本発明は、ゼリー片や果実の組織等の飲食可能な固形物を含有させた液状飲食品に関し、飲食品調合液が固形物の浮遊分散安定性に優れることにより固形物が飲食品調合液部と一体となり飲用できかつ、全体に滑らかな飲み心地である、飲食品としての触感の向上した固形物入り液状飲食品に関する。

【従来の技術】
固形物入り液状飲食品において飲食品調合液の固形物分散安定性を向上させることにより固形物を飲食品調合液部と一体として飲用可能とするために従来例えば、耐熱性及び耐酸性のある増粘多糖類の使用が考えられている。そして、例えば固形物としてゼリー粒、柑橘果実さのうやパルプ分の分散状態を保つために、食品即席固形飲料(特開昭62−130671号)、粘稠食品(特開昭62−151148号)、粒状食品入り飲料の製造法(特開平5−3773号)が知られている。
しかしながら、特開昭62−130671号及び特開昭62−151148号では、ジェランガム単独の使用のみの検討であり、また、特開平5−3773号では、ジェランガム単独又はジェランガムとκ−カラギナンの組合せが、試験した他の多糖類より好適であることを開示している。

【発明が解決しようとする課題】
固形物入り液状飲食品において、飲食品調合液と固形物が一体となり固形物の浮遊分散性の向上した外観上の美しさのみならず嗜好品としての飲み心地等の触感を向上させた飲食品が要望されていた。
しかしながら、そのような飲食品はいまだ開発されていない。
本発明の目的は、上記のような課題を解決した、浮遊分散した飲食可能な固形物を含有する液状飲食品を提供することにある。

【課題を解決するための手段】
本発明を概説すれば、本発明は固形物入り液状飲食品に関する発明であって、浮遊分散した飲食可能な固形物を含有する液状飲食品において、飲食品調合液100重量部に対してジェランガムを0.03超〜0.05未満重量部、タマリンドシードガムを0.002超〜0.05重量部、及びカルシウム及び/又はマグネシウム換算で0.001〜0.010未満重量部の可溶性の、カルシウム塩及び/又はマグネシウム塩を含有することを特徴とする。

本発明者らは、浮遊分散した飲食可能な固形物を含有する液状飲食品において、上記した構成要件を選択することにより、当該固形物の浮遊分散性が向上しかつ触感の向上した飲食品を得ることが可能となり本発明の完成に至った。
本発明者らは、固形物入り液状飲食品の飲食品調合液と固形物が一体として飲用できる(液部と固形物はそれぞれに分離可能であるが、飲用時に瓶又は口内に固形物のみが残ることなく液部と同時に飲用することが可能である)のみならず飲用時の滑らかさ等の触感の向上に着目し飲食品調合液の物性に関して鋭意検討を行った。この結果、飲食品調合液部に特定量のジェランガム及びタマリンドシードガムを固化しない範囲で組合せ使用し、溶解後に少量の可溶性のカルシウム塩及び/又はマグネシウム塩を添加し混合冷却を行うことにより、飲食品としての触感の向上した飲食品調合液を得ることが可能となった。更に該飲食品調合液はジェランガム及びタマリンドシードガムがゲル化剤ではなく増粘安定剤として機能しており固形物の浮遊分散性に効果を発揮し、飲用時に飲食品調合液と固形物とが一体として飲用できるという優れた性質も兼備していた。

【発明の実施の形態】
以下、本発明を具体的に説明する。
本発明でいう固形物入り液状飲食品とは固形物部と飲食品調合液部に分離可能であり飲用可能なものをいう。
そして、本発明でいう液状とは、製品である飲食品が、流動性を保持し、かつ、その内容物である固形物が浮遊分散できる状態にあることを意味する。
また、本発明でいう浮遊分散とは、静置状態における、製品である液状飲食品中の固形物の分布が、容器の上中下部において、見掛け上均一に近い状態にあることを意味する。

これとは別に固形物として直径約3mmのゼリー球を常法により作成した。これらを用いて、加温した飲食品調合液にゼリー球を添加し均一にかくはん後、熱ショックで破損しないようにあらかじめ加温した瓶に充てん後打栓した。これを徐々に冷却又は85℃の温水中に15分間保持した後、冷却を行い液状飲食品製品とした。

実施例1
固形物入り液状飲食品の触感及び該飲食品における固形物の浮遊分散性の評価を行うために飲食品調合液中のジェランガム、タマリンドシードガム及びカルシウム又はマグネシウム源としての乳酸カルシウム・5水和物又は硫酸マグネシウムの混合割合を変化させて飲食品調合液を調製した。飲食品調合液の調製は、80℃の脱イオン水で表1に示すジェランガム、タマリンドシードガムの各試験区の配合量及びクエン酸ナトリウム0.008g、乳糖0.04gを高速かくはん機を用いて溶解しこの溶解液を別に用意しておいたグラニュー糖9gを脱イオン水に溶解した溶解液と混合する。この混合液に別に用意しておいた各試験区の可溶性カルシウム量又は可溶性マグネシウム量に対応した乳酸カルシウム・5水和物又は硫酸マグネシウムを溶解した溶液を混合した後、20℃に冷却しておいた脱イオン水を適量混合して全体の液温を40℃以下とする。更にこの混合液にレモン果汁0.6g、ビタミンC0.065g、無水クエン酸0.05g、香料0.1gを添加後、20℃に冷却しておいた脱イオン水を加え、必要に応じてpH3.6となるように再度クエン酸を添加して全量を100gとした。なおすべての工程において緩やかなかくはんを行い成分の均質化を行った。
これとは別に固形物として直径約3mmのゼリー球を常法により調製した。すなわち、80℃の脱イオン水700gにグラニュー糖90g、ジェランガム4g、グアーガム0.01g、キサンタンガム0.01g、ローカストビーンガム0.01g、クエン酸ナトリウム1g、乳糖4.6gを均一に溶解後、25℃まで冷却し、ビタミンA乳剤3g、ビタミンE乳剤5g、カロチノイド色素2g、香料1gを順次添加混合し、更に脱イオン水を適量加え全量を1000gの溶液Aを得た。
また別容器に脱イオン水700gを入れ、これにグラニュー糖90g、塩化カルシウム・2水和物10g、香料1gを順次混合し、更に脱イオン水を適量加え全量を1000gとして溶液Bを得た。この溶液Bを約20℃に保温し、緩やかなかくはんを行いながら溶液Aを滴下し、直径約3mmのゼリー球を得た。
更に、95℃に加温した各飲食品調合液96.5重量部にゼリー球3.5重量部を添加し均一にかくはん後あらかじめ60℃に加温した190ml容瓶に充てん後打栓した。全重量は300gであった。これを85℃の温水中に15分間保持し殺菌した後20℃まで冷却を行い飲料製品とした。
