしくは複数種類を組み合わせたものに水を加え、この原料ナチュラルチーズと水が全体に均一状態に混り合っているが未だ乳化状態に至らない程度に混合し、これを凍結乾燥する乾燥ナチュラルチーズの製造方法が提案されている(例えば、特許文献1参照)。

また、加熱溶融処理した乳化チーズ類を主原料とする含水原料を溶融温度より低温でブロック状物乃至粒状物が視認されない程度まで撹拌し、賦形状態で乾燥する乾燥チーズの製造方法が提案されている(例えば、特許文献2参照)。

さらに、チーズ類を低速度で撹拌しながら加熱し、これに気体を通気して含気させたチーズ類を真空下で発泡させ、つづいて凍結乾燥する乾燥チーズの製造方法が提案されている(例えば、特許文献3参照)。

そして、繊維状組織を有し、水分を約40〜45%含有するチーズを凍結乾燥することにより、水分含有量が10〜30%重量%になるように調整する繊維状組織を有する乾燥チーズの製造方法が提案されている(例えば、特許文献4参照)。

【発明が解決しようとする課題】
特許文献1には、同文献記載の方法によって製造されたものは、オイルオフがなく、トッピング材として用いることができるものであることが示されている。トッピング材として用いるためには湯戻り復元性が必要であり、水の添加を必須とし、乾燥前のチーズの水分値を一定範囲に調整する必要がある。また、加熱溶融工程を持たないことから、チーズの流動性が乏しく、また、乳化状態まで至らないような不完全なチーズと水との混合状態と記載されているが、その判定は非常に困難であり、混合が弱ければチョッパーで粉砕したナチュラルチーズ粒が残り、部分的に湯戻り不良となったり、混合が強すぎるのは良くないなど、その混合状態の終点の判断は極めて困難であり、安定な混合状態とするのは難しい。

特許文献2には、同文献記載の方法によって製造されたものは、湯戻り時にオイルオフが生じにくく、トッピング材として用いることができるものであることが示されている。湯戻り復元性を付与するために水の添加を必須とし、乾燥前のチーズの水分値を一定範囲に調整する必要がある。また、加熱溶融処理したチーズ類と水を混合し、ブロック状物ないし粒状物が視認されない程度まで撹拌するというものであり、特許文献1記載の方法と同様に、どこまで撹拌するのか、撹拌工程の終了判断が極めて難しく、多大な手間を要する。

特許文献3には、同文献記載の方法によって製造されたものは、湯戻り復元性に優れ、トッピング材として用いることができるものであることが示されている。そのために、凍結乾燥に先立って含気させておくことによって多孔質な組織とし、水分の浸透を早めることが記載されている。その結果得られたものは、糸引き性を有しており、トッピング材としては適していても、チーズそのものとして食するには適さない。

特許文献4に記載された方法は、水分含有量を10〜30重量%に調整しなければならず、また、繊維状組織を有する特殊なチーズしか得られない。

さらに、一般に、ナチュラルチーズおよびプロセスチーズを凍結乾燥した場合、きしみがあり、そのまま食べるには不適当な食感の乾燥チーズになる。

本発明は従来の技術の有するこのような問題点に鑑みてなされたものであって、その目的は、きしみのない食感を有する乾燥チーズ及びその製造方法を提供することにある。

【課題を解決するための手段】
上記目的を達成するために本発明は、原料であるナチュラルチーズに、溶融塩および水または安定剤および水とともに乳化剤を添加して加熱しながら撹拌し、これを冷却後に切断して凍結し、さらに凍結乾燥することを特徴としている。

本発明において原料として用いられるナチュラルチーズとしては、ゴーダチーズ、チェダーチーズ、エメンタールチーズ、モザレラチーズなどを単独または2種類以上を混合して用いることができるが、ナチュラルチーズの種類は限定されない。

本発明において使用する乳化剤としては、例えば、大豆レシチン、高純度レシチン、酵素改質レシチン、ショ糖脂肪酸エステル(HLBは問わない)、モノグリセリン脂肪酸エステル、有機酸モノグリセリン脂肪酸エステル、ポリグリセリン脂肪酸エステル(重合度は問わない)などを挙げることができるが、適切な乳化剤を選択して適量添加することにより、きしみのない食感の乾燥チーズを製造することができる。

程度の差はあるが、ほぼすべての乳化剤を添加することできしみをなくす効果が認められる。しかし、乳化剤の種類により得られた乾燥チーズの食感が異なるため、適宜乳化剤を選択することが好ましい。

本発明の効果(きしみのない食感)を有する乾燥チーズを得るための乳化剤の添加量は乳化剤の種類により異なる。レシチン類を添加する場合は、全原料中に占める比率が0.3〜0.9重量%であるのが好ましいが、レシチン類の添加量が多くなると乳化状態がやや不良になることがあるので、レシチン類の添加量は0.3〜0.6重量%であるのが特に好ましい。

乳化剤の種類によっては乳化時に脂肪が分離するため、乳化剤の添加量を脂肪が分離しない程度に抑えるのが好ましい。

溶融塩は、イオン交換力とカゼイン蛋白質の解膠溶解作用によりチーズの乳化を促進することで、離水防止、オイルオフの抑制および充填性の向上等の目的で添加されるものであるが、溶融塩はきしみの発生を助長する傾向がある。従って、溶融塩存在下できしみのない食感の乾燥チーズを製造するためには、全原料中に占める比率は、溶融塩が1.5重量%以下であるときに、乳化剤(例えば、レシチン類)は、0.6重量%以上であるのが好ましく、溶融塩が1.5〜2.0重量%程度であるときは、乳化剤(例えば、レシチン類)は、0.9〜1.2重量%であるのが好ましい。本発明の製造方法で使用しうる溶融塩としては、例えば、リン酸塩系溶融塩(ヘキサメタリン酸Na、ピロリン酸Na、トリポリリン酸Na、ポリリン酸Na、オルソリン酸Na等)やカルボン酸塩系溶融塩(クエン酸Na等)を使用することができるが、これらに限定されるものではない。

安定剤は、その保水力および蛋白質の安定化により、離水防止およびオイルオフの抑止等の目的で添加されるものであり、全原料中に占める比率は、0.2〜1.0重量%であるのが好ましい。本発明の製造方法で使用しうる安定剤としては、例えば、ローカストビーンガム、グアーガム、キサンタンガム、カラギーナン、ペクチン、カードラン等を使用することができるが、これらに限定されるものではない。

きしみのない食感の乾燥チーズを製造するためには、乳化釜にナチュラルチーズ、乳化剤、水および添加剤(溶融塩または安定剤)を入れて乳化処理を行う時の乳化釜の撹拌羽根の回転数は、85〜215rpmが好ましい。85rpm以下の回転数ではチーズの乳化が困難になる傾向にあり、215rpmを超えると、硬くなる傾向が顕著になるからである。特に、その回転数を85〜170rpmとすることで、口の中でくずれてふわっとした軽い食感の乾燥チーズを得ることができるので、特に好ましい。

また、本発明の方法で製造されるチーズに、風味付けのため、香辛料、ナッツ、魚類や獣肉の燻製等を単一もしくは2種類以上を加えることも可能である。また、原料であるナチュラルチーズに各種の脂肪、たんぱく質、糖質等を配合したチーズフードの製造にも本発明は適用できる。

【発明の実施の形態】
以下に本発明の実施の形態を説明するが、本発明は下記実施形態に限定されるものではない。本発明の技術的範囲を逸脱しない範囲において、適宜変更と修正が可能である。
(実施形態1)「乳化剤の配合量を変化させた場合」
チェダーチーズ1.7kgと、安定剤(ローカストビーンガム)9.0gと、添加水150mlからなる配合のものに、乳化剤(大豆レシチン)を0重量%、0.1重量%、0.2重量%、0.3重量%、0.6重量%、0.9重量%、1.0重量%となるように添加した(合計で100重量%)。そして、上記各配合のものをバッチ式乳化釜(図示せず)に投入し、その乳化釜に直接蒸気(125℃)を吹き込みながら、120rpmの回転数でその乳化釜の撹拌羽根を回転させつつ撹拌した。乳化釜内の温度を監視しながら85℃で加熱を止め、乳化釜内の圧力が10〜30cmHgとなるように減圧してチーズ成分を調製した。乳化時の加熱温度は釜内の原料が溶融する温度であればよく、85℃以外の温度を選択することもできる。
