なかでも、リモニンと酢酸ネリルとの組み合わせによる相乗効果を得る点から、リモニンの含有量の上限値は、1000ppb以下が好ましく、100ppb以下がより好ましく、80ppb以下がさらに好ましい。

・酸度:飲料100ml中に含まれる酸量をクエン酸に換算した場合のグラム数(無水クエン酸g/100ml)をJAS規格の酸度測定法で定められた方法に基づき測定し、算出した。

各飲料について訓練した技術者による官能試験を実施した。具体的には、5名の熟練した技術者がそれぞれ飲料(20℃)を試飲し、試飲した際に感じられる「爽やかな柑橘感」「尖った酸味」「後を引くえぐみ・雑味」「ボディを感じる果実感」についてのそれぞれについて、以下の評価基準に従い「比較例1-0」を1点とした5段階評価を行い、その平均値を算出した。

(3)実施例および比較例
飲料の原料として、醸造用アルコール、果糖ぶどう糖液糖、クエン酸(無水)、クエン酸三ナトリウム、レモン透明濃縮果汁、リモニン、ノミリン及び酢酸ネリルを準備した。また、いずれの飲料についても、レモンフレーバー(ただし、リモニン、ノミリン及び酢酸ネリルを含まない)を1000ppm用いた。
また、各飲料のエキス分は果糖ぶどう糖液糖を用いて調整し、各飲料の酸度はクエン酸(無水)、レモン透明濃縮果汁を用いて調整した。
なお、表中の酸度「%」はクエン酸酸度(g/100ml)、エキス「%」はエキス分(質量/体積%)、アルコール「%」はアルコール濃度(体積/体積%)をそれぞれ示す。

表1に示す配合(濃度)、および炭酸ガス圧(ガスボリューム)となるように各原料を常法で混合し、飲料を得た。えられた飲料について、上記(1)~(2)の測定及び官能評価を行った。結果を表1に示す。
