A sheet heater generally has a large heat capacity, and the temperature of the heater rises slowly. Also, since it is installed outside the heating chamber, the amount of radiant heat radiated into the heating chamber is small and the ability to burn food is low, but since the heat capacity is large and it is difficult to cool once it is heated, there is little temperature change and the amount of radiant heat is small. The surface of the is difficult to dry and the contents of food cook well.

On the other hand, a tubular heater (for example, a quartz tube heater) protected and insulated by a hollow insulating pipe has a small heat capacity and a high temperature rising speed. In addition, since it is installed directly in the heating chamber, the amount of radiant heat is large and the ability to burn food is extremely high. As described above, the planar heater is suitable for oven cooking such as cakes and cookies, but is not suitable for grill cooking such as grilling fish. On the other hand, the tubular heater is, on the contrary, suitable for grilled dishes but not for oven dishes.

Means for Solving the Problems To solve the above problems, the heating cooker of the present invention has a heating chamber for storing food, and a mounting table for mounting the food,
It is equipped with a sensor that detects the temperature inside the heating chamber, a control circuit that controls the temperature inside the chamber according to the level detected by the sensor, and an electric heating device that heats food electrically. The electric heating device is a hollow insulating pipe above the heating chamber. It consists of a protected high-radiation tubular heater and a high-heat-capacity planar heater that is installed in close contact with the top plate of the heating chamber, and the electric heating device installed below is installed in close contact with the bottom plate of the heating chamber. In the preheating mode of oven cooking in the heating chamber, it is composed of a high-heat-capacity planar heater, and the upper tubular heater and the lower planar heater are initially energized, and the internal temperature control level L detected by the sensor causes the internal temperature to change. When a level obtained by subtracting the coefficient K determined by the height of the setting is reached, the upper tubular heater is de-energized and the upper planar heater is energized to speed up the rise of the inside of the cabinet. At the time of oven cooking it is intended to improve the cooking performance by energizing the upper and lower planar heater.

In the case of oven cooking for baking cakes and cookies, it is necessary to preheat the temperature inside the oven first. It takes time to start up with a sheet heater in this preheating mode because of its high heat capacity. However, if only the tubular heater is started up, the preheating is completed and the temperature inside the refrigerator decreases greatly due to the carry-in of the food in the cooking mode. Therefore, at the time L × K (K By switching from a tubular heater to a sheet heater in <1), the preheating time can be shortened, and since a sheet heater with a large heat capacity is used during cooking, the temperature inside the heating chamber is kept constant and the amount of radiant heat is small Slowly burn the surface to allow the water inside the food to evaporate sufficiently. Furthermore, since the heat distribution in the heating chamber is improved, it is possible to perform excellent cooking with good flat distribution without uneven burning.

When grilling fish or meat, the heat capacity is small and if you use only a tubular heater with a large amount of radiant heat, only the surface of the food will be burnt for a short time, but the internal temperature of the food will not rise sufficiently, so the heat capacity It also has a large heater and a small temperature drop in the refrigerator. In this case, the planar heater raises the internal temperature of the food and the tubular heater burns the surface of the food. To this end, L + 1 is a level level L determined by the power distribution of the tubular heater and the planar heater, the ratio of the heating chamber to the heating chamber, and the size of the heating chamber with respect to the in-focus temperature control level L during grilling. In 1 to stop the energization of the tubular heater and the planar heater to control the charring of food by the tubular heater, and to keep the internal temperature at a constant value by using the slow temperature increase and decrease of the high heat capacity planar heater. Is lowered and L-l 2
By repeating this cycle of energizing two kinds of heaters again at a level, it is possible to make a brown mark in a short time and to raise the temperature sufficiently to the inside of the food, so that the moisture and umami inside the food are not lost, making it an excellent grill. You can get the quality of cooking.

Fig. 3 shows the timing of switching between the planar heater 15 and tubular heater 16 during oven preheating (lower surface heater 18 is energized with a certain amount).
2 shows the temperature rise in the cold storage during preheating and the decrease in the cold storage temperature when food (cake) 21 was loaded at the end of preheating. The line A shows the case where the tubular heater 16 is energized until the preheating is completed, and the line B shows the case where the heater is switched with the coefficient K = 0.9 (135 level) for the adjustment level L (150) of the internal temperature (150 ° C) The line C shows the case of switching with the coefficient K = 0.7 (105 levels). Line D shows the case where the sheet heater 15 is energized until preheating is completed. In the case of line A, the time required to complete preheating is about 290 seconds, which is the shortest. However, the descending temperature during cooking (when food is opened by opening and closing the door for 20 seconds) is about 50 ° C, the largest
It takes 250 seconds. In case of D line, it takes about 4 hours to complete preheating.
The longest time is 00 seconds, but the lowest is 15 degrees Celsius, and the time required for recovery is about 80 seconds, which is long and short. The B and C lines are located in the middle of the A and B lines, but when the B line is switched from the tubular heater 16 to the planar heater 15, the temperature inside the chamber is reduced by a factor, but when the C line is switched, There is no decrease in the temperature inside the refrigerator. Therefore, when the temperature inside the refrigerator is set to 150 ° C, the coefficient of 0.7 is considered to be the best, including the time required for completion and the time required for restoration. This coefficient differs depending on the setting of the internal temperature, and tends to increase as the temperature becomes lower.

The E line uses two heaters as one level L (240 ° C = 240
Level), the tubular heater 16 with a large amount of radiant heat rapidly raises and lowers the temperature level, which increases the number of heater ON / OFF circuits and shortens the service life. However, the temperature of the heating chamber 14 gradually rises because the sheet heater 15 that raises the temperature inside the chamber rises but the food (fish) 25 is browned but the internal temperature does not rise sufficiently. The F line shows the case where the two kinds of heaters are controlled at the OFF level (240 + 15 = 255 level) and the ON level (240-10 = 230 level), respectively. Even if there is a difference in ON / OFF level, the set temperature is maintained. Further, the tubular heater 16 is appropriately turned on and off repeatedly, and it is possible to cook good grilled food without making a brown mark extremely quickly.
