この発明は、殺し処理したマグロ等の大形魚に関するものである。

【従来の技術】
マグロ等の大形魚を捕獲した場合に、魚体の鮮度を保つためには、迅速かつ確実に殺し処理する必要がある。このような殺し処理に適した処理方法として、魚体の頭部の白紋部分又は頭部の切断面から線状の殺し処理具を差し込み、これを脊柱内部に達せしめ、中枢神経組織を破壊する方法が従来から知られている。また、上記の殺し処理具を殺し処理後の魚体内に残置せしめ、市場においてその処理具を確認することにより、その魚体が上記の方法により処理されたものであることを需要者、取引者に知らせるようにすることも知られている(実公平2−3757号公報、実公平4−36624号公報、実公平4−55516号公報参照)。

【発明が解決しようとする課題】
上記の殺し処理したマグロ等の大形魚は、処理具を尾部近くまで差し込むことことにより適正な処理が行われたことになるが、従来は魚体の頭部から処理具の一端を露出させていただけであったので、その他端が尾部近くまで達しているかどうかを市場において確認することが困難であった。

そこで、この発明は上記の処理具が確実に尾部近くまで差し込まれ、適正に処理されていることが市場において容易に確認できるようにすることを課題とする。

【課題を解決するための手段】
上記の課題を解決するため、この発明は、魚体の頭部から脊柱内部に線状の殺し処理具を差し込み、上記処理具を脊柱内部に残置せしめてなる殺し処理した大形魚において、上記殺し処理具の一端を魚体の尾部から外部に露出させ、上記の一端に連続した該処理具の他端を該魚体の頭部から外部に露出させるようにしたものである。

上記の殺し処理具の一端を上記魚体の尾部の切断面から外部に露出させること、またその一端を上記魚体の尾部の上記脊柱に達する切欠き部から外部に露出させることができる。

【発明の実施の形態】
以下、この発明の実施形態を図面を参照して説明する。図1に示した第1実施形態において使用される殺し処理具1は、線状の合成樹脂(ナイロン、ポリプロピレン等)を大形魚の魚体2に応じた所定長さに切断したものである。その太さは3〜5mm程度である。中空のチューブ状のものでもよいが、その場合は両端に閉塞栓を嵌着する。

マグロ等の大形魚の魚体2の両眼の中間部分には比較的柔軟な白紋部がある。捕獲した大形魚の魚体2の上記の白紋部を刃物で刺すか、削ぐかして頭蓋骨3の一部に穴4をあけ、また尾部5を切り落とす。尾部5を切り落とした後の切断面には脊柱6の切断端が現れる。

次に、上記の穴4に殺し処理具1の一端を差し込み、これを押し進めて頭蓋骨3の内部から脊柱6の中を通して尾部5側の切断端から外部に露出させる。殺し処理具1の差し込みにより、魚体2の脳、脊髄等の中枢神経組織が破壊され、魚体2を迅速に完全死に至らしめることができる。

殺し処理を完了した後、殺し処理具1の一方の端部1aを尾部5の切断面から外部に所要長さ露出させ、また、この端部1aに連続した他方の端部1bを頭部8側の穴4から外部に所要長さ露出させ、両端部1a,1bを露出させたまま市場に出荷する。市場においては、殺し処理具1の両端部1a,1bを確認することにより、頭部8から脊柱6の全長にわたり該殺し処理具1が差し込まれていることを知ることができる。

以上のように、この発明によれば、魚体の脊柱に差し込まれた1本の線状の殺し処理具の両端部を魚体の頭部側と尾部側からそれぞれ外部に露出せしめ、そのまま市場に出荷するようにしたので、脊柱の全長にわたり殺し処理具が挿通され適正に殺し処理がされていることを外部から容易に確認することができる。
