このように、1次加熱だけでは熱が鶏肉の内部にまで十分に行き渡らないが、ノンオイルフライヤー(熱風処理)で2次加熱を行うことにより、鶏肉の内部にまで熱を通すことができる。

(実施例3)
食肉材として国産鶏の手羽元56gと55gの2個を同時に用い、1次加熱としてフライヤーにて160℃、3分加熱し、2次加熱として熱風室にて180℃、4分熱風処理した。中心温度は78℃であり、完全に火が通り骨の部分も赤色のところは見られなかった。
(比較例2)
食肉材として国産鶏の手羽元61gを用い、1次加熱としてフライヤーにて170℃、4分加熱し、1次加熱後3分放置した。中心温度は52.3℃であり、血の混じった液が大量に出る状態であった。
