【発明の属する技術分野】
本発明は、春巻およびその製造方法に関する。

【従来の技術】
春巻では、パリパリとした食感が品質の良否を決める要素として重要視されている。このことは、料理店で原材料から作られる春巻については勿論、一次調理を施した後に業務用または家庭用として販売され、実際に食するために二次調理される春巻(以下、この春巻を「一次調理済み春巻」という。)に対しても同じである。

ここで、本明細書でいう「一次調理」とは、具材を皮生地で巻き、必要に応じて油ちょう処理することを意味し、「二次調理」とは、油ちょう処理または加熱処理(解凍のための加熱処理を含む。)することを意味する。

パリパリとした食感を得るために、あるいは、パリパリとした食感を持続させるために、一次調理済み春巻においては種々の工夫が凝らされている。

例えば、特許文献1には、皮(生地)の原料中に高融点油脂を添加し、所定温度で所定時間熟成してから具材に巻いてプレフライする、フライ済み冷凍春巻の製造方法が記載されている。

特許文献2には、皮(生地)の上に油脂層を形成し、当該油脂層を形成した面を内側にして具材を包むことが記載されている。

この方法では、図15に示すように、まず、四角形状に成形した皮生地41の任意の隅からやや内側に入ったところに、当該皮生地41における平面視上の対角線の1つと具材42の長手方向とが概ね直交するようにして、具材42を載せる。

上述した各種の方法のなかでも、皮生地による具材の巻き方を工夫した上記特許文献7の方法は、皮生地の組成に左右されないので広く適用することができ、しかも、皮生地に油脂や穀類粉体等の食品素材を付着させたり、皮生地の原料を両面から焼成したりする等の手間も不要であることから、パリパリとした食感を有する春巻を得るうえで好適である。

しかしながら、この方法によって製造された一次調理済み春巻に二次調理を施すことによって得られる春巻の食感については、未だ改善の余地がある。

例えばスーパーマーケット等において二次調理を施してから店頭販売する場合のように、二次調理から実際に食されるまでの時間が比較的長くなる用途の一次調理済み春巻では、二次調理によって得られるパリパリとした食感の持続時間が長いことが望まれるが、上記の方法によって生地が巻かれた一次調理済み春巻には、上記の持続時間に改善の余地がある。

また、油ちょう処理まで施された後に冷蔵食品ないし冷凍食品として流通される一次調理済み春巻では、油ちょう処理から二次調理までの期間が比較的長くなるにも拘わらず、二次調理によってパリパリとした食感が得られることが望まれるが、この点でも、上記の方法によって生地が巻かれた一次調理済み春巻には改善の余地がある。

【発明が解決しようとする課題】
本発明は、上記事情に鑑みてなされたものであり、一次調理から二次調理までの期間が短い場合は勿論、一次調理から二次調理までの期間が長い場合でも二次調理を施すことによってパリパリとした食感を得ることができ、二次調理によって得られたパリパリとした食感を比較的長時間に亘って持続させることができる春巻およびその製造方法の提供を主目的とする。

【課題を解決するための手段】
上記目的を達成するために、本発明は、請求項1に記載するように、皮生地の一部の領域で具材を包み、該皮生地の残りの領域を前記具材の周りに略一定の方向性をもたせて巻いた春巻であって、前記皮生地の残りの領域が、該残りの領域を前記具材の周りに巻き始める巻上げ開始端から該残りの領域を前記具材の周りに巻き終える巻上げ終了端にかけて延在する第1の層と、前記巻上げ開始端から前記巻上げ終了端に向かって延在し、前記第1の層が前記具材の周りを最後に1周する道程での周方向中央部以遠で終端する第2の層とを含むように、前記皮生地が折り重ねられていることを特徴とする春巻を提供する。

皮生地に上記第1の層と第2の層とが形成されている本発明の春巻では、層構造上、油ちょう処理の際に具材の長手方向に沿って油が春巻内を流通し易い。このため、皮生地における上記残りの領域を外側からのみならず内側からも揚げることができる。

また、上記残りの領域のうちで具材の周りを最後に1周している領域(以下、この領域を「最終領域」という。)に着目すると、当該最終領域においては、前記特許文献7に記載されている方法によって皮生地を具材の周りに巻いた春巻に比べて、2層以上の多層構造となっている範囲が広く、この最終領域は、上述のように油ちょう処理の際に外側からのみならず内側からも揚げられる。

さらに、最終領域における多層構造の分布域が上述のように広いので、一次調理から二次調理までの冷凍保存ないし冷蔵保存の期間中に具材から最外層の皮生地にまで移行してくる水分の量、および二次調理後に具材から最外層の皮生地にまで移行してくる水分の量を抑えることができる。

これらの結果として、本発明の春巻では、一次調理から二次調理までの期間が短い場合は勿論、一次調理から二次調理までの期間が長い場合でも、二次調理を施すことによってパリパリとした食感を得ることができる。また、二次調理によって得られたパリパリとした食感を比較的長時間に亘って持続させることができる。

上記請求項1に記載された発明においては、請求項2に記載するように、長手方向の中央部で断面をとったときに、前記第1の層に連なっている前記一部の領域が、前記具材の周りを略1周して前記第2の層に連なっていることが好ましい。

春巻が上記の断面構造を有していると、油ちょう処理の際には具材の長手方向に沿って油が春巻内を更に流通し易くなり、油ちょう処理後においては油切れがよくなる。具材から最外層の皮生地への水分の移行は、請求項1に記載の春巻と同様に抑制される。その結果として、パリパリとした食感に優れた春巻を得ることが更に容易になると共に、油っぽさの少ない春巻を得ることが容易になる。

前述した目的を達成するために、本発明は、請求項5に記載するように、皮生地に具材を載せ、該具材を前記皮生地の一部の領域で包む第1工程と、前記皮生地の残りの領域を前記具材の周りに略一定の方向性をもたせて巻く第2工程とを含む春巻の製造方法であって、前記皮生地として、平面視したときに互いに直交する2つの対称軸を有する形状の皮生地を用い、前記第1工程は、前記具材を、前記2つの対称軸の一方に該具材の長手方向が略沿うようにして、かつ、前記2つの対称軸の他方が該具材の中央部を平面視上通るようにして、前記皮生地に載せる第1サブ工程と、前記皮生地のうちで前記一方の対称軸に沿った具材の長手方向両側に位置する各領域を前記具材上に折り重ねる第2サブ工程と、前記皮生地のうちで前記他方の対称軸の延在方向の一端側に位置する領域に糊代を残しつつ、前記延在方向の他端側に位置する領域を前記一端側の領域上に折り重ねる第3サブ工程とを含み、前記第2工程で、前記他方の対称軸に略沿うようにして、前記皮生地の残りの領域を前記具材の周りに巻くことを特徴とする春巻の製造方法を提供する。この発明によれば、前述した請求項3に記載の春巻を得ることができる。

また、前述した目的を達成するために、本発明は、請求項7に記載するように、皮生地に具材を載せ、該具材を前記皮生地の一部の領域で包む第1工程と、前記皮生地の残りの領域を前記具材の周りに略一定の方向性をもたせて巻く第2工程とを含む春巻の製造方法であって、前記皮生地として、平面視したときに互いに直交する2つの対称軸を有する形状の皮生地を用い、前記第1工程は、前記具材を、前記2つの対称軸の一方に該具材の長手方向が略沿うようにして、かつ、前記2つの対称軸の他方が該具材の中央部を平面視上通るようにして、前記皮生地に載せる第1サブ工程と、前記皮生地のうちで前記他方の対称軸の延在方向の一端側に位置する領域に糊代を残しつつ、前記延在方向の他端側に位置する領域を前記一端側の領域上に折り重ねる第2サブ工程と、前記皮生地のうちで前記一方の対称軸に沿った具材の長手方向両側に位置する各領域を前記具材上に折り重ねる第3サブ工程とを含み、前記第2工程で、前記他方の対称軸に略沿うようにして、前記皮生地の残りの領域を前記具材の周りに巻くことを特徴とする春巻の製造方法を提供する。この発明によれば、前述した請求項2に記載の春巻を得ることができる。

【発明の実施の形態】
本発明の春巻およびその製造方法は、具材への皮生地の巻き方に最大の特徴を有しており、具材の組成および皮生地の組成は特に限定されるものではない。皮生地の平面視上の形状についても別段の工夫は不要であるが、当該形状は、互いに直交する2つの対称軸を少なくとも1組有する形状であることが好ましい。

以下、本発明の春巻の製造方法に係る実施形態を中心に本発明を詳述する。本発明の春巻は、以下に詳述する製造方法に係る実施形態から自ずと理解される。

<第1実施形態>
図1〜図5は、本発明の第1実施形態による春巻の製造方法での製造工程を示す。本発明の春巻の製造方法は、皮生地の一部の領域で具材を包む第1工程と、皮生地の残りの領域を具材の周りに略一定の方向性をもたせて巻く第2工程とを含んでいる。以下、図1〜図5を参照しつつ、工程ごとに詳述する。

(1)第1工程
まず、図1に示すように、平面視したときに互いに直交する2つの対称軸を有する形状の皮生地1を用意する。図示の皮生地1は、平面視上の形状が正方形のものであり、当該皮生地1は、平面視上、4つの対称軸を有している。

本実施形態では、皮生地1が平面視上有している4つの対称軸のうちの2つ、すなわち、頂点5a、5bを通る対称軸6aと、頂点5c、5dを通る対称軸6bとに着目して、春巻の製造方法を説明する。図示の例では、対称軸6aが紙面の左右方向に延在し、対称軸6bが紙面の長手方向に延在するようにして、皮生地1が配されている。

次いで、同図に示すように、この皮生地1の中央部近傍に具材2を載せる。具材2は、対称軸6aに略沿うようにして、かつ、概ね当該具材2の厚み分だけ対称軸6aから手前側に離隔させて、配置する。このとき、具材2の中央部を対称軸6bが平面視上通るようにして配置することが好ましい。

このようにして具材2を配置することにより、具材2の長手方向の中央部を境にした対称性を略保ちつつ、当該具材2を皮生地1の一部の領域によって包み、かつ当該皮生地1の残りの領域を具材2の周りに巻くことが容易になるので、食感にムラが少ない春巻を得易くなる。また、外観が良好な春巻を得易くなると共に、後述する多層構造を皮生地1に形成し易くなる。

次に、図2に示すように、頂点5aが頂点5b側において対称軸6a上に概ね位置することになるようにして、皮生地1における対称軸6aの延在方向の一端側の領域(頂点5a側の領域)を具材2上に折り重ねる。また、図3に示すように、皮生地1における対称軸6aの延在方向の他端側の領域(頂点5b側の領域)を、頂点5bが対称軸6a上に概ね位置することになるようにして、具材2上に折り重ねる。

なお、図2および図3においては、皮生地1における頂点5a側の領域の折り目および頂点5b側の折り目を、具材2から比較的離隔させて描いているが、実用上は、これらの折り目を具材2にできるだけ近づけることが好ましい。

次いで、図4に示すように、具材2を裏返すようにして、皮生地1を対称軸6aに概ね沿って二つ折りにすることにより、具材2を皮生地1によって上下左右から包む。このとき、皮生地1における頂点5c側の領域には、後述する糊剤を塗付するための糊代を残すことが好ましい。

(2)第2工程
上述した第1工程に引き続き、第2工程を行う。この第2工程では、まず、具材2における頂点5c、5d側の縁の外側近傍を巻上げ開始端として、当該具材2を、対称軸6bに沿うようにして頂点5c、5d側へ巻き上げる。理解を容易にするために、図4中に巻上げ開始端の大まかな位置を二点鎖線4で示す。

以上説明した第1工程および第2工程を経て得られる春巻10では、皮生地1における残りの領域が第1の層と第2層とを含む多層構造をなしており、これら2つの層の間には、頂点5aを含んでいる層と、頂点5bを含んでいる層とが局所的に介在している。また、上記の多層構造をその厚さ方向についてみると、具材2を巻き上げる前の段階において比較的高い対称性を有している。

皮生地1の残りの領域が上述の多層構造を有している春巻10では、層構造上、油ちょう処理の際に具材2の長手方向に沿って油が春巻10内を流通し易い。このため、皮生地1における上記残りの領域を外側からのみならず内側からも揚げることができ、油ちょう処理後の油切れもよい。

また、上記残りの領域のうちの最終領域に着目すると、当該最終領域においては、前記特許文献7に記載されている方法によって皮生地を具材の周りに巻いた春巻に比べて、2層以上の多層構造となっている範囲が広く、この最終領域は、上述のように油ちょう処理の際に外側からのみならず内側からも揚げられる。

このような技術効果を奏する春巻10は、具材2から皮生地1への水分の移行を抑制することができるバリア層(油脂層)を必要としないが、当該バリア層を設けることによって、食感および保存性が更に向上した春巻を得ることが可能になる。

このバリア層は、既に公知のように、油脂、澱粉、糖類または還元糖類、増粘多糖類、乳化剤等を利用して形成することができる。

バリア層の形成位置は、具材2から皮生地1への水分の移行を抑制することができるように適宜選定可能であるが、具材2の幅(対称軸6aの延在方向と平行な方向での幅)と同程度の幅で、頂点5c側から対称軸6bに沿って頂点5d側へ至るように形成すると、特に高いバリア効果を得ることができる。

また、皮生地1に品質改良剤等の添加物を加えなくても、食感および保存性が良好な春巻を得ることができるが、必要に応じて、米粉、澱粉、加工澱粉、油脂類、蛋白質(全卵、卵黄、卵白、乳清蛋白、グルテン、大豆蛋白等)、ハイドロコロイド(ゼラチン、寒天、カラギーナン、グアーガム、キサンタンガム、ローカストビーンガム、ジェランガム、グルコマンナン、カルボキシメチルセルロース等)、アミノ酸(アラニン、グリシン、リジン、グルタミン酸等)、乳化剤、糖、還元糖類、糖アルコール類(グリセリン、トレハロース、ソルビトール等)、塩類、乳酸ナトリウム、色素、および各種エキス等の調味料や、各種の抗酸化剤等を皮生地1中に配合することができる。

<第2実施形態>
図6〜図10は、本発明の第2実施形態による春巻の製造方法での製造工程を示す。この製造方法も、第1実施形態の春巻の製造方法と同様に、皮生地の一部の領域で具材を包む第1工程と、皮生地の残りの領域を具材の周りに略一定の方向性をもたせて巻く第2工程とを含んでいる。

本実施形態の第1工程では、まず、図6に示すように、皮生地1の中央部近傍に具材2を載せる。具材2は、対称軸6aに略沿うようにして、かつ、対称軸6bが当該具材2の中央部を平面視上通るようにして、配置することが好ましい。このとき、具材2の頂点5d側の縁を対称軸6a上に概ね位置させるか、または対称軸6aから頂点5d側に若干突出させることが好ましい。
