本発明は、例えばパン生地等の食品生地の切断方法および食品生地成形装置に係り、さらに詳細には、帯状の食品生地からチャンクを切断し、このチャンクを延展ロール装置によって薄く延展した後にロール状に巻上げる際に、内部に空洞を生じることなくロール状に巻上げ成形することができるようにチャンクを切断する方法およびその成形装置に関する。

【従来の技術】
従来、例えばパン生地等のごとき食品生地を連続した帯状に成形し、この帯状の食品生地を所定の重量又は所定長さのチャンクに切断した後、ロール状に巻上げ成形することが行われている。(特許第2579826号公報参照)

【発明が解決しようとする課題】
上述のごとく、帯状の食品生地を例えば所定重量のチャンクに切断した後、このチャンクをそのままロール状に巻上げる場合には、チャンクの先端部は直線状に切断された状態にあるので何等の問題もないが、所定重量のチャンクに切断した後に、複数の延展ローラの間を通過させて薄く延展し、その後に食品生地をロール状に巻上げると、巻上げられた製品内に空洞が生じ易いという問題がある。

すなわち、図1,図2に示すように、予め帯状に成形された食品生地1を例えばベルトコンベアのごとき第1の搬送装置3によって一方向へ搬送し、この第1の搬送装置3の適宜位置又は下流側の第2の搬送装置5と前記第1の搬送装置3との間に配置したギロチン式又はロータリーカッタ等のごとき適宜の切断装置7によって前記食品生地1から適宜重量又は適宜長さのチャンク9を切断分離する。

上記切断装置7における切断刃7Bは、前記食品生地1の搬送方向に対して直交する方向に設定してあるのが一般的であるから、前記チャンク9の先端部は、食品生地1の搬送方向に対して直交する直線をなすように切断される。

本発明は前述のごとき従来の問題に鑑みてなされたもので、請求項1に係る発明は、帯状に成形された食品生地を適宜重量又は長さのチャンクに切断し、このチャンクを延展ロール装置によって薄く延展した後に巻上げ装置によってロール状に巻上げるに際し、前記食品生地をチャンクに切断するとき、当該チャンクの搬送方向の先端部形状が突状を呈する態様に切断する食品生地の切断方法である。

【発明の実施の形態】
以下、図3を用いて本発明の実施の形態について詳細に説明するに、本実施の形態に係る食品生地成形装置21は、図1,図2を用いて説明した従来の構成と同様に、第1,第2の搬送装置3,5、切断装置7、延展ロール装置11、第3の搬送装置13及び巻上げ装置15を備えている。この食品生地成形装置21において、従来の構成と相違するところは切断装置7における切断刃7Bの構成である。

以上のごとき説明より理解されるように、本発明によれば、食品生地を切断してチャンクを分離するとき、チャンクの先端縁の幅方向の中央部付近が両側より先行するように突状に切断するものであり、このチャンクを延展ロール装置によって薄く延展する際には、チャンクの幅方向の中央部の突出部分から延展が開始されるので、幅方向の中央部付近に凹部等を生じるようなことがなく、前述したごとき従来の問題を解消し得るものである。
