一方、特許文献1、2には、リナロールを用いることが開示されているものの、いずれもぶどう風味飲料ではなく、ぶどうらしさを向上するものではなかった。

ポリフェノール濃度は、フォーリン・チオカルト法(FOLIN-CIOCALTEU法)(没食子酸換算)により測定できる。
[Polyphenol]

本実施形態の飲料(20℃)の糖度(Brix値)は、飲料の嗜好性に応じて適宜設定できるが、例えば、糖度1~20が好ましく、糖度5~15がより好ましい。
糖度(Brix値)は、たとえば、デジタル屈折計Rx-5000α(アタゴ社製)を用いて、20℃における糖用屈折計の示度を測定することができる。
糖度は、例えば、上記の甘味料、果汁、その他の各種成分の含有量により調整することができる。

(2)飲料の官能評価
ぶどう風味飲料の開発に精通した5~7名の専門家がそれぞれ飲料(20℃)を試飲し、以下の官能試験を実施した。各対照例を基準とし全項目4点とした場合に、それぞれの試験区において、各評価項目を7段階で評価し、その平均値をとった。評価基準は以下の通りである。

(3)原料
飲料の原料として、以下のものを用いた。
・ぶどう透明濃縮果汁;68°赤ぶどう透明濃縮果汁(コンコード種)糖度68.5
・果糖ぶどう糖液糖(55%異性化糖);糖度75.5、酸度0
・クエン酸三ナトリウム
・無水クエン酸
なお、糖度(Brix)は糖用屈折計(ATAGO RX-5000α)を用いて測定される値、酸度は、クエン酸酸度(g/100ml)を示す。
(3) Ingredients The following ingredients were used for the beverages:

(4)実験1(各香気成分の濃度の影響)
まず、以下の割合で各原料を混合し、果汁率20%のベース液を調製した。

・ぶどう透明濃縮果汁 34g/L
・果糖ぶどう糖液糖 95g/L
・クエン酸三ナトリウム 1.2g/L
・無水クエン酸 2.3g/L
つぎに、得られたベース液を用いて、以下の表1~4に示す含有量となるように、リナロール、リモネン、およびフェニルアセトアルデヒドをそれぞれ配合し、果汁率20%の各飲料を得た。
各飲料のポリフェノール量(mg/100ml)は、30.3であった。また、糖度(Brix)は9.5、クエン酸酸度は0.3(g/100ml)であった。
各飲料について、対照例1を基準として、上記(2)の官能評価を行った。結果を表1~4に示す。
(4) Experiment 1 (Effect of concentration of each aroma component)

Next, linalool, limonene, and phenylacetaldehyde were added to the obtained base liquid in the amounts shown in Tables 1 to 4 below to obtain beverages with a fruit juice content of 20%.
The amount of polyphenols (mg/100 ml) in each beverage was 30.3. The sugar content (Brix) was 9.5, and the citric acid content was 0.3 (g/100 ml).
For each beverage, the sensory evaluation described above in (2) was carried out, with Control Example 1 as the standard. The results are shown in Tables 1 to 4.
(5)実験2(果汁率の影響)
以下の表5~6に示す含有量および果汁率となるように、各原料およびリナロール、リモネン、およびフェニルアセトアルデヒドをそれぞれ配合し、異なる果汁率の各飲料を得た。また、各原料の含有量は、飲料のブリックス値と酸度がそれぞれ同じになるように調整した。
各飲料の糖度(Brix)は9.5、クエン酸酸度は0.3(g/100ml)であった。
各飲料について、対照例1~6のうち同じ果汁率を基準として、上記(2)の官能評価を行った。結果を表5~6に示す。
(5) Experiment 2 (Effect of fruit juice ratio)
Each ingredient was mixed with linalool, limonene, and phenylacetaldehyde to obtain beverages with different fruit juice ratios, so as to obtain the contents and fruit juice ratios shown in Tables 5 and 6. For each beverage, the sensory evaluation described in (2) above was carried out using the same fruit juice percentage as the standard in Control Examples 1 to 6. The results are shown in Tables 5 and 6.
