第7図に示す強制コンベクションオーブンの様に、被調
理物7を載置した焼き網8と受け皿9を収納した加熱室
10の前方に気密性の高い開閉扉11を設け、さらに加熱室
10後方に循環ファン12を設け、加熱室10の底部かつ外部
に加熱用ブンゼンバーナ13を設け、加熱室10の後方かつ
上部に排気口14を設けたものがある。

部にまで到達しにくく、また左右の噴出バランスも取り
にくかった。特に加熱室1の幅Lが大きくなるにつれて
その傾向は甚だしく、被調理物4の下面の焼き状態は左
と右で、あるいは側部と中央部で極端なばらつきを生
じ、良好な調理結果を得ることは出来なかった。なかで
も側部と中央部との焦げ目の違いは大きく、これらを解
決すべく第5図,第6図に示すような方式が取られた
が、燃焼ガスの吹き出し速度が低いのと、その制御方向
が一義的であるため、流れ方向が広く均一になりにく
く、十分な解決策とはならなかった。さらには下部バー
ナが側面より出ているため、加熱室1内壁面の構成が複
雑となり掃除等がしにくい状態であった。

倍から2倍程度必要となるだけでなく、循環風量の増大
のため開閉扉11の密閉性が要求され、安全性の面から開
閉扉11を二重ガラスにする必要もあった。さらには焼き
性能の面からも、風量増大により魚等の被調理物7の水
分量が蒸発しやすく出来上りがパサパサした感じになる
とともに、魚の尾も焦げて落ちやすく、必ずしも良いと
はいえなかった。

22によって高温ガスの流れ方向が多様化するため、被調
理物19への熱伝達が良くない所への熱分布も良くなる。

らに高温ガス流は、加熱室15の後部から前部へと一方向
に搬送されるためバーナの干渉がなくなり、加熱室15内
の熱分布のばらつきは極めて少なくなり被調理物19の焼
けむらは起こらなくなる。またこの高温ガス流は、被調
理物19の下面部を加熱するだけでよく、強制コンベクシ
ョンオーブン等に比べ、低風量、低燃焼量で済み、結果
的に開閉扉16を加熱させることがなく、二重ガラスにし
なくても安全性を確保することができ、見た目にもシン
プルになる。
