評価は、サンプルを60℃で3日間保存した前後でのp-シメン、p-メチルアセトフェノン、p-クレゾールの定量を行った。これら3つの成分は、シトラールの主な劣化臭成分として知られている。
評価は、灯油臭、薬品臭、杏仁豆腐臭、墨汁臭などを総合考慮して、官能評価により点数をつけた。評価基準には、1から9の9段階尺度を採用し、劣化臭の強度を評価した。評価する際には、参考として市販品Aを2点、市販品Bを4点、市販品Cの45℃3日保存したものを8点としてアンカーに設定した。
劣化臭の評価は、訓練された23名のパネリストによって行われた。パネリストの年代・性別は、40代男性:5名、40代女性:1名、30代男性:6名、30代女性:2名、20代男性:3名、20代女性:6名であった。
実施例1~4のレモン風味アルコール飲料とレモンRTD2の劣化臭の評価結果(パネリストのスコアの平均値)を図4に示し、実施例1~4のレモン風味アルコール飲料とレモンRTD2について、保存の前後でのp-シメン、p-メチルアセトフェノン、p-クレゾールの濃度の変化量を表10に示す。なお、表10には、比較例1のレモン風味アルコール飲料についての保存前後での変化量も示す。
図4及び表10に示されるように、実施例1~4のレモン風味アルコール飲料は、レモンRTD2と比較して劣化臭の評価に優れ、60℃で3日間保存した後のp-シメン、p-メチルアセトフェノン、p-クレゾールの増加が抑えられていることがわかった。

At the time of evaluation, as references, 2 points for commercial product A, 4 points for commercial product B, and 8 points for commercial product C stored at 45°C for 3 days were set as anchors.
The deterioration odor evaluation was conducted by a trained panel of 23 people. The age and gender of the panelists were: 5 men in their 40s, 1 woman in their 40s, 6 men in their 30s, 2 women in their 30s, 3 men in their 20s, and 6 women in their 20s. rice field.
The evaluation results of the deterioration odor of the lemon-flavored alcoholic beverages and lemon RTD2 of Examples 1-4 (average panelist scores) are shown in FIG.
