本発明は、餃子の成形方法および成形装置に関するものである。

従来、餃子を大量に成形するためには成形装置が用いられている。

かかる成形装置は、基台と、内面に凹曲面を形成した受型と、上記凹曲面と対応する位置に貫通孔を形成し、その内縁部に波型のヒダ成形部を形成した中間型と、内面に凸曲面を形成した押型と、上記基台の上部に配設するとともに、餃子の底部を平面に押圧成形可能とすべく上面を平坦に形成した昇降台とよりなる。

そして、受型と中間型とで、二つに折り畳む餃子の表側面を形成するための型とするとともに、押型で同餃子の裏側面を形成するための型とし、受型及び中間型と、押型は、それらの基端部が基台の上部の両端に開閉自在に枢着され、開閉時にはそれらの基端面が基台の外側面に当接して受型、中間型、及び押型を略水平状態に支え、閉型時には受型及び中間型と、押型を垂直状態とすることができるようにしている。

【発明が解決しようとする課題】
ところが、従来の餃子の成形法は、折り畳んだ皮の円弧部を押圧接合する際、波型に形成された型で押し付けることによって接合されるだけなので、折り畳んだヒダを形成することができなかった。したがって、具が内包される空間は折り畳んだヒダを広げて膨らみを有する充分な奥行きのある空間として形成することができずに、餃子を縦長形状に成形していた。

それでも、通常の大きさの餃子の場合は、餃子の形状が縦長であっても、餃子を自立させるだけの平らな底部を確保することは可能であり何ら問題ではなかった。

しかし、いわゆる一口餃子と言われる通常の餃子の半分位の大きさの餃子の場合は餃子の皮が小さいので、餃子を自立させるだけの平らな底部を確保した縦長形状とすること、しかも、おいしさを損なわないように充分な量の具を包み込み、かつ、折り畳んだ皮をしっかりと接合させて成形するのは難しかった。

【課題を解決するための手段】
この発明は、餃子皮上に餃子具を載置する工程と、餃子皮を略中央から内側に二つ折りに折り曲げるとともに、餃子皮の中途部において折込みヒダを形成する工程と、折り曲げた餃子皮の開放端縁部分を密着させる工程と、密着した餃子皮の端縁部分の一方の皮面を餃子皮の上方から下方に向かって押し付けることにより、餃子皮を折り曲げた際に形成された折込みヒダを広げながら、密着した餃子皮に餃子特有の膨らみを形成する工程とよりなる一口餃子の成形方法を提供せんとするものである。また、餃子具を丸形の餃子皮2で包被するように変形作動する皮保持枠を備えた一口餃子の成形装置であって、皮保持枠は、略馬蹄形状に形成した皮保持台と、同皮保持台に隣接して皮保持台と別体に構成した折り曲げ自在の中受け片と、同中受け片に隣接して皮保持台と別体に構成した折り曲げ自在の折曲片とを有し、皮保持台は、保持フレームと、同保持フレームの半円弧部内面に突設した皮受け部と、皮保持台の凹部内周面で折曲片と反対面に進退自在に設けた押圧片とを有し、皮保持枠上に餃子皮及び餃子具を載置した後、皮保持台と折曲片とをそれぞれ上方へ変位させることにより、皮保持台と折曲片とが餃子具を載せた餃子皮を保持したまま起立して餃子皮を折曲するように構成しており、保持フレームは、略馬蹄形状を有するとともに、餃子皮を中受け片よりも高い位置で保持することにより、餃子皮を折曲する際に、餃子皮のうち、略馬蹄形状の保持フレームのくびれ部分に位置する部分を餃子皮の内方へと折り込んで、同餃子皮の中途部に折込みヒダを形成するように構成し、皮保持台及び折曲片が互いに起立した状態から更にそれぞれの先端が交差する状態とし、かかる状態で起立した略馬蹄形状の皮保持台5の凹部内周面上部に設けられた押圧片が、折曲した餃子皮の一面を上方から下方に押圧することにより、餃子に形成された折込みヒダを広げながら同餃子に餃子特有の膨らみを形成するとともに、餃子の底部を広面積として自立可能とすべく構成したことを特徴とする一口餃子の成形装置を提供せんとするものである。

【発明の実施の形態】
この発明は、まず餃子具を餃子皮の略中央に供給載置し、次いで、餃子皮を二つ折りにして二つ折りの餃子皮で餃子具を包被した状態とし、次いで、餃子皮の端縁の合せ口を密着させ、次いで、二つ折りの餃子皮の一方の面を餃子具の方向に押し付け餃子形状に整形するものであり、かかる成形を行うため成形装置は次のように構成されている。すなわち、略馬蹄形状に形成した皮保持台と、略馬蹄形に形成した皮保持台の端部間に皮保持台と別体に構成した折り曲げ自在の中受け片と、同中受け片に隣接して皮保持台と別体に構成した折り曲げ自在の折曲片と、皮保持台の内周面で折曲片と反対面に進退自在に設けた押圧片とより構成した餃子の成形装置が用いられるものであり、具体的な作動は、餃子具を丸形の餃子皮で包被すべく構成した皮保持台、中受け片、折曲片等よりなる皮成形枠に皮供給装置から餃子皮を供給載置し、その後、次工程の位置で餃子具を餃子皮の略中央に供給載置し、次いで、次工程の位置で皮保持台、中受け片、折曲片等よりなる皮成形枠を三つ折りに作動させて略U字形状とすることにより餃子具を二つ折りの餃子皮で包被された状態とし、次いで、更に三つ折り作動を継続することにより餃子皮の端縁の合わせ口を密着状に押圧し、かかる状態で皮保持台の皮受け部下側面に進退自在に配設した半円弧状の押圧片を餃子具方向に向かって進出作動させると、二つ折りの餃子皮の一方の面は餃子具の方向に押し付けられ、かつ、押圧具の押圧面に形成した波型模様によって餃子皮表面に波型の押し形が形成され、あたかも手作業で成形した餃子の形状が完成するものであり、特に、一口餃子のような小型の餃子の場合は半円弧状の押圧片の作動により手作業で成形した餃子のような均整のとれた上品な餃子に成形することができるものである。

成形装置Aは、無端レール1,1'に沿って移動しながら餃子具3を丸形の餃子皮2で包被するように変形作動する皮保持枠4よりなる。ここで、無端レール1,1'は、環状に、しかも、内外に2本形成した内側の無端レール1と、外側の無端レール1'とよりなり、同内側のレール1と、同外側のレール1'はそれぞれ別々に所定の位置にて適宜上下に変位するように構成されている。すなわち、後述する皮保持枠4の各部材を内側のレール1と、外側のレール1'に沿わせて適宜変位させるとともに、無端レール1,1'の中途部に設けた作動部材と干渉させることによって、皮保持枠4を変形作動させ、皮保持枠4が無端レール1,1'を一周する間に餃子具3を餃子皮2で包被して餃子21に成形することができる。
