実施例1〜7及び比較例1〜4の加熱調理用液卵200mLを250mLのパウチに充填して密封し、85℃の湯につけて10分間加熱して、蒸し卵焼きを得た。

酢酸と有機酸を併用し、pHが5.5未満である加熱調理用液卵を用いて製した蒸し卵焼き(比較例4)は、やわらかい食感は有するものの一部が十分に凝固せずに液状であり、酸のツンとした臭いも強く感じられ、卵焼きの食味として好ましいものではなかった。
