西洋蜜蜂91は蜜蜂90の中でも世界中で養蜂に用いられている蜂のことであり、日本でも市場で売られている蜂蜜のほとんどが西洋蜜蜂の養蜂によるものである。西洋蜜蜂91は体全体が黄色っぽく、日本蜜蜂よりも少し大きいのが特徴で、日本蜜蜂に比べると攻撃的な性格である。また、病気にかかりやすく、飼育の手間も掛るが、巣箱から逃げることはほとんどないという養蜂に適した習性がある。特にその時期に同じ花の蜜を採取するといった群れの特徴がある。また、一年に何度も採蜜し、集蜜力も高いという特徴がある。また、四季それぞれにその時期に開花する同じ花の蜜を収集する西洋蜜蜂91の群れの習性を利用することで同じ種類の花の蜜を一年間で何種類も収集することが可能となり、それぞれの種類毎に安定した糖度50の蜂蜜30の収集が可能となる。
巣箱100は、蜜蜂90が巣を作りやすくするために人工的に作られた養蜂用の巣箱100である。多くは重箱のような四角い形状に上下が開口しているものを巣の成長に合わせて何段にも重ねて使用することができる重箱式や縦型式巣箱が多く、雨除けに三角の屋根を付けたり置き場所によっては日よけなどをして蜜蜂90の環境を整えてあげられるものが好適である。
