て、本発明の胸肉分離方法による場合は、ワークの大き
さの変動に自動的に対応して、肉部を傷めることなく肩
関節の筋入れを行なうことができ、ついで行なわれる手
羽とともに胸肉を剥がす引き剥がし機構により高歩留ま
りのもとに胸肉分離を行なうことができる。

ず、V字、コの字状等が考えられる。また、丸棒に限定
する事なく、角棒、平板、チャンネル材を用いても良
い。また、開きS幅も任意に設定できる。なお、上記ガ
イドバー21のそれぞれには、斜行カッタ16の斜行摺
動用摺動機構を設け、何れのガイドバーを使用しても斜
行カッタ16は、ガイドバー21の挿入押圧により新に
設定された鉛直基準面Ya及び水平基準面Xaに対しそ
れぞれSa、Haの距離にある適正挿入位置に切り込み
可能の構造にしてある。

の間の二組の腱を主体とする関節周辺の生体組織を、切
断して手羽とともに胸肉を剥がす胸肉分離方法であっ
て、 前記屠体上半身の大きさに対応した適当大きさのガイド
バーを当該肩関節の間に押圧挿入して、腱切断用のカッ
タの挿入位置の横方向の位置規制をする関節の内側に鉛
直基準面を設定するとともに、挿入位置の高さ方向の位
置規制をする水平基準面を設定し、 上記位置規制したカッタ挿入位置に対し、斜め外側より
挿入させるべく用意した斜行カッタにより、前記二組の
腱のうち外側の全部と内側の一部を切断して結合力を低
下させ、セパレータの押圧により間隔の広がった上腕骨
頭と関節との間に水平カッタを挿入して残余の内側の腱
を切断するようにしたことを特徴とした胸肉分離方法。
