The wax layer plays a role in preventing the ingress of water so that brown rice (seed) does not germinate easily. Therefore, the wax layer is difficult for water to pass through. The taste of brown rice varies greatly depending on the shape of the grains of brown rice that has been cooked. If the exodermis of brown rice cooked by rupture or cracking did not remain in shape, the taste was poor. The shape of the grains of brown rice that has been cooked changes depending on the moisture content. That is, the taste changes depending on the water content. In this sense, it turns out that it is necessary to encourage water ingress by scratches, but it was preferable that the scratches were not excessive and could be scraped off. It was preferable that the depth of the wound did not reach the endosperm (white rice). Considering the taste, it was preferable that the number of wounds reaching the endosperm (polished rice) was 20% or less of the total number of wounds. More preferably, it was 10% or less. More preferably, it was 5% or less.

玄米に水が含水した後、袋1を浄水が入った容器3から引き上げた。引き上げによって、玄米表面に付着している水の除去(水切り)が行われた(ステップ4)。好ましくは、袋1を持ち上げた後、袋1を空気中で3分間放置した。空気中で放置する事によって、水切りが確実なものになった。玄米表面に付着している水が無くなった。玄米表面に付着している水の水切りが確実に行われていると、計量された玄米の炊飯時に加える水量が美味しく炊ける水量に合わせる事ができた。前工程において、玄米表面には、意外と、水が付着している。これを、そのまま、残していると、2Kgの玄米に対して美味しく炊ける水の投入量が不正確になってしまう。美味しい玄米が炊けなかった。計量された玄米量に対して炊飯時に炊飯器に投入する水量が簡単に決まる。

実施例1と参考例4とを対比すると、玄米への傷付けの内容によっては、即ち、金属刃を用いての傷付けでは、炊き上がった玄米の食味改善は殆ど認められず、非金属製ネット状袋を用いる事によって、玄米のロウ層への傷付けが大事な事が判る。実施例1の場合には、玄米を口に入れた際に、ツルッとした食感が感じられたが、参考例4の場合には、そのような食感は感じられなかった。参考例4の場合は、金属製刃による処理である為、ロウ層のみならずヌカ層、更には胚乳が大きく損傷したからであると推察された。参考例4の場合、金属製刃を回転させる際に発生したモーターの熱が玄米に伝わり、処理後の玄米がほんのり温かかった。この熱が糠臭さを増大させる原因であると推察された。 Comparing Example 1 and Reference Example 4, depending on the content of the damage to the brown rice, that is, the damage using the metal blade hardly improves the taste of the cooked brown rice, and it has a non-metal net shape.
