本発明は、コレステロールを低減した乾燥卵黄を用いた卵製品の製造方法に関する。

【従来の技術】
卵はテクスチャー、色、風味およびその栄養価それぞれに関して、人が食するのに一般的かつ好ましい食品の一つである。さらに、卵は結合性、乳化性、濃化性、展延性など多くの機能があるため、多種多様の調理食品に利用されている。
卵は卵白部と卵黄部からなり、卵白部は卵白蛋白約10%、水分約90%、その他少量の無機塩類、糖分等で構成されている。一方、卵黄部は卵黄蛋白約15%、水分約50%、脂質約30%からなり、卵黄の脂質中にコレステロールが含まれている。
近年の研究により、コレステロールの摂取について、健常者は制限する必要はなく、また、乳幼児は積極的に摂取すべきであることがわかってきている。
しかしながら、高脂血症体質の人は、コレステロールの摂取を控える必要があり、コレステロールを低減させた卵製品が望まれている。

そこで、低コレステロール食品を提供するために、本願出願人は超臨界二酸化炭素によりコレステロールを抽出する方法を提案した。(特公昭62−51092号公報)
また、コレステロールを減らした卵製品をつくるために、特表平7−503840号公報には、コレステロールを減らした乾燥卵黄と乾燥卵白を混合した後、水に溶かしてそのまま焼成した卵製品が記載されている。そして、特公昭50−22103号公報、特公昭51−9822号公報には脱脂乾燥卵黄を油脂と混合し、乳化させた後乾燥した低コレステロール乾燥卵黄を乾燥卵白と混合した後、水に溶かしてそのまま焼成した卵製品が記載されている。

【発明が解決しようとする課題】
しかしながら、コレステロールを減らした乾燥卵黄と乾燥卵白をあらかじめ混合した後、乾燥卵黄と乾燥卵白の混合物を一緒に水に溶かしてそのまま焼成した方法により得られる卵製品は、パサパサとしていて、卵製品本来のふっくらとした、滑らかで咽喉ごしのよい食感が得られないという問題点があった。

本発明者は上記の問題点を解決するために種々検討した結果、本発明に到達した。
すなわち、本発明は、(1)低コレステロール乾燥卵黄を清水に溶解し卵黄液とした後、別途乾燥卵白と油脂を混合した混合分散物を、前記卵黄液と混合し、加熱することを特徴とする卵製品の製造方法、(2)超臨界二酸化炭素抽出により得られた低コレステロール乾燥卵黄を清水に溶解し卵黄液とした後、別途乾燥卵白と油脂を混合した混合分散物を、前記卵黄液と混合し、加熱することを特徴とする卵製品の製造方法、及び、(3)低コレステロール乾燥卵黄を溶解する清水の温度が30℃〜70℃である(1)項または(2)項記載の卵製品の製造方法を提供するものである。

【発明の実施の形態】
以下本発明を詳細に説明する。
尚、本発明において、「部」は全て「質量部」を、「%」はすべて「質量%」を意味する。
本発明に用いる低コレステロール乾燥卵黄は、いずれの方法により得られたものでもよく、特に限定はない。コレステロールを減少させる方法としては、例えば、超臨界二酸化炭素を用いて抽出する方法、アルコールを用いて抽出する方法や脱脂卵黄にコレステロールを含まない油脂を再加脂して乳化後乾燥する低コレステロール乾燥卵黄を製造する方法(以下再加脂法という)などがある。これらの中でも、超臨界二酸化炭素を用いて抽出する方法が望ましい。超臨界二酸化炭素抽出法で得られたものは、溶剤抽出で得られたものと比較して、蛋白の変性度合いが低く、蛋白と結合したリン脂質や色素等の流出が少なく卵独特の風味が残り、また、再加脂法で得られたものと比較しても、蛋白と結合したリン脂質や色素等の流出が少なく、低コレステロール乾燥卵黄を得るための工程が少なく手間がかからないためより望ましい。

ここで、低コレステロール乾燥卵黄の製造方法の一例として、超臨界二酸化炭素を用いて抽出する方法を説明する。
(超臨界二酸化炭素を用いた抽出方法の一例)
原料に用いる卵黄としては、例えば、乾燥卵黄、加塩あるいは加糖した乾燥卵黄、卵黄含有粉状物を挙げることが出来る。尚、これらの原料は加熱乾燥、噴霧乾燥、凍結乾燥、天日乾燥等いずれの乾燥手段によって乾燥処理されたものであってもよく、乾燥の程度は水分含有率15%以下であり、2〜8%であることが望ましい。
コレステロール抽出媒体として用いる超臨界二酸化炭素とは、抽出時に31.0℃の臨界温度あるいはそれ以上の温度及び72.80気圧の臨界圧あるいはそれ以上の圧力の条件下にある二酸化炭素を意味し、このような条件下にある二酸化炭素を超臨界状態にある二酸化炭素、即ち、超臨界二酸化炭素という。特に、卵黄の場合、風味の低下から温度は35℃〜60℃及び蛋白質の変性から圧力は130気圧〜400気圧の条件下にある超臨界二酸化炭素が好ましい。
このような超臨界二酸化炭素を抽出媒体として用い、乾燥卵黄と接触させてコレステロールの抽出を行う。抽出操作は一般的に行われているような抽出装置を用いて行なう。このようにして、低コレステロール乾燥卵黄を調製することが出来る。

本発明の実施に当たって、まず、低コレステロール乾燥卵黄と清水を用意し、低コレステロール乾燥卵黄を清水で溶解する。攪拌機付混合タンク、家庭用ミキサー等に、低コレステロール乾燥卵黄と清水を投入し5〜15分間程度低コレステロール乾燥卵黄が清水に溶解するまで充分攪拌を行い、低コレステロールの卵黄液とする。ここで、低コレステロール乾燥卵黄に清水を充分に吸収させておくことが肝要である。後の試験例で詳しく述べるが、低コレステロール乾燥卵黄と乾燥卵白をあらかじめ混合してから清水に溶解した場合や、低コレステロール乾燥卵黄を清水で溶解してから液卵白を加えた場合は、低コレステロール乾燥卵黄が清水を充分に吸収できず風味や咽喉ごしの劣った卵製品となる。低コレステロール乾燥卵黄を溶解させるのに用いる清水の割合としては、低コレステロール乾燥卵黄1部に対して清水5〜12部程度にするのがよい。清水が少ないと低コレステロール乾燥卵黄が清水に、溶解しにくく、清水が多いと卵黄としての機能(乳化性、結合性等)が低下する傾向となる。

別途混合しておいた油脂と乾燥卵白の混合分散物と、前記低コレステロールの卵黄液を、攪拌機付混合タンク、家庭用ミキサー等を用いて5〜15分程度、油脂が乳化するまで充分攪拌を行ない、調製卵液スラリーを得る。
低コレステロール乾燥卵黄に対しての乾燥卵白と油脂を混合する割合としては、低コレステロール乾燥卵黄1部に対して乾燥卵白0.6〜1.2部程度、油脂0.8〜1.2部程度にするとよい。乾燥卵白の配合量が多すぎると卵風味に欠けた食感の硬い卵製品となり、少なすぎると柔らかすぎて歯ごたえのない卵製品となる。油脂の配合量が多すぎると油っぽくて不味い卵製品になり、少なすぎると滑らかさと美味しさに欠けた卵製品となる。

最後に、得られた調製卵液スラリーを常法に従って加熱し、厚焼き卵、オムレツ、スクランブルエッグ、茶碗蒸等の卵製品を調製する。
本発明で用いる低コレステロール乾燥卵黄は、いずれの方法で得られたものでもよく、特に限定されないが、超臨界二酸化炭素を用いた抽出法により得られる低コレステロール乾燥卵黄を用いると、蛋白の変性度合いが低く、蛋白質と結合したリン脂質や色素等の流出が少なく卵独特の風味が残るため美味しい卵製品が得られる。
また、低コレステロール乾燥卵黄を溶解するのに用いる清水の温度を30℃〜70℃、より望ましくは50℃〜60℃にすると低コレステロール乾燥卵黄を短時間で、溶解することが出来るうえに、温度が高すぎるときに生じてしまう煮えを生じずに溶解できる。
尚、各種卵製品を調製する場合、調製卵液スラリーに砂糖、食塩、みりん、だし等の調味料を混合し、予め味をつける等の工夫を適宜行うとよい。

この様にして調製した卵製品が、ふっくらと咽喉ごしがよくなるのは、あらかじめ低コレステロール乾燥卵黄を、乾燥卵白を溶解するための清水までも用いて溶解することで、低コレステロール乾燥卵黄が充分に清水を吸収し、溶解することができることと、別途乾燥卵白と油脂を事前に混合し、乾燥卵白に油脂膜を作ることで、乾燥卵白が低コレステロール乾燥卵黄の溶解物から水分を取り過ぎないからではないかと推察される。

【実施例】
実施例1
低コレステロール乾燥卵黄を特公昭62−51092号公報の実施例に準じて、調製した。つまり、乾燥卵黄(コレステロール含量:2.5%および水分含量:5.0%)10kgに対して41℃、135気圧の条件下の超臨界二酸化炭素を10時間に亘って接触させた後、常圧に戻して卵黄粉から二酸化炭素を除去し低コレステロール乾燥卵黄8.2kgを得た。
50℃の清水と上記低コレステロール乾燥卵黄を家庭用ミキサーを用いて10分間攪拌し、低コレステロールの卵黄液を調製した。
別途、乾燥卵白と菜種油を混合し、混合分散物を調製する。調製した混合分散物と調製した低コレステロールの卵黄液を、家庭用ミキサーを用いて菜種油が乳化状態になるまで約10分間攪拌し、調製卵液スラリーを調製した。
各原料の配合量は下記の通りである。

従って、本発明の低コレステロール乾燥卵黄を使った厚焼き卵は通常の厚焼き卵と比較して、コレステロール含有量が約93%も低減した卵製品であった。
