Abstract

A method of producing a patterned compound food capable of producing, by a simple control, a patterned compound food which has a colored pattern on the outer portion thereof, contains inside thereof a food material with a taste different from those of food materials forming the outer portion, and has a beautiful, jointless appearance on the surface thereof, the method comprising a step (A) of filling in preset amounts at least two fluid food materials with different colors into a cavity of a mold to obtain a substantially fluid preformed product kept in the shape of the cavity, a step (B) of inserting a nozzle into the preformed product, a step (C) of passing the nozzle and injecting in a preset amount a fluid filling material for forming an inner portion, a step (D) of pulling out the nozzle from the preformed product and a step (B) of solidifying after step (D) at least the fluid food materials in the cavity.

【発明の属する技術分野】
この発明は、装飾食品内部に異なる流状材料を充填する方法とその装置に関する。

【従来の技術】
チョコレート中に酒、ジャム等の流状食材が内蔵されているチョコレートは存在している。一方、特開平9−23818のように、チョコレート表面が縞模様となっている複数種のチョコレート原料も知られている。

そして、上記チョコレートに食材を内蔵する方法として、図8や図9に示すシェル方式と呼ばれるものが用いられている。図8の方法は、壷状のものを半割にしたチョコレート材22,22'を加熱接合して開口部23を有する壷状チョコレートとし(a) 、充填装置又は注入装置27のノズル28からリキュールやブランデーなどの流状食材を注入した後、開口部23をチョコレートで閉塞するものである。また、図9の方法は、モールド中にチョコレートの流体原料を充填して振動し、モールドを引っ繰り返してモールド底部に付着した流体原料以外を落下回収し、ついでモールドを元の位置に戻してから少し冷却し、センター(中込)となる流体食材をモールドの中程まで注入して冷却し、さらに流体原料を充填してスクレープしてから全体を冷却・固化して、モールドより複合食品を取り出すものである。

【発明が解決しようとする課題】
しかし、図8の方法はチョコレート製品の外面に二つチョコレートを結合した際に生じる継ぎ目が現われ外観上美しくない。このことは、外面に2種以上の装飾模様を用いて形成する場合にせっかくの模様の美感を損なうだけでなく、クリスマスやバレンタイン商品など装飾を第一義的意味を有する催事商品では、致命的な欠陥商品となる。

また、図9に示す方法は予備工程や本工程の工数が多く製法が複雑であり、設備費も掛った。

そこで、2つの貯蔵部に複合食品の外殻とセンター(中込)となる2種のチョコレート流体原料を収容しておき、初めに外殻のチョコレートをモールド内に吐出し、続いて外殻とそれに包まれたセンターとなるチョコレートを同時吐出し、最後に外殻となるチョコレートとを押出成形して継ぎ目の現われないセンターチョコレートの外殻内への充填方法と装置も知られている。

しかしながら、この方法も2種のチョコレートを各別に収容し、また2つのシリンダーを使っての大掛かりな装置とその制御が必要となる。

この発明の目的は、上記従来の欠点を解消せんとするものであり、簡素な方法と装置により、内部に流状食材を入れた表面に継ぎ目のない美しい複数種の流動性食品材料で出来た模様付複合食品を提供することにある。

【課題を解決するための手段】
この発明は、上記目的に鑑みてなされたものであり、その要旨は複数種の流動性食品材料の流体原料をモールドへ充填する工程と、充填した流動性食品材料の流体原料を固化する工程と、固化した流動性食品材料をモールドより取り出す工程とからなる装飾した食品の製造装置において、前記充填する工程と固化する工程との間に、充填工程によりモールドへ同時充填された未だ固化しない前記流動性食品材料の流体原料中へ筒状ノズルで該流体原料とは別の流状食材を内部充填して膨らませる工程を付加した複合食品の製造方法にある。

上記充填工程の前段階で予め流動性食品材料の流体原料をモールド底部の凹凸模様(レリーフ模様)部に充填することによって、より複雑で高級感のある複合食品の製造方法が得られる。また、上記モールドに代えて販売容器を兼用すると、モールドの容器やモールドから複合食品を取り出す工程を省くことができる。

この発明の別の要旨としては、複数種の流動性食品材料の流体原料をモールドへ充填する充填装置と、充填した流動食品の流体原料を固化する固化装置と、固化した流動性食品材料をモールドより取り出す取出装置とからなる装飾食品の製造装置において、前記充填装置が、前記複数種の流動性食品材料の流体原料を各別に収容する貯蔵部と、該貯蔵部から定量づつ吐出するノズル部とからなり、該ノズル部には、前記複数種の流動性食品材料の流体原料を各別に第1の通路ごとに設けた1以上の上孔から押し出すノズル取付基板と、該基板下部に送り出された各種別の流動性食品材料の流体原料を水平方向に移動・拡散する第2の通路と、この通路に前記上孔の数より多数の下孔を設け、下方のモールドに強制的に前記複数種の流動性食品材料の流体原料を押し出す1以上のノズル片とを配設し、前記充填装置と固化装置との間に、前記モールドに同時充填した流動性食品材料の流体原料中にこの流体原料とは別の流状食材を内部充填する筒状ノズルを設置した複合食品の製造装置がある。

前記モールドを販売容器とし、該容器の凹部中に複数種の流動性食品材料の流体原料を上記充填装置で充填し、上記注入装置で流体原料中に流状食材を注入し、これらを上記固化装置により固化することで、上記取出装置を用いないようにして、モールド兼用販売容器に複合食品を包装するようにした製造装置を別途提供することも考えられる。

上記複数種の流動性食品材料は、外に現われる食品模様と材質の異なる流動性食品材料でできている場合と、同一材質の流動性食品材料に天然もしくは人工の着色料を入れることにより、各色で装飾されたものが生み出されるもので、チョコレート、ようかん、キャンデー、アイスクリーム、チーズ、ゼリーなど冷却して固化するものの他に、カステラやかまぼこなど加熱して固化するものなどが考えられる。

流状食材には、ワイン、リキュール、果実酒などの酒類、ミルク、コーヒー、ジュースなど液状のものの他に、別のチョコレート、ゼリー、あんこ、各種のガナッシュ、ジャンドゥーヤ等のクリーム状のもの、イチゴ・マーマレイドなどのジャムなど粘性状のものがある。

複合食品の製造装置における充填装置は、流動性食品材料の流体原料を収容する容器部(図示せず)と、この容器部から上記流体原料をシリンダで定量ずつ送り出すノズル部(図示せず)からなり、この発明の特徴とするところはこのうちのノズル部の構造にある。

詳しくは、ノズル部はノズル取付基板とその下部に設置しているノズル片に特徴があり、前者の取付基板はダイカストもしくは切削加工などで一体成形により作られ、ノズル部本体の下部との間に貯蔵部より送られてくる複数の流動性食品材料の流体原料を各別に通す第1の通路をそれぞれ設け、各第1の通路には1以上の上孔を貫通して設けることにより、上記流体原料を下方のノズル片へ送り出すように構成している。後者のノズル片は、上記取付基板から来た上記複数の流体原料を受けて各別に通す第2の通路を上記取付基板との間に設け、この第2の通路では上記流体原料を水平方向に移動し、拡散し、第2の通路に貫通して設けた上記上孔より多数の下孔を経て下方のモールドに落下するように構成する。

上記ノズル片は平板状の1枚より、2枚以上重ねて、2枚目のノズル片に第3の通路を設けることによりさらに上記流体原料を拡散し、より数多くの下孔からモールド内に吐出することでさらに複雑な装飾模様食品を現出させることができる。ノズル片の下孔の位置、径の大きさ、形状と、相対するモールドの形態との関係で様々な模様を設計することができる。

固化装置は、コンベアなどで充填装置から送られてきたモールド内の流動性食品材料の流体原料を固化するためのもので、クーリングトンネルと呼ばれる冷却装置、あるいは加熱室がある。

注入装置は、充填装置と固化装置との間に設置されており、間欠運動するコンベアなどで送られてきたモールド内の未固化状態の流動性食品材料の流体原料中に内径3m/m〜9m/m、好ましくは6m/m程度の筒状ノズルのようなもので流体食材を注入することによって、注入量に従って流体原料を膨らむようにしたものである。注入後はノズルを抜くことにより、流動性食品材料自体の粘性によりノズル孔は塞がれるが、孔跡をなくすために同箇所に少量の流体原料を補う場合もある。

この発明は、複数種の流動性食品材料の流体原料をモールド内に同時充填することで表面から内面にかけて多模様の装飾食品が得られ、この流体原料が未だ固化しない間に流状食材を強制的に注入することにより、表面に継ぎ目のない模様食品を作ることができる。

また、内部の流状食材とその外側に位置する複数種の食品材料とを同時に食することができ、上記多模様の美しさとともに口中においても新しい味覚と食感を得ることができる。

以下に、この発明の好ましい実施例を流動性食品材料としてのチョコレート材料により説明するが、既に述べた通り、本発明はようかん、キャンデー、アイスクリーム、チーズ、ゼリーなどの食品においても達成できる。

【実施例1】
本発明方法と装置により作られる複合食品には、充填装置の容器部(図示せず)と連設するノズル部よりモールド14(図1(d))内に白と褐色(チョコレート色)の2種のチョコレート流体原料A,Bが同時注入され、縞模様が施され、外形としては図3に示すような装飾模様のチョコレート製品16となる。そして、このノズル部はノズル取付基板11と、その下部に補助板(図示せず)を介してビスで取り付けた二枚のノズル片12,13とからなる。

詳細には、このノズル取付部11には、上記容器部からのチョコレート流体原料A,Bを水平方向に各別に案内するための第1の通路11a,11bと、これらの通路にそれぞれ1個づつ穿設された上孔11a',11b'を備える。また、ノズル片12は、上記上孔11a',11b'から送り出されたチョコレート流体原料A,Bを受け容れ、水平方向に案内する同心円状に区割りされた第2の通路12a(外側),12b(内側)と、これらの通路にそれぞれ穿設された下孔12a'(等間隔に位置する8個),12b'(相対向位置に2個)とを備え、さらにノズル片13には上記下孔12a'の直下に穿設し、同孔から送り出されたチョコレート流体原料Aを直接通す8個の下孔13aと、上記下孔12b'から送り出されたチョコレート流体原料Bを受けて水平放射線方向に拡散する第3の通路13bと、その外周先部に穿設した8個の下孔13b'とを有する。

このように、第1乃至第3の通路11a,11b,12a,12b,13bは、チョコレート流体原料AとBを水平方向に個別に案内するための区画室としてそれぞれが機能し、上孔11a',11b'と下孔12a',12b',13a,13b'は上記通路から下方へ送り出す機能を有し、この小孔12a',12b',13a,13b'を交互に配設することで縞模様あるいは千鳥模様を、また配置次第では例えば白と褐色の配置によっては褐色のバックに白色のデザイン模様を作ることもできる。

ノズル片13のすぐ下方には、複数の円錐台の穴を設けた多数のモールドを無端状自動コンベアで間欠的に送られてくるようにしている。なお、図の(d)に示すAとBは、縞模様を得るために装飾チョコレートとして予め想定したモールド14上へ交互に配したチョコレート流体原料AとBの区分領域である。

つぎに、上記装置を用いて、この発明の装飾模様チョコレートの製造方法を以下に説明する。

まず、充填装置においてチョコレート流体原料AとBが2個設置された容器部からシリンダにより所定量づつAとBが各別にノズル部に送られ、ノズル取付基板11の第1の通路11a,11bに至り、それぞれ各1個宛有する上孔11a',11b'から下部のノズル片12に送り出される。つづいて、上孔11a'からノズル片12上へ送られたチョコレート流体原料Aは外側の第2の通路12aにおいて押し出された圧力で通路内を左回りと右回りに弧状に拡張し、等間隔に配した8個の下孔12a'から隙間なく密着している下部のノズル片13の同位置に対応した8個の下孔13aからモールド14へと押し出される。

一方、上孔11b'からノズル片12上へ送られたチョコレート流体原料Bは内側の第2の通路12bにおいて左及び右廻りに送られて2個の下孔12b'から下部のノズル片13にある略放射状の第3の通路13bより拡張して、さらに上記下孔13aに各隣り合せて設けた8個の小孔13b'よりモールド14へと送り出させる。

しかして、13aと13b'から白色と褐色の各8本の計16本で落下するチョコレート流体原料は、円錐台状のモールドの凹部14'内に落下する(X方向)が、ペースト状であるために落下後は次第に膨らんでモールドの最底部では白と褐色のチョコレート流体原料AとBは接触状態にあるが、上方に至るにつれて径が大きくなる円錐台形のモールドと合致するように広がり、しかも次々と供給されてくる各流体原料という条件(それぞれの流体原料AとBは略同粘度〈質量〉であれば、どちらもゆずらないせめぎ合いの理論による。)もあつて、白と黒間は幅が予め設定された図1(d)におけるAとBの領域に沿うように堰き止めながら広がって互いの距離は等距離に次第に遠くなるといった条状模様を呈する(図3)。この時センターを注入できる程度余裕を残してモールド内に充填する。

ついで、上記モールド内において条状模様を形成した流体原料AとBが未だ固化しないうちに注入装置15としての筒状ノズルを挿入してから、上記充填装置とは別のリキュール等の流状食材Cを内部充填し、前記流体原料AとBを膨らませる。

このようにして、固化装置のクーリングトンネル(図示せず)で冷却固化する。

モールド14内で固化した複合食品は、無端コンベアによりモールドの凹部14'の開口部を下にして軽く叩いて製品を落下して回収する。

なお、上記モールド14に代えて、販売容器(図示せず)を用いることにより、コンベア上を次々と送られてくる販売容器の凹部内にチョコレートAとBの流体原料を入れ、該流体原料中に流状食材Cを注入・固化することもできる。

このようにして出た装飾チョコレートは、図3のように、上記ノズル(図1(a)〜(c))を用いてモールド14に注入されたチョコレート流体原料A〜Cを固化することにより、視覚的にも味覚的にも所望の程度に調和させた模様を施してなる各チョコレート16が得られる。
