【発明の属する技術分野】
本発明は、例えばソフトクリーム(ソフトアイスクリーム)等の冷菓を製造する冷菓製造装置に関するものである。

【従来の技術】
従来よりこの種冷菓製造装置は、コンプレッサ、凝縮器、キャピラリチューブ及び冷却シリンダとホッパー(ミックスタンク)に装備した冷却器からなる冷却装置を備え、この冷却装置によって冷菓製造時には冷却器に液化冷媒を減圧してから流して冷却シリンダ、ホッパーを冷却する。そして、冷却シリンダ内にはビータが取り付けられ、冷却シリンダ内のミックスを冷却器により冷却しながら、ビータによって撹拌し、ソフトクリームやシャーベットなどの冷菓を製造するものであった(例えば、特許文献1参照)。

【発明が解決しようとする課題】
この場合、ミックスはホッパー内に貯溜され、ホッパーからはミックス供給器によって冷却シリンダ内にミックスを流し込む方式が採られていた。このミックス供給器は上端が大気中に開放し、ホッパー内の下端部にてホッパー内に連通したパイプ状のものであり、ミックスの供給量はこのミックス供給器におけるヘッド差に依存していた。

即ち、ホッパーから冷却シリンダへのミックスの供給は重力に依存していたため、供給量が安定しない欠点があった。また、ミックスは予め原料袋内に収納されているものを開封し、ホッパー内に注入するものであったため、衛生上の問題が発生する欠点もあった。

そのため、ミックスを重力に依存すること無く、且つ、ホッパーに移し替えること無く原料袋から直接冷却シリンダに供給して冷菓を製造できる冷菓製造装置の開発が望まれていた。本発明は、係る従来の技術的課題を解決するために成されたものである。

【課題を解決するための手段】
即ち、本発明の冷菓製造装置は、ミックスが収納された可撓性を有する袋本体、及び、この袋本体の外側に設けられて当該袋本体との間に密閉空間を形成可能とされた可撓性を有する外層体とから成るミックス原料袋を保冷する保冷庫と、ミックス原料袋から供給されたミックスを撹拌しながら冷却することにより冷菓を製造する冷却シリンダと、保冷庫及び冷却シリンダを冷却する冷却装置と、分配器と、この分配器に接続された空気圧縮装置と、ミックス原料袋の袋本体内と冷却シリンダ内とを連通するためのミックス供給通路と、分配器に接続され、空気圧縮装置にて生成された圧縮空気をミックス原料袋の外層体と袋本体との間に供給するための袋加圧通路と、分配器に接続され、圧縮空気を冷却シリンダ内に供給するための空気供給通路と、分配器に接続された圧力検出手段と、この圧力検出手段の出力に基づいて空気圧縮装置を制御する制御手段とを備え、ミックス供給通路と空気供給通路とを合流させた後、冷却シリンダ内に連通させているので、ミックス原料袋ごと保冷庫内でミックスを保冷し、空気圧縮装置により袋加圧通路を介してミックス原料袋の外層体と袋本体間に圧縮空気を供給して袋本体内からミックスを強制的に押し出し、ミックス供給通路を介して直接冷却シリンダに供給し、冷菓を製造することができるようになる。

これにより、重力に依存したミックスの供給方式を廃して安定的なミックスの自動供給が実現できるようになると共に、ミックスをミックス原料袋から直接冷却シリンダに供給することで、衛生上の問題も解決することができるようになる。また、空気供給通路を介して冷却シリンダ内に圧縮空気を供給するので、支障無く冷菓のオーバーランが得られる。特に、ミックス供給通路と空気供給通路とを合流させた後、冷却シリンダ内に連通させているので、冷却シリンダへのミックスの供給とオーバーラン用の空気の供給の双方を一箇所から行うことができるようになり、冷却シリンダの構造の簡素化が図れるものである。更に、空気圧縮装置、袋加圧通路、空気供給通路、圧力検出手段を分配器に接続しているので、それらを相互に連通させ、圧縮空気の供給と制御手段による圧力検出手段の出力に基づいた空気圧縮装置の制御を実現することができるようになる。

また、請求項2の発明の冷菓製造装置は、上記に加えて冷却シリンダに着脱可能に取り付けられた合流通路部材を設け、ミックス供給通路と空気供給通路を合流通路部材に着脱可能に接続しているので、ミックス供給通路や合流通路部材の洗浄作業が容易となる。

更に、請求項3の発明の冷菓製造装置は、上記に加えてミックス供給通路と合流通路部材との間、及び、空気供給通路と合流通路部材との間にそれぞれ逆止弁を接続すると共に、各逆止弁の順方向が合流通路部材側となるようにしているので、ミックス供給通路から空気供給通路側にミックスが流入し、或いは、空気供給通路からミックス供給通路側に圧縮空気が流入する不都合を回避できるようになり、空気供給通路のミックスによる汚損並びにミックス原料袋の袋本体内への空気の逆流により生ずる不都合を未然に回避することができるようになる。

【発明の実施の形態】
以下、本発明の実施形態を図面に基づいて説明する。図1は本発明を適用した冷菓製造装置SMの一部縦断斜視図、図2は冷菓製造装置SMのミックス供給に関する構成図、図3は図2のミックス原料袋5周辺の部品の分解構成図、図4は冷菓製造装置SMの電気回路のブロック図を示している。

実施例の冷菓製造装置SMは、ソフトクリームやシャーベット(シェーク)等の冷菓(実施例ではソフトクリームを製造するものとする)を製造販売するための装置であり、図1において本体1の上部には、ソフトクリームの原料ミックス(ソフトクリームやシャーベットなどの冷菓原料となるミックス)を収納したミックス原料袋5を貯蔵保冷するための断熱性の保冷庫2が設けられている。この保冷庫2の庫内2Aは前面に開口しており、この前面開口は回動自在の断熱扉3にて開閉自在に閉塞され、ミックス原料袋5の交換時等にはこの断熱扉3が開放される。尚、33はこの断熱扉3の開閉を検知するための保冷庫開閉スイッチである。

一方、保冷庫2の庫内2A天井部には保冷庫冷却器4と図示しない送風機が配設されており、この保冷庫冷却器4により冷却された冷気が送風機により庫内2Aに循環されて保冷庫2内のミックス原料袋5や後述する周辺部品は所定の温度に保冷される。

尚、ミックス原料袋5はナイロンなどの所定の強度を有するカバー31内に納出自在に収納されており、その状態で保冷庫2内に収納される。このカバー31は上面がファスナー32により開閉自在とされたバックであり、下面にはミックス原料袋5の後述する出口部材22及び連通口部材24が吐出するパイプ接続部(図示せず)が形成されている。このようなカバー31内にミックス原料袋5を収納することにより、万一ミックス原料袋5からミックスが漏出した際にも庫内2Aが汚損される不都合が回避若しくは抑制される。また、後述する如く圧縮空気が供給された際のミックス原料袋5の膨らみがカバー31によって規制されるので、ミックス原料袋5の破裂の発生も回避できるようになる。

この保冷庫2内にはミックス原料袋5を前側に低く斜めに保持するための保持台6が設けられている。また、保冷庫2の内壁からは袋加圧通路を構成する袋加圧パイプ7(図2に示す)が庫内2Aに引き出されている。更に、保冷庫2の庫内2A底壁には後述する冷却シリンダ8のミックス入口9が開口して設けられている。

ここで、ミックス原料袋5は例えばアルミ蒸着された可撓性を有する樹脂製の袋本体21と、この袋本体21の一面に取り付けられ、袋本体21内と外部とを連通する硬質樹脂製の出口部材22(未使用時はシール材にて封止されている)と、袋本体21の他面に周囲を溶着され、当該袋本体21と同素材から成る可撓性の外層体23と、この外層体23と袋本体21の間の後述する非接着部分に連通するように袋本体21の一面に取り付けられた硬質樹脂製の連通口部材24とから構成されている(図2)。

前記外層体23と袋本体21とは当該外層体23の周囲以外は非接着状態とされており、これにより、外層体23と袋本体21間には密閉空間が構成可能とされている。そして、前記連通口部材24はこの外層体23と袋本体21との間(密閉空間)と外部とを連通する。また、ミックス(図2にMで示す)はこの袋本体21内に収納されると共に、外層体23と袋本体21との間の密閉空間には圧縮空気(図2にAIで示す)が供給可能とされている。

上述の如くミックスを収納したミックス原料袋5は、前述の如くカバー31内に収納された状態で保冷庫2の庫内2Aに収納され、保持台6に傾斜保持される。このとき、出口部材22及び連通口部材24は下になるように載置される。このように配置することで、ミックス原料袋5が膨れた場合にも庫内2Aの天井との間に十分な間隔を保持して冷気循環を確保できる。また、各パイプやチューブとの接続も容易となる。そして、前記袋加圧パイプ7の一端は連通口部材24に着脱可能に接続され、外層体23と袋本体21との間(密閉空間)に連通される。また、出口部材22にはミックス供給通路を構成するミックス原料チューブ34の一端が着脱可能に接続される。このミックス原料チューブ34は可撓性のチューブにて構成されている。

一方、図1において8は、前記ミックス入口9から流入するミックスをビータ10により回転撹拌して冷菓を製造する前述した冷却シリンダであり、その周囲にはシリンダ冷却器11が取り付けられている。ビータ10はビータモータ12、駆動伝達ベルト、減速機13及び回転軸を介して回転される。製造された冷菓は、冷却シリンダ8の前面開口を開閉可能に閉塞するフリーザドア14に配設された取出レバー15を操作することにより、プランジャー16が上下動し、図示しない抽出路が開放されると共に、ビータ10が回転駆動されることにより、取り出される。上記フリーザドア14や取出レバー15、プランジャー16により冷菓抽出部が構成されている。

前記フリーザドア14は透明ガラス若しくは透明硬質樹脂にて構成されて透視部を構成する。このフリーザドア14を通して冷却シリンダ8内は前方から透視可能とされている。このフリーザドア14の本体1側の面には永久磁石36が埋め込まれており、この永久磁石36に対応する位置の本体1前面にはリードスイッチ37が取り付けられている。そして、フリーザドア14が本体1に取り付けられ、冷却シリンダ8の前面開口を閉塞したときに、このリードスイッチ37は永久磁石36によって接点が閉じられ、フリーザドア14が取り外されて冷却シリンダ8の前面開口が開放されたときは、リードスイッチ37の接点が開放されるよう構成されている。

また、冷菓抽出部を構成する取出レバー15の下方に対応する位置の本体1前面には近接スイッチ(近接センサ)38が取り付けられている。この近接スイッチ38は赤外線や音波を用いて取出レバー15の下側に冷菓を盛るコーンや紙カップなどの容器が宛われたことを検出する。

更に、図1に示す如く保冷庫2の庫内2Aには洗浄用ホース39が取り付けられている。この洗浄用ホース39は冷却シリンダ8内の洗浄の際に洗浄用水を冷却シリンダ8内に吐出するために設けられており、本体1内を通過して降下し、側面に引き出された洗浄用水配管41に接続されている。この洗浄用水配管41は図示しない水道管に接続され、更に、洗浄用水配管41の途中には開閉栓42が介設されて、本体1の前面に配設されている。この開閉栓42は常には洗浄用水配管41を閉じており、冷却シリンダ8を洗浄する際にはこれを回して洗浄用水配管41を開くものである。

また、洗浄用ホース39の先端にはコネクタ43が取り付けられており、このコネクタ43は前記冷却シリンダ8のミックス入口9に着脱自在に接続可能とされている。この場合、コネクタ43は常には洗浄用ホース39の先端開口を閉じており(従って、この状態で開閉栓42を開いても洗浄用水は出ない)、ミックス入口9に接続された際に開放する機構を有している。これにより、ミックス入口9への接続作業が極めて容易となる。

上記本体1の下部には冷却装置Rを構成するコンプレッサ18や凝縮器20、四方弁19等が収納設置されている。尚、この四方弁19は前記シリンダ冷却器11に高温冷媒を流して解凍・殺菌などを行わせるためのものである。

次に、図2において27は空気圧縮装置を構成するエアーポンプであり、このエアーポンプ27の吐出パイプ28は分配器46に接続されている。そして、この分配器46には前記袋加圧パイプ7の他端が接続される。更に、この分配器46には圧力検出手段を構成するエアー回路内センサー(圧力センサー)47と排気パイプ49が接続され、この排気パイプ49には排気手段を構成するエアー回路内排気電磁弁48(エアーポンプの保護とエアー回路の排気用)が接続される。

更にまた、分配器46には空気供給通路としてのエアー回路51の一端が接続され、これにより、分配器46を介して袋加圧パイプ7、エアー回路51、エアーポンプ27、エアー回路内センサー47及び排気パイプ49は分岐接続されたかたちで相互に連通されている。このエアー回路51には流路開閉手段としてのエアー回路開閉電磁弁52とエアーフィルタ53が介設されている。このエアーフィルタ53はエアー回路51内に流入する圧縮空気中の異物や雑菌を捕獲して除去するものである。

そして、前記ミックス原料チューブ34の他端並びにエアー回路51の他端はそれぞれ逆止弁54、56を介して合流通路部材としてのY型混合器57の二つの入口に着脱可能に接続される。上記逆止弁54、56は何れもY型混合器57の方向が順方向とされている。このY型混合器57の出口が前記冷却シリンダ8のミックス入口9に着脱可能に接続される。また、これらミックス原料袋5、ミックス原料チューブ34、エアー回路51の他端部、袋加圧パイプ7の一端部及びY型混合機57は保冷庫2の庫内2Aに位置し、保冷されることになる。

ここで、図3を用いて袋加圧パイプ7やミックス原料チューブ34、エアー回路51やY型混合機57の具体的な接続構造を説明する。袋加圧パイプ7も可撓性を有するチューブにて構成され、ワンタッチ継手61によりミックス原料袋5の連通口部材24に着脱可能に接続される。また、ミックス原料チューブ34の一端は取付ナット62と先端鏃状とされた接続パイプ63によりOリング64を介してミックス原料袋5の出口部材22に着脱可能に接続される。この出口部材22は前述の如く当初はシール材にて封止されているが、接続パイプ63を差し込むことでOリング64が出口部材22内をシールし、それと同時に或いはその後、先端でシール材が破られることになる。

また、ミックス原料チューブ34の他端は取付ナット66と接続パイプ67(逆止弁54を内蔵)によりY型混合器57の一方の入口に着脱可能に接続される。ミックス原料チューブ34は前述の如く可撓性のチューブであるので、ピンチ68にて挟むことで容易に封止可能である。但し、通常使用時はこのピンチ68は開いておくものとする。

他方、前記エアー回路51の他端も接続パイプ69(逆止弁56を内蔵)によりY型混合器57の他方の入口に着脱可能に接続される。そして、このY型混合器57の出口はOリング71を介して冷却シリンダ8のミックス入口9に着脱可能に接続されている。このように着脱可能に接続することで、ミックス原料チューブ34やY型混合器57、逆止弁54、56などの洗浄が容易となる。

次に、図4において73は制御手段を構成する汎用のマイクロコンピュータであり、このマイクロコンピュータ73の入力には前記保冷庫開閉スイッチ33、エアー回路内センサー47、近接スイッチ38、リードスイッチ37が接続されている。また、マイクロコンピュータ73の入力には、更に本体1のコントロールパネル74に設けられたプルダウンスイッチ(操作スイッチ)76と冷却スイッチ77が接続されている。

更に、マイクロコンピュータ73の出力には前述した冷却装置Rのコンプレッサ18やビータモータ12などから構成される冷菓製造ユニットの他、前記エアー回路内排気電磁弁48とエアーポンプ27、エアー回路開閉電磁弁52が接続されている。更にまた、マイクロコンピュータ73の出力には前記操作パネル74に設けられた売り切れ表示ランプ78も接続されている。

以上の構成で、次に動作を説明する。冷菓製造装置SMの図示しない電源プラグが電源に接続されて電源がONされると、マイクロコンピュータ73は先ずリードスイッチ37の接点が閉じているか否か判断する。そして、フリーザドア14が取り付けられて冷却シリンダ8の前面開口を閉じており、永久磁石36がリードスイッチ37の接点が閉じていれば以後の運転の開始を許容するが、フリーザドア14が正常に取り付けられておらず、リードスイッチ37の接点が開いている場合には以後の運転の開始を禁止し、例えば売り切れ表示ランプ78を点滅させて警報を表示する。これにより、フリーザドア14の取り付けを忘れ、或いは、正常に取り付けない状態で運転が開始されることを防止すると共に、フリーザドア14の取り付けを使用者に促す。

次に、図5及び図6のタイミングチャートを参照しながらミックスの供給から冷菓の製造、冷菓の抽出動作について説明する。尚、ミックス原料袋5は前述の如くカバー31内に収納した状態で保冷庫2の庫内2Aにセットし、袋加圧パイプ7、ミックス原料チューブ34、Y型混合器57も図2に示したように接続する。但し、プルダウンを始めるこの時点では逆止弁56を含むエアー回路51をY型混合器57から外しておく。

(1)初期状態
図1における電源ONからの初期状態で、マイクロコンピュータ73は先ず所定期間(実施例では5秒間)エアー回路内排気電磁弁48を開く。その後、前述の如くミックス原料袋5を保冷庫2の庫内2Aにセットするなどした後、断熱扉3が閉じられたことを保冷庫開閉スイッチ33の検出動作に基づいて検出すると、マイクロコンピュータ73はエアーポンプ27を運転する。その後、保冷庫2の断熱扉3が開放された場合、マイクロコンピュータ73は保冷庫開閉スイッチ33の検出動作に基づき、エアーポンプ27を停止すると共に、所定期間(5秒間)エアー回路内排気電磁弁48を開いてエアー回路51や袋加圧パイプ7から排気する。

即ち、マイクロコンピュータ73は保冷庫2の断熱扉3が開放された場合にはエアーポンプ27を停止し、断熱扉3が閉じられている場合のみエアーポンプ27の運転を許容する。これにより、ミックス原料袋5の交換などの際のパイプなどの着脱に際しての安全性が向上する。特に、断熱扉3が開放された際にはエアー回路内排気電磁弁48を開いてエアー回路51や袋加圧パイプ7から圧縮空気を排出するので、パイプの着脱の際に圧縮空気が吹き出す不都合を確実に回避できるようになる。

尚、この初期状態においてエアーポンプ27が運転された後、3分経過してもエアー回路内センサー47が分配器46で連通された袋加圧パイプ7(袋加圧パイプ7に連通しているミックス原料袋5の袋本体21と外層体23との間の密閉空間を含む)やエアー回路51内の圧力上昇を検出しない場合にはエアーポンプ27を停止し、売り切れ表示ランプ78を点滅させて警報する。

(2)プルダウンモード
次に、使用者がプルダウンスイッチ76をONする(2秒未満押す)と、マイクロコンピュータ73はプルダウンモードに入りプルダウンを開始する。このプルダウンモードではマイクロコンピュータ73はエアーポンプ27を運転し、分配器46で連通された袋加圧パイプ7(袋加圧パイプ7に連通しているミックス原料袋5の袋本体21と外層体23との間の密閉空間を含む)やエアー回路51(プルダウンモードではエアー回路開閉電磁弁52は閉じている)内に圧縮空気を供給する。

そして、エアー回路内センサー47が検出する空気圧力が設定値まで上昇した場合、マイクロコンピュータ73は当該エアー回路内センサー47の出力に基づいてエアーポンプ27を停止する。その後、マイクロコンピュータ73は自らの機能として有する3分タイマ(3分に限定されない所定)のカウントを開始する。

袋加圧パイプ7から圧縮空気がミックス原料袋5の外層体23と袋本体21との間の密閉空間に送り込まれることにより、袋本体21には外側から一定の圧力が印加される。これにより、外層体23と袋本体21との間の密閉空間の容積が拡大することで、袋本体21内のミックスは出口部材22からミックス原料チューブ34へと押し出されていく。ミックス原料チューブ34に押し出されたミックスは、逆止弁54、Y型混合器57を経てミックス入口9から冷却シリンダ8内に流入する。このとき、逆止弁56を含むエアー回路51は外されているので、冷却シリンダ8内の空気はY型混合器57の他方の出口から出ていく。これにより、ミックスも冷却シリンダ8内へ円滑に流入していく。

ミックス原料袋5からミックスが流出することで、外層体23と袋本体21間の密閉空間の容積が拡大するので、袋加圧パイプ7から分配器46に至るパイプ内の空気圧力も低下する。そして、エアー回路内センサー47が所定の下限値まで圧力が低下したことを検出した場合、マイクロコンピュータ73はエアーポンプ27を運転して圧縮空気の供給を再開する。これを繰り返してマイクロコンピュータ74はエアー回路内センサー47が検出する空気圧力(ミックス原料袋5の外層体23と袋本体21間の密閉空間の空気圧力)を設定値と下限値の間(設定値と下限値の範囲における所定圧力)に維持する。

その後、3分タイマのカウントが終了するまでこれを継続し、冷却シリンダ8内にミックスを送給していく。これにより、冷却シリンダ8内にはミックスが貯溜されていく。3分タイマのカウントが終了した時点で、マイクロコンピュータ73はエアーポンプ27の運転を停止し、エアー回路内排気電磁弁48を5秒間開放して圧縮空気を一旦排出する。使用者は透明なフリーザドア14を介して冷却シリンダ8内のミックスの液位を確認し、所定液位に満たない場合にはプルダウンスイッチ76を今度は押し続ける(2秒以上ON)。

マイクロコンピュータ73はプルダウンスイッチ76が連続してONされると、エアーポンプ27を運転して再び圧縮空気の供給を開始し、前述の如くエアー回路内センサー47が検出する空気圧力(ミックス原料袋5の外層体23と袋本体21間の密閉空間の空気圧力)を設定値に維持する。これにより、ミックス原料袋5からは再びミックスが冷却シリンダ8内に送給されていく。そして、使用者が冷却シリンダ8内のミックスが所定液位まで貯溜されたことを目視により確認し、プルダウンスイッチ76から手を離すと(OFF)、マイクロコンピュータ73はエアーポンプポンプ27を停止し、エアー回路内排気電磁弁48を開放してミックス原料袋5の外層体23と袋本体21間の密閉空間の空気圧縮を排出する。これにより、ミックスの送給は停止され、冷却シリンダ8内には所定液位までミックスが貯溜される。

マイクロコンピュータ73にこのようなプルダウンモードを設けることで、開店時に円滑に冷却シリンダ8内にミックスを貯溜することができるようになる。特に、プルダウンスイッチ76を設けてプルダウンの開始を手動で行うことができるので、使用性も良好となる。
