本発明は、エタノール蒸気発生型食品保存剤の連続包装体、およびその保存方法に関する。

【従来の技術】
近年、消費者の無添加嗜好が強まるにつれて、半生菓子や珍味等の食品の日持ちを向上させるため、食品に直接添加するタイプの食品保存料に代わって、食品に添付するタイプの食品保存剤が広く使用されるようになってきた。このような食品保存剤としては、脱酸素剤やエタノール蒸気発生型食品保存剤等がある。そして、このうちエタノール蒸気発生型食品保存剤には、脱酸素機能を有しないエタノール蒸気発生型食品保存剤であるエタノール蒸気発生型鮮度保持剤(例えば、フロイント産業株式会社製「アンチモールド」(登録商標))や、エタノール蒸気発生型脱酸素剤(例えば、フロイント産業株式会社製「ネガモールド」(登録商標))がある。なお、本願においては、特に断らない限り「エタノール蒸気発生型鮮度保持剤」とは、脱酸素機能を有しないエタノール蒸気発生型食品保存剤のことを意味するものとする。

こうした食品添付タイプの食品保存剤は、粉末状や粒状、シート状に形成された有効成分を、酸素透過性やエタノール透過性を有する紙またはプラスチック製、あるいはこれらの複合材料の袋に収容することにより形成される。

一方、食品保存剤は、食品の数量が小ロットの場合には、その単独包装体(以下、単包と略す)を個々の食品に添付すれば良く、食品製造会社では、手作業で単包ないし複数包を食品と共にバリヤー性(酸素難透過性、エタノール難透過性)のあるプラスチック袋へ詰めて製品としている。この場合、単包は、従来の三方シール機を用いて製造され、単包の数百包ずつをバリヤー性袋に入れて食品製造会社へ納められる。

これに対し、包装する食品の多い大口需要家では、自動投入機(例えば、株式会社三橋製作所製「KD−900」(商品名))を用いて食品に食品保存剤を自動的に添付している。ここで用いる食品保存剤は、単包では作業性が悪いため、単包同士を長さ方向に連ねた帯状包装体に形成されており、自動投入機で単包ないし複数包毎に切断し、食品と共にバリヤー袋に添付している。

また、食品保存剤メーカー側では、数百から数千の単包を連ねた帯状包装体を製造して食品製造会社に納入している。そして、その連続包装体の形態としては、帯状包装体を一定間隔毎に交互に折り曲げてバリヤー袋に納めた折り曲げタイプの連続包装体や、帯状包装体をボビンに巻き付けたボビンタイプの連続包装体などがある。

ここでボビンタイプの連続包装体としては、特開昭62−251361号公報に脱酸素剤に適用した例が示されている。この場合、脱酸素剤用にボビンタイプのものを採用しているのは、折り曲げタイプ連続包装体では帯状包装体の折り目が元に戻りにくいことや、自動投入機での待機中に帯状包装体間に空気が流入して酸素吸収(脱酸素反応)が進行し、酸素吸収能力が低下してしまうためである。

これに対し、エタノール蒸気発生型鮮度保持剤は、脱酸素剤ではなく、酸素吸収による能力低下の問題もないため、折り曲げタイプの連続包装体で実用には十分であった。さらに、ボビンタイプの連続包装体では、使用後に不要ボビンが生じるが、折り曲げタイプの連続包装体ではかかる廃棄品は発生せず、ボビン廃棄の手間が不要となり、その分原価的にもまた環境への影響に対してもメリットがあった。このため、従来、エタノール蒸気発生型鮮度保持剤ではボビンタイプの連続包装体は製造されていなかった。

一方、エタノール蒸気発生型脱酸素剤は、脱酸素による発熱のため、エタノール蒸気の発生量が大きい。しかしながら、水分依存型(食品から発生する水蒸気により脱酸素反応が進行するタイプ)のものの連続包装体の場合には、脱酸素作用が主として食品と接してから生じるため、連続包装体としては折り曲げタイプで十分であり、ボビンタイプのものはなかった。

【発明が解決しようとする課題】
しかしながら、折り曲げタイプを採用しているエタノール蒸気発生型鮮度保持剤の連続包装体は、脱酸素剤のボビンタイプ連続包装体に比べ、設置スペースがやや大きいため、近年その省スペース化の要望が強くなっていた。

また、エタノール蒸気発生型脱酸素剤は、折れ曲げタイプの連続包装体であるため、連続包装体のバリヤー袋を一部開封すると、脱気されていた袋に空気が入り込み、経時的に単包間で含有エタノールの含有量に差が発生する問題があることが判明した。エタノール蒸気発生型脱酸素剤には予め減少予想量以上のエタノールを配合してあるとはいえ、品質管理上その対策を行う必要性があった。

そこで、本発明者は、折り曲げタイプの連続包装体では開封後におけるエタノール含有量の経時変化を小さくする対策を施しにくいため、設置スペースの面での要求をも鑑み、エタノール蒸気発生型食品保存剤の連続包装体をボビンタイプとすることを検討してみた。

本発明者はまず、公知の特開昭62−251361号公報の内容を踏まえ、現在上市されており入手可能な脱酸素剤の連続包装体用のボビンに用いられている紙管(90mm径)にエタノール蒸気発生型食品保存剤の帯状包装体を巻き付けることを行った。そのボビンを図11に示す。このボビンは、円筒状の紙管21を巻芯としてその両側に円板状の鍔22を設けた構成となっている。ところがかかる実験を行ってみたところ、連続包装体の保存中に単包間のエタノール含有量に大差が生じ、単包間でエタノール減少量にかなりのバラツキがあることが判明した。すなわち、このままの構成では製品の品質管理上の問題が残ることがわかった。

一方、食品会社では、食品保存剤の使用後それに用いていたボビンを廃棄する必要があり、そのための手間や資源リサイクルの必要性、原価低減等の観点から、ボビンの構成自体にも未解決な問題があると認識した。

本発明の目的は、保存中におけるエタノール減少量が小さく、かつボビン自体の再利用が可能なエタノール蒸気発生型食品保存剤の連続包装体を提供することにある。

また、本発明の他の目的は、食品保存剤をユーザーである食品会社に納品する際における、その連続包装体の最適な保存方法を提供することにある。

本発明の前記ならびにその他の目的と新規な特徴は、本明細書の記述および添付図面から明らかになるであろう。

【課題を解決するための手段】
本願において開示される発明のうち、代表的なものの概要を簡単に説明すれば、以下のとおりである。

本発明のエタノール蒸気発生型食品保存剤の連続包装体は、エタノール蒸気発生型食品保存剤の帯状包装体が巻き付けられる巻芯の両端に鍔が取り外し自在に装着され、前記帯状包装体に直接接触する面のエタノール蒸気透過度が10g/m 2 ・24hr・40℃以下に形成された連続包装体用ボビンを有し、エタノール蒸気透過度が10g/m 2 ・24hr・40℃以下のフィルムによって形成された保存袋に、前記鍔が取り外されると共に前記帯状包装体が巻き付けられて両端側から保持部材により保持された前記巻芯を脱気状態で密封することを特徴とする。

【発明の実施の形態】
以下、本発明の実施の形態を図面に基づいて詳細に説明する。

図1は連続包装体用ボビンの一実施の形態を示す斜視図、図2はその断面図である。当該連続包装体用ボビン7(以下、適宜ボビン7と略す)は、基本的には図11に示した従来のボビンと同様、紙管1の両側に鍔2を配した構成となっており、エタノール蒸気発生型鮮度保持剤やエタノール蒸気発生型脱酸素剤などのエタノール蒸気発生型食品保存剤の連続包装体を製造するために用いられる。

ボビン7においては、この基本構成に加え、紙管1の外側に円筒状の発泡体を設けて巻芯たる芯筒4を形成すると共に、鍔2を鍔固定用具5にて紙管1に着脱自在に取り付けた構成となっている。ここで、芯筒4の表面は塩化ビニリデンコート(以下、Kコートと略す)フィルム3にて覆われており、さらに鍔2をプラスチック製にすることにより、食品保存剤が直接接触する面は全てプラスチックで被覆または形成されていることになる。

ところで、ボビン7で用いる紙管1は、図3に示すような孔1aを有する円筒状の紙筒である。なお、その材質としては、通常市場で入手し易い、外径80〜100mm、肉厚2〜5mmのボール紙が多く用いられるが、プラスチック成型品やプラスチックコーティング品でも良い。

また、芯筒4は、図4に示すような円筒状の発泡体であり、その孔部4aに紙管1を挿入して使用される。また、その材質は、例えばポリエチレン、ポリプロピレン、ポリウレタン、ポリスチレン等のプラスチック発泡体が価格面から適当であり、プラスチック成型品でも良いが、その分価格的には高くなる。

このように芯筒4を用いるのは、帯状包装体を巻き付ける曲率半径を大きくするためである。これは、紙管1の上に直接食品保存剤の帯状包装体を巻くと、食品保存剤、特に脱酸素剤の帯状包装体に比べ嵩高いエタノール蒸気発生型の食品保存剤の帯状包装体を巻き付けると、製品が折れ曲がって皺ができるのを防止するためである。従って、芯筒4の外径は150mm以上の方が好ましい。このように、芯筒4を用いると、帯状包装体に皺ができないため、自動投入機で帯状包装体を切断して単包を作るときにカットずれが生じにくく、従って、製品歩留まりが良く、ライン停止を起こすこともない。なお、従来のエタノール蒸気発生型食品保存剤は前記したように嵩高いのでボビンの外径を150mm以上が好ましいが、嵩低い保存剤であれば150mm未満でも折れ曲がる可能性が低く、芯筒4の外径をさらに小さくし得るのは勿論である。また、紙管1を用いることなく芯筒4のみを用いてボビン7を形成することも勿論可能である。

さらに、当該ボビン7では、芯筒4は、その外周面全体がKコートフィルム3によって覆われている。これは、ボビン7の芯部において、紙管1とエタノール蒸気発生型食品保存剤とを隔離するためである。この場合、芯筒4に予めKコートフィルム3を貼り付けておいても良いが、芯筒4の全長より長いKコートフィルム3を芯筒4外周面に沿って巻き、その円周方向の端部同士をポリプロンピレン粘着テープで固定した上で、軸方向の端部をそれぞれ紙管1の孔1aに入れることにより芯筒4を被覆するようにしても良く、この場合には、特に接着剤は用いない。なお、図2においては、理解を容易にするためKコートフィルム3の厚さを誇張して示している。

ここで、本実施の形態に用いられるKコートフィルム3とは、ポリプロピレンフィルム(以下、PPと略す)等に塩化ビニリデンをコートしたフィルムであり、KOP(塩化ビニリデンコートのポリプロピレンフィルム)、KON(塩化ビニリデンコートのナイロンフィルム)等がある。例えば、KOPは、厚さ20μmのPPに3μmのKコートを施したフィルムであり、KONは、厚さ15μmのナイロンフィルム(以下、ONと略す)に3μmのKコートを施したフィルムである。また、Kコートフィルム3としては、KOP、KONのKコートの反対面に厚さ40μmの直鎖低密度ポリエチレン(以下、LLDPEと略す)を設け、ヒートシール可能としたフィルムでも良い。

なお、厚さ25μmのポリエステル(以下、PETと略す)単体フィルムや、このPETにさらにアルミ蒸着した蒸着フィルムや、このPETに厚さ7μmのアルミ箔を積層した複合フィルム等でも良い。また、PET等の片側にLLDPEを設けた複合フィルム等でも良い。さらに、30μmのエチレンビニルアルコール共重合体フィルムに15μmのONと40μmのLLDPEを設けた複合フィルムでも良い。加えて、二軸延伸ポリプロピレンフィルム(以下、OPと略す)と無延伸ポリプロピレンフィルム(以下、CPと略す)との複合フィルム(以下、OP/CPと略す)の構成は、OP20μm/CP20μm厚さのフィルム等でも良い。

ところで、これらのフィルムは、紙管1とエタノール蒸気発生型食品保存剤とを隔離するものであるため、エタノール蒸気発生型食品保存剤とフィルムとが直接接触しても、Kコートフィルム3のエタノール蒸気透過度が少なくとも10g/m2 ・24hr・40℃以下である必要があり、好ましくは、5g/m2 ・24hr・40℃以下であることが望ましい。

ここで言うエタノール蒸気透過度とは、下記の測定法方により測定した値であり、例として、ヒートシール可能なフィルムの場合の測定方法について示す。

すなわち、まず縦120mm、横120mm寸法のフィルムを半分に折り曲げ、二辺を10mm幅でヒートシールして一辺を開口させた袋を形成し、この袋の中に無水エタノールを3g入れて、前記の開口辺を10mm幅でヒートシールしたものを試料とする。この場合、エタノールが蒸発可能な面積は片面100mmx50mmの両面で10000mm2 である。この試料を40℃恒温器に24時間放置し、減量より1m2 あたりに換算し求める。なお、ヒートシールしにくいフィルムの場合は、このフィルムの片面にLLDPEを積層した複合フィルムを用いて測定すれば、LLDPEのエタノール蒸気透過度が非常に大きく測定値に影響を与えにくいため、上記範囲に入っているフィルムはLLDPEなしでも使用できることになる。

このように求めた値がエタノール蒸気透過度であり、単位はg/m2 ・24hr・40℃であり、この値の少ない方が、よりエタノール蒸気難透過性である。そして、例えばエタノール減量が0.1gの場合には、エタノール蒸気透過度は10g/m2 ・24hr・40℃となる。

一方、鍔2は、図5に示したような、中心に紙管1の内径とほぼ同径の孔2aを有するプラスチック円板であり、その材質としては、例えば、ポリエチレン、ポリプロピレン、ポリエステル、ポリカーボネート等が用いられる。

ここで、鍔2は芯筒4の両側面に置かれるため、エタノール蒸気発生型食品保存剤の帯状包装体の端部に直接接触する。従って、鍔2は耐エタノール性があり、かつ少なくともエタノール蒸気透過度 が10g/m2 ・24hr・40℃以下である必要があり、5g/m2 ・24hr・40℃以下であるのが好ましい。なお、ここで用いるプラスチック板は通常、厚さが1〜3mmであり、上記要求特性を満足している。

なお、この鍔2を、市場で「プラ段」と称されているポリプロピレン製の段ボール板を用いて簡便に形成することも可能であり、その簡便性、低価格性からプラ段を加工した鍔が本発明のボビンでは好ましく用いられる。

このような鍔2を芯筒4の両側に固定するため、当該ボビン7では、鍔固定用具5が用いられる。この鍔固定用具5は、図6に示したように、紙管1の端部に嵌合する嵌合部5aと鍔2に外側から当接するフランジ部5bとから構成されており、ポリエチレンやポリプロピレン等のプラスチック成型品が用いられる。また、嵌合部5aの外周面には、紙管1からの抜け止めのための突起5cが設けられている。そして、鍔2を、その孔2aと紙管1の孔1aを位置合わせして芯筒4の端面に載せ、その状態で鍔固定用具5の嵌合部5aを紙管1の孔1aに挿入することにより、鍔2は紙管1の端部すなわち芯筒4の端部に固定される。

この場合、芯筒4の外周に巻き付けられたKコートフィルム3も同時に紙管1に固定する。すなわち、Kコートフィルム3の端部を紙管1内周面に折り込み、それを嵌合部5aによって押さえ込むことにより鍔2と同時にKコートフィルム3を紙管1に固定する。このとき、鍔固定用具5の突起5cは紙管1の孔1aと同径またはそれより若干大径に形成されており、嵌合部5aを紙管1の孔1aに挿入すると、突起5cが紙管1内に圧入気味に挿入され、突起5cがKコートフィルム3を介して孔1aの内周面に食い込んだ状態で固定される。これにより、鍔2、Kコートフィルム3が紙管1から容易にはずれないように鍔固定用具5によって固定される。なお、嵌合部5aの先端面中央には、当該ボビン7を支持するためのシャフトを挿通するためのシャフト孔5dが形成されている。

次に、このような連続包装体用ボビン7の具体的な組立方法について示す。

まず、紙管1(内径76mm、外径82mm、長さ200mm)の円筒部外側にポリプロピレン製の芯筒4(外径150mm,内径85mm、長さ200mm)を挿入する。続いて、Kコートフィルム3としてKOP(23μmx500mmx400mm)を用い、そのKコート面を表にして、Kコートフィルム3を芯筒4の外周面全体を覆うように巻き付け、円周方向の端部同士を再剥離可能な粘着テープで固定する。この際Kコートフィルム3の軸方向の端部を紙管1の両開口部からその内周側に折り込む。なお、この時紙管1に入れるフィルムは100mm以下となる。さらに、紙管1の両側にポリプロピレン製のプラ段から製作した鍔2の孔2aを紙管1の孔1aと合わせて置き、鍔固定用具5(ポリプロピレン製)を押し入れる。これにより、Kコートフィルム3の一端側が紙管1の内周面と鍔固定用具5とで固定されると共に、鍔2も芯筒4の端部に固定される。同様の作業をもう一端側にて行い、これによって連続包装体用ボビン7が完成する。なお、 Kコートフィルム3として、KOPの代わりにOP/CP(20μm/20μm)等種々のフィルムを用いることができるのは勿論である。

さらに、連続包装体用ボビン7の分解方法について示す。当該連続包装体用ボビン7は不要後は分解して再利用または処分を行うことができる。ボビン7は次の手順で分解する。

まず、鍔2を内側面から外側に向かってたたき、鍔2と鍔固定用具5を外す。次に、Kコートフィルム3を固定している粘着テープを剥がすと共に、紙管1内に折り込まれているKコートフィルム3の端部を紙管1から取り出し、Kコートフィルム3を取り除く。そして、芯筒4を紙管より抜き取り、図3〜図6に示した、紙管1、芯筒4、鍔2および鍔固定用具5の各ボビン構成部品に分解する。なお、これらの部品は、各部品毎にまとめて収納等するなどして再び食品保存剤製造会社に返却することができ、部品コストや廃棄コストの低減のみならず資源の再利用が可能となり環境への影響を最小限にとどめることが可能となる。

次に、連続包装体用ボビン7を用いた連続包装体について説明する。図7は連続包装体の一実施の形態を示す斜視図である。

当該連続包装体8は、連続包装体用ボビン7にエタノール蒸気発生型食品保存剤の帯状包装体6を巻き付けたものであり、一般的には次のようにして製造される。

すなわち、まず公知の三方シール機(図示せず)のライン末端にモーターなどの駆動手段(図示せず)を設置する。次に、駆動手段に連動したシャフト(図示せず)に連続包装体用ボビン7を挿入する。このとき先述の鍔固定用具5のシャフト孔5dが用いられる。そして、三方シール機より製造されるエタノール蒸気発生型食品保存剤の帯状包装体6を連続包装体用ボビン7に巻き取ることにより図7のような連続包装体8が完成する。具体的には、鍔固定用具5のシャフト穴5dにシャフトを通し、三方シール機により製造されたエタノール蒸気発生型鮮度保持剤である、アンチモールド−102の帯状包装体(45mmx65mm寸法の単包を3000包長さ方向に一列に連ねたもの)を、駆動手段によりボビン7に巻き取り連続包装体8を製造した。なお、エタノール蒸気発生型脱酸素剤であるネガモールドの帯状包装体を巻き取って連続包装体を製造できることは勿論である。

なお、本願で言うエタノール蒸気発生型食品保存剤とは、食品と共に密封容器や密封袋に同封し、当該食品保存剤より蒸散するエタノール蒸気の静菌効果により、食品の鮮度を保持し、日持ちを向上させるものである。また、その種類としては、前記したエタノール蒸気のみによるエタノール蒸気発生型鮮度保持剤の他、これと脱酸素剤としての機能を併せ持ったエタノール蒸気発生型脱酸素剤などがある。この場合、エタノール蒸気発生型鮮度保持剤としては、アンチモールド−102(フロイント産業株式会社製)等の商品名で上市されている、シリカ等の粉粒体の吸着体に無水エタノールまたは含水エタノールを吸着させた吸着粉を、紙またはプラスチックスフィルムで構成された袋に入れ、開口部をシールして形成されたものが例示される。また、エタノール蒸気発生型脱酸素剤としては、ネガモールド(フロイント産業株式会社製)等の商品名で上市されている、吸着体(シリカ等)、エタノール(無水、含水)、鉄粉、塩等を混合した粉末を紙またはプラスチック製の袋に入れ、開口部をシールして形成されたものが例示される。

本発明による連続包装体8は、図8に示したように、Kコートフィルムにより形成した保存袋9に密封梱包されて保存され、この状態で食品製造会社に納入される。なお、図8では、理解が容易なように保存袋9のみを断面し、かつその厚さを誇張して示している。この密封梱包は、連続包装体8を保存袋9に納め、保存袋9内を脱気した上で、その開口部をヒートシールすることにより行われる。ここで、保存袋9は、中の食品保存剤の機能を損なうことなく保存するため、エタノール蒸気や酸素の透過度を極力抑えたものである必要性がある。従って、この保存袋9も、少なくともエタノール蒸気透過度が10g/m2 ・24hr・40℃以下である必要があり、5g/m2 ・24hr・40℃以下であるのが好ましい。

また、保存袋9は、ヒートシール性を考慮した材質のものを用いるのが好ましく、例えば、KOP、KONにLLDPEを積層した複合フィルムを製袋したものを用いることができる。さらに、他にもエチレンビニルアルコール共重合体フィルムの片面に80μmのLLDPEを積層した複合フィルムを用いることもできる。実際、23μmのKOPのKコートの反対面に80μmのLLDPEを積層した複合フィルムによって形成したKOP製の保存袋9(以下、保存袋P)や、18μmのKONのKコートの反対面に80μmのLLDPEを積層した複合フィルムによって形成したKON製の保存袋9(以下、保存袋N)を用いて連続包装体8を梱包することができた。なお、梱包した連続包装体8は、鍔2を下にして箱詰めして出荷される。

図9は他の実施の形態である連続包装体用ボビン10(以下、適宜ボビン10と略す)の構成を示す斜視図、図10はボビン10を用いて形成した連続包装体11を保存袋9に密封梱包した状態を示す説明図である。なお、前記の実施の形態と同様の部材には同一の符号を付しその詳細は省略する。また、図10では、理解が容易なように保存袋9のみを断面し、かつその厚さを誇張して示している。
