次に、本発明の要件を満たす実施例とそうでない比較例とを例示して、本発明について説明する。

[サンプルの準備]
麦芽比率が約25%となるように麦芽(粉砕した大麦麦芽)、大麦、糖類(液糖)、並びに、水を仕込槽に投入し、常法にしたがって糖化液を製造した。得られた糖化液を濾過して麦汁を得た。得られた麦汁にホップを添加して煮沸し、沈殿物を分離、除去した後、冷却した。
得られた発酵前液(冷麦汁)に下面ビール酵母を添加し、発酵温度を約17℃として7日間発酵(発酵終了時の発酵液の酵母濃度は4100万個/mL)させて、ビールテイスト飲料(サンプル1)を得た。

前記の方法により製造した各サンプルについて、選抜された識別能力のあるパネル4名が下記評価基準に則って「エグ味」、「酸味」、「刺々しさ」、「飲み易さ」について、1〜5点の5段階評価で独立点数付けし、その平均値を算出した。
なお、全ての評価は、サンプルを飲んで評価した。

なお、飲み易さについては、サンプル5(1点)を基準として評価した。

サンプル1〜5の結果から、アルコール度数が所定値以上であっても、ピルビン酸が所定値以下であると、エグ味、酸味、刺々しさが低減し、飲み易さが増強(向上)することが確認できた。

得られた発酵前液(冷麦汁)に下面ビール酵母を添加し、7日間発酵させた。その後、アルコール度数が2.5v/v%となるように希釈した後、蒸留アルコールを添加して、アルコール度数を9v/v%として、ビールテイスト飲料(サンプル6)を得た。さらに、サンプル6に対して、ピルビン酸を表の値となるように添加してビールテイスト飲料(サンプル7)を得た。

サンプル6、7の結果から、蒸留アルコールを添加した場合であっても、各効果について実施例1と同様の傾向がみられることが確認できた。
つまり、蒸留アルコールを添加せずに製造した場合(実施例1)であろうと、蒸留アルコールを添加して製造した場合(実施例2)であろうと、アルコール度数が高いビールテイスト飲料についてピルビン酸の含有量を所定値以下とすれば、エグ味、酸味、刺々しさが低減し、飲み易さが増強(向上)することが確認できた。
