Description

This invention uses a steam distillation method to extract aroma components from edible foods, and in producing aromatic distilled water, it contains non-volatile components / hardly volatile components generated by bringing water vapor into contact with edible foods. The present invention relates to a device that can be used as an edible liquid and a processed product after contacting edible water vapor with water for a certain period of time, and can also be used as an appliance for cooking.

A distillation apparatus capable of producing aromatic distilled water by extracting an aroma component from a biological raw material (for example, fruit) by a steam distillation method is already known as disclosed in, for example, Patent Document 1.

The distillation apparatus shown in Patent Document 1 will be outlined. This distillation apparatus includes a biological raw material filling container filled with a biological raw material, a water vapor generating apparatus that generates water vapor introduced into the biological raw material filling container, water vapor that has passed through the biological raw material filling container, or generated in the biological raw material filling container. A cooling device that cools the steam, and a recovery container that allows gas containing the fragrance component that has passed without being condensed in the cooling device to come into gas-liquid contact and collect the fragrance component in the liquid. Furthermore, this distillation apparatus has a configuration in which a biological raw material filling container and a recovery container are separately placed, and a cooling device is connected to each of the biological raw material filling container and the recovery container via a duct.

In the distillation apparatus disclosed in Patent Document 1, water vapor is introduced into a biological raw material filling container, water vapor is brought into contact with the biological raw material, and then the water vapor taken out from the biological raw material filling container is sent to the cooling device and passes through the cooling device. It is sometimes cooled and liquefied and recovered as distilled water. And the fragrance component which passed as gas without being condensed with a cooling device is guide | induced to a collection container, and the fragrance component is collect | recovered in a liquid by making the liquid in a collection container contact gas-liquid. According to Patent Document 1, it is said that the liquid containing the fragrance component can be added to a beverage, for example, and used for food.

The applicant of the present application contains non-volatile components and non-volatile components from edible foods when the water vapor is brought into contact with edible foods such as fruits and vegetables in order to produce distilled water containing aromatic components by the steam distillation method. From the viewpoint of effective use of these edible liquids and processed products. The idea was to make food-derived liquids and processed foods edible. Further, the applicant of the present application uses an aromatic distilled water, a edible liquid, or a distillation apparatus capable of producing a processed product as it is as a cooking utensil for cooking the obtained edible liquid or processed product. I also thought about that.

In this respect, in the distillation apparatus of Patent Document 1, in order to produce a liquid containing a fragrance component, water vapor rising from below is brought into contact with a biological raw material such as a fruit in the biological raw material filled container. Alternatively, liquids derived from biological raw materials containing hardly volatile components and processed products after applying water vapor to biological raw materials should have been manufactured. How to use liquids and processed products derived from these biological raw materials Not only the presence of liquids and processed products derived from biological raw materials is shown.

For this reason, in the distillation apparatus of patent document 1, it collect | recovers in the state which can eat the liquid material derived from the biological raw material which has a non-volatile component or a hardly volatile component, and the processed material after apply | coating water vapor to a biological raw material. It does not show the structure or structure for the purpose.

That is, in order to edible a liquid derived from a biological material having a non-volatile component or a hardly volatile component, or a processed material after the biological material is exposed to water vapor, to prevent health damage, the distillation apparatus of Patent Document 1 is used. Although it is desirable to avoid a predetermined metal material such as aluminum or copper from which a metal component is eluted even if the thermal conductivity is high, the distillation apparatus disclosed in Patent Document 1 is used as a material such as a biological raw material filling container or a recovery container to constitute. However, it does not show materials such as a biological raw material filling container and a collection container.

Furthermore, in the distillation apparatus of Patent Document 1, the biological raw material filling container and the biological raw material filling container are illustrated as configurations of sealed containers, respectively. According to the illustrated configuration, Since it cannot be used, and it is not recognized that it is suitable for cleaning the inside of the container, it is not easy to maintain hygiene as an apparatus for producing foods for a long period of use.

Therefore, the present invention is a process for producing aromatic distilled water using a steam distillation method, and edible liquids and processed products obtained at the same time can also be edible and can be obtained by the steam distillation method. An object of the present invention is to provide a distillation apparatus that also serves as a cooking utensil that can be used as it is for cooking food-derived liquids and processed products.

The distillation apparatus according to the present invention includes a mounting device on which edible food is placed and a plurality of through-holes for dropping edible liquid derived from the edible material and lowering water vapor from below are formed; An edible liquid that is disposed on the lower side of the mounting device, supplies water vapor upward from the through-hole of the mounting device to contact the edible and drops from the through-hole of the mounting device. A container for recovering water vapor supply and edible liquid to be recovered, a cylindrical instrument that is disposed on an upper part of the mounting instrument, and forms a cylindrical peripheral wall on the mounting instrument, and the cylindrical instrument Disposed in the upper part of the tube to form a closed space surrounded by the tubular device and the mounting device described above, and cools the water vapor rising in the closed space while being in contact with the edible material. Form distilled water, and further add the aromatic distilled water to the above-mentioned device. A steam cooling / distilled water concentrating device having a concentrating portion concentrating on the side, and the aromatic distilled water disposed in the center of the upper portion of the mounting device and falling from the concentrating portion of the steam cooling / distilled water consolidating device A container for collecting distilled water, a container for recovering steam derived from edible liquid, a container for collecting liquid derived from edible food, a tubular instrument, and a tool for condensing steam cooling and distilled water, The aromatic distilled water recovery container is separate from each other, and the placement device, the water vapor supply and edible liquid recovery container, the tubular device, and the water vapor cooling and distilled water. The aggregation tool is characterized by being formed of a material that does not elute metal components (claim 1).

Edible foods are processed products such as vegetables, fruits, herb leaves, skipjack, etc., but also include coffee bean powder and chocolate. Aromatic distilled water can be used for food, but it can also be used for aroma and cosmetics. For example, pottery, in particular heat-resistant pottery, is used as a steam supply and edible liquid collection container as a material that does not elute a metal component by heating or edible acid or the like and is easy to heat and hard to cool. For example, porcelain is used as a material that is easy to heat and cool in the steam cooling / distilled water collecting device, the mounting device, and the cylindrical device as the metal component is not eluted by heating or edible acid. That is, different materials are used for the steam supply and edible liquid recovery container, the steam cooling and distilled water collecting instrument, the mounting instrument, and the cylindrical instrument.

An example of the use of the embodiment of the distillation apparatus according to the present invention will be described. A placement instrument is placed on a water supply and edible liquid collection container filled with water, and an aromatic distillation is performed at the center of the top surface of the placement instrument. Place the water collection container, place the edible plant around the aromatic distilled water collection container among the upper surface of the mounting device, place the cylindrical device on the periphery of the upper surface of the mounting device so as not to hit the edible plant, Place a steam cooling / distilled water concentrating device on the tubular device, place a cooling material such as ice or a cold insulation agent on the steam cooling / distilled water concentrating device, and then install a steam supply / food-derived liquid collection container Heat from below.
As a result, the water in the container for water vapor supply and edible liquid recovery becomes water vapor, and this water vapor rises toward the mounting device and passes through the through hole of the mounting device. By coming into contact with edible, it becomes water vapor containing edible fragrance components (volatile components and water-soluble components). Then, the steam containing the fragrance component further rises toward the steam cooling / distilled water concentration device in the enclosed space surrounded by the mounting device, the steam cooling / distilled water concentration device, and the tubular device. After being cooled to an aromatic distilled water by being cooled with a steam cooling / distilled water concentrating device, the water is collected in the central portion of the steam cooling / distilled water consolidating device and dropped onto the aromatic distilled water recovery container. The Aromatic distilled water has a fragrance derived from edible aromatic components. That is, the aromatic distilled water of the present invention is an aqueous solution in which an aromatic component is dissolved.
In addition, by bringing water vapor into contact with the edible material placed on the mounting device, the edible liquid, which is heated by water vapor and droops due to an increase in the amount of water in the edible material itself, It is recovered by dropping into the container for recovering the water vapor supply and edible liquid from the through hole. The edible liquid contains a non-volatile component and a hardly volatile component of edible material, but also has a fragrance derived from an edible aromatic component.
And since the processed material which is a thing after making water vapor | steam contact with respect to edible for predetermined time exists on the mounting instrument, it is collect | recovered through the procedure mentioned below. Processed products remain with edible aroma components (volatile components) and / or with newly generated aroma components (volatile components), edible non-volatile components, or non-volatile components It contains a thing and an oil-soluble component, and has a fragrance derived from the said aromatic component by this.

Next, by removing the steam cooling / distilled water collecting device and the tubular device from the distillation device that also serves as the cooking device in the form of the distillation device, the mounting device and the aromatic distilled water recovery container appear outside. In other words, a work piece formed by contacting edible water vapor for a predetermined time appears outside in a state of being placed on the mounting device, and an aromatic distilled water recovery container in which aromatic distilled water is accumulated is also placed on the upper surface of the mounting device. Appears on the outside.
In other words, after the steam distillation, until the steam cooling / distilled water concentrating instrument and the cylindrical instrument are removed, the processed product and the aromatic distilled water are placed in the mounting instrument, the steam cooling / distilled water consolidating instrument and the cylinder. Since it is in the enclosed space formed with the shape-like instrument, it is not in a state of contact with the outside, and there is no possibility that falling bacteria will fall into the processed product or aromatic distilled water. The container for water vapor supply and edible liquid recovery that communicates only with the closed space and the through-hole of the mounting device is not in contact with the outside, and falling bacteria are used for water supply and edible liquid recovery. There is no risk of falling into the edible liquid in the container.
Furthermore, by removing the mounting utensils from the distilling apparatus that also serves as a cooking utensil in the form of the distillation apparatus, the steam supply and edible liquid collection container in which the extract of the edible plant has accumulated becomes a single unit and is opened upward. Therefore, when recovering the edible liquid from the water vapor supply and edible liquid recovery container, the recovery can be easily performed.

And the distillation apparatus which also serves as the cooking utensil of the present invention comprises a mounting utensil, a steam supply and edible liquid collection container, a cylindrical utensil, a steam cooling and distilled water collecting utensil, and an aromatic distilled water collection. By making the containers separate from each other, the shape and dimensions of the steam supply and edible liquid recovery container, cylindrical instrument, aromatic distilled water recovery container, steam cooling and distilled water aggregation instrument, and mounting instrument Can be adjusted respectively. Therefore, in the distillation apparatus also serving as the cooking utensil of the present invention, the tubular utensil and the aromatic distilled water recovery container are accommodated in the steam cooling / distilled water collecting utensil, and the water vapor cooling / distilled water collecting utensil is stored in the steam cooling / distilling apparatus. A compact storage mode can be achieved by placing a water collecting device and further placing a mounting device on the steam cooling / distilled water collecting device.

Further, the distillation apparatus also serving as the cooking utensil of the present invention includes a mounting utensil, a steam supply and edible liquid collection container, a cylindrical utensil, a steam cooling and distilled water collecting utensil, and an aromatic distilled water collection. By making each container separate, it becomes possible to clean each container and instrument individually and without any damage to the inner surface of the container and instrument, so that it can always be kept clean.

Furthermore, the distillation apparatus that also serves as the cooking utensil of the present invention comprises a mounting utensil, a steam supply and edible liquid recovery container, a cylindrical utensil, and a steam cooling and distilled water collecting utensil with metal components. Because it was made of a material that does not elute, for example, copper or aluminum was used as the material. For example, during the process using the steam distillation method, metal components, particularly copper components and aluminum components, etc. were eluted by heating or edible acid. Thus, it is prevented from being mixed with aromatic distilled water or edible liquid and causing health damage.

In the distillation apparatus that also serves as the cooking utensil according to the present invention, the water vapor supply and edible liquid recovery container is a single item after the water vapor is contacted with the edible liquid and / or the edible for a predetermined time. And the steam cooling / distilled water concentrating device is a pan lid placed on the steam supply / food-derived liquid recovery container with the concentrating portion facing upward. (Claim 2). Here, when the steam cooling / distilled water collecting device is used as a pan lid, the concentrating portion has a relatively large diameter so that it can be easily picked with a finger, and thus functions as a handle for the pan lid.

Thereby, the distillation apparatus which also serves as the cooking utensil of the present invention removes the steam cooling / distilled water collecting apparatus, the cylindrical apparatus, the mounting apparatus, and the aromatic distilled water recovery container from the embodiment as the distillation apparatus. Just put the cooling and distilled water concentrating device upside down and place it on the steam supply and edible liquid collection container, it becomes an aspect as a cooking utensil, and in addition to the steam supply and edible liquid collection container Cooking can be started as it is by putting processed products on the mounting utensils and other ingredients such as meat while using the edible liquid as a base for cooking.

As described above, in the distillation apparatus that also serves as the cooking utensil of the present invention, the processed product and aromatic distilled water are not loaded until the steam cooling / distilled water collecting apparatus and the cylindrical apparatus are removed from the embodiment of the distillation apparatus. Because it is in a closed space formed by a device, steam cooling / distilled water concentrating device, and cylindrical device, it is not in contact with the outside, and there is no risk of falling bacteria falling into the processed product or aromatic distilled water . The container for water vapor supply and edible liquid recovery that communicates only with the closed space and the through-hole of the mounting device is not in contact with the outside, and falling bacteria are used for water supply and edible liquid recovery. There is no risk of falling into the edible liquid in the container.
In addition, the mounting device, the steam supply / food-derived liquid recovery container, the tubular device, the steam cooling / distilled water collecting device, and the aromatic distilled water recovery container are separate from each other. Therefore, each container and instrument can be cleaned individually and the inner surfaces of the container and instrument can be thoroughly cleaned, so that the container and instrument can always be kept clean.
Furthermore, since the mounting instrument, the steam supply and edible liquid collection container, the cylindrical instrument, and the steam cooling and distilled water collecting instrument are formed of a material from which the metal component does not elute, for example, copper or Because aluminum is used as a raw material, metal components, particularly copper components and aluminum components, are eluted and mixed with aromatic distilled water and edible liquids by heating and edible acids in processes such as steam distillation. Therefore, it is possible to prevent health damage.
Therefore, according to the distillation apparatus that also serves as the cooking utensil of the present invention, when water vapor is brought into contact with edible water in order to produce aromatic distilled water by the water vapor distillation method, water vapor is brought into contact with the edible food and heated with water vapor. The edible liquid containing the non-volatile component or the hardly volatile component produced by this, and the processed material which is the thing after making water vapor contact for a fixed time can be made edible.

And, according to the distillation apparatus also serving as the cooking utensil of the present invention, a mounting utensil, a steam supply and edible liquid recovery container, a cylindrical utensil, a steam cooling and distilled water collecting utensil, and an aromatic distillation By making the water recovery container separate, it is possible to adjust the shapes and dimensions of these instruments and containers. Along with this, in the container for steam supply and edible liquid collection, the cylindrical instrument and the aromatic distilled water collection container are stored, and the steam cooling and distilled water collecting instrument is placed on the steam cooling and distilled water collecting instrument, Furthermore, a compact storage mode can be achieved by placing a mounting device on the steam cooling / distilled water collecting device.

According to the distillation apparatus that also serves as the cooking utensil according to claim 2, the steam cooling / distilled water collecting apparatus, the cylindrical apparatus, the mounting apparatus, and the aromatic distilled water recovery container are removed from the embodiment as the distillation apparatus. Just put the steam cooling / distilled water concentrating device upside down and put it on the steam supply / food-derived liquid recovery container, and it will become a cooking utensil, and it will also be used for steam supply / food-derived liquid recovery By using the edible liquid in the container as a base for cooking, the processed product on the mounting tool is input, and other ingredients such as meat are also input, so that cooking can be started as it is.

Embodiments of the present invention will be described below with reference to the accompanying drawings.

1 to 10 show an example of a distillation apparatus 1 that also serves as a cooking utensil according to the present invention. In the embodiment of the distillation apparatus shown in FIGS. 1 and 6, the distillation apparatus 1 also serving as a cooking utensil can produce aromatic distilled water using a steam distillation method and simultaneously obtain edible liquids and processed products described below. It can be done. In the distillation apparatus 1 that also serves as a cooking utensil according to the present invention, any of aromatic distilled water, edible liquid, and processed product can be edible.

In this embodiment, the distillation apparatus 1 also serving as a cooking utensil is a mounting utensil 2, a steam supply and edible liquid collection container 3, an aromatic distilled water collection container 4, a tubular utensil 5, and steam cooling. In addition, in the embodiment of the distillation apparatus, these instruments 2, 5, 6 and containers 3, 4 are used in combination. . Hereinafter, these instruments 2, 5, 6 and containers 3, 4 will be described.

The mounting device 2 is formed of a material that does not elute metal components such as porcelain by heating or edible acid, etc., and is easy to heat and cool, and particularly as shown in FIG. The substantially disc-shaped bottom portion 21, the side wall portion 22 erected from the entire circumference of the peripheral edge of the bottom portion 21, and the annular shape extending outward from the end portion opposite to the bottom portion 21 of the side wall portion 22. And the flange portion 23.

As shown in FIGS. 1B and 6, the bottom 21 has an outer diameter smaller than the inner diameter of the bottom 31 described below of the water vapor supply and edible liquid collection container 3, and has a fragrance at the center. A plurality of through holes 24 are formed while leaving a placement portion 21 a for placing the distilled water recovery container 4. Each through hole 24 has a circular shape, for example. Further, the through holes 24 are arranged so that the shape represented by the whole of the plurality of through holes 24 in this embodiment is a substantially hexagonal shape and is arranged in a row when viewed from any direction. However, it is not necessarily limited to this. That is, the shape represented by the whole of the plurality of through holes 24 may be substantially circular, and the through holes 24 may be irregularly arranged. Although the mounting portion 21a has the same upper surface as the portion having the through-hole 24 as in this embodiment, the mounting portion 21a has a recess in which an aromatic distilled water recovery container 4 described below can be placed, although not shown. May be. Thereby, the mounting part 21a becomes a mark when placing the distilled water recovery container 4 when it has a recess, and when it does not have a recess, a container other than the illustrated distilled water recovery container 4 is also placed. be able to.

The side wall portion 22 is obliquely erected so as to spread outward from the peripheral edge of the bottom portion 21, and the outer diameter dimension of the opening end on the side opposite to the bottom portion 21 is as shown in FIG. As shown in FIG. 6, it is smaller than the inner diameter of the container 3 for collecting steam and edible liquid.

In this embodiment, the flange portion 23 extends horizontally from the opening end opposite to the bottom portion 21 of the side wall portion 22 toward the outside, and the outer diameter thereof is as shown in FIG. As shown in FIG. 6, it is larger than the inner diameter dimension of the stepped portion 34 of the water vapor supply and edible liquid collection container 3. And the lower surface of the flange part 23 is flat so that it can contact | abut on the upper surface of the level | step-difference part 34, and the upper surface of the flange part 62 of the water vapor | steam cooling and distilled water concentration instrument 6 without backlash. That is, the flange portion 23 of the mounting device 2 can be placed on the stepped portion 34 of the water vapor supply and edible liquid recovery container 3 and the flange portion 62 of the water vapor cooling and distilled water collecting device 6. ing.

The steam supply and edible liquid collection container 3 is formed of a material that is easy to heat but difficult to cool, such as heat-resistant pottery, so that the metal component is not eluted by heating or edible acid. In particular, as shown in FIG. 3, the substantially disc-shaped bottom portion 31, the side wall portion 32 erected from the entire circumference of the periphery of the bottom portion 31, and the bottom portion 31 of the side wall portion 32 from the opposite side toward the outside. The ring-shaped flange portion 33 extends and the step portion 34 is formed by cutting out the inner portion of the side wall portion 32 opposite to the flange portion 33.

The bottom 31 has a high thermal conductivity so that the water filled in the container 3 for recovering water vapor and edible liquid by heating from the bottom immediately becomes water vapor.

In this embodiment, the side wall 32 has the same inner diameter from the bottom 31 to the step 34, while the outer diameter gradually increases from the bottom 31 to the flange 33. That is, the side wall 32 gradually increases in thickness from the bottom 31 to the step 34. Thereby, the area of the bottom face of the bottom 31 of the container 3 for recovering water vapor supply and edible liquid can be secured relatively larger than the upper side. As shown in FIG. 10, the dimensions of the side wall portion 32 from the bottom surface of the bottom portion 31 to the end on the flange portion 33 side are a cylindrical device 5, a steam cooling / distilled water collecting device 6 and a mounting device as described below. 2 is approximately the same as or slightly larger than the dimension of the combined body. The flange portion 33 functions as a handle for a person to raise and lower the container with the water vapor supply and edible liquid collection container 3.

As shown in FIGS. 1B and 6, the aromatic distilled water recovery container 4 has, for example, a bowl-like or cup-like shape having an opening 41 opened upward and a spout 42 connected to the opening 41. Thus, for example, the bottom surface is flat so that it can be placed on the top surface of the mounting portion 21a of the mounting device 2 without rattling. The aromatic distilled water recovery container 4 is made of, for example, porcelain and is formed of a material that does not elute metal. The aromatic distilled water recovery container 4 is designed so that the aromatic distilled water does not overflow from the aromatic distilled water recovery container 4. Along with this, for example, the height of the aromatic distilled water recovery container 4 shown in the figure may be changed to be higher by a desired dimension such as 1 cm. And although not shown in figure, the aromatic distilled water collection | recovery container 4 may have a scale on the inner surface in order to confirm the capacity | capacitance of aromatic distilled water.

The cylindrical instrument 5 is formed of a material that is easy to heat and cool without being eluted by heating or edible acid, such as porcelain, and particularly as shown in FIG. In this embodiment, the wall thickness is the same from one side to the other in the axial direction. The lower surface 51 of the cylindrical instrument 5 on the mounting instrument 2 side is flat, whereas the upper surface 52 of the cylindrical instrument 5 on the steam cooling / distilled water collecting instrument 6 side is water vapor. In order to be able to come into contact with the lower surface 63a of the bottom 63 of the cooling / distilled-water collecting device 6 without rattling, the inclined surface is formed by being obliquely cut inward from the opening end.

The dimensions from the upper surface 52 to the lower surface 51 of the tubular device 5 are as shown in FIG. 10 in particular, from the bottom 31 of the side wall 32 of the container for water vapor supply and edible liquid collection 3 to the upper surface of the flange 33. It is smaller than the dimensions.

The steam cooling / distilled water concentrating device 6 is formed of a material that is easy to heat and cool easily without elution of metal components by heating or edible acid, such as porcelain. As shown in the figure, an annular side wall portion 61 forming an opening side portion of the steam cooling / distilled water collecting device 6, a flange portion 62 extending outward from the upper end of the side wall portion 61, and the side wall portion 61. The bottom part 63 of the mortar shape connected to the lower part of the bottom part 63, and the aggregation part 64 extended downward from the center of the lower surface 63a of the bottom part 63 are comprised.

As shown in FIG. 10, the inner diameter of the side wall 61 is slightly larger than the outer diameter of the side wall 22 of the mounting tool 2, and the inclination angle of the inner surface of the side wall 61 is This is substantially the same as the inclination angle of the outer side surface of the side wall portion 22 of the side wall portion 22. Furthermore, as shown in FIG. 10, the steam cooling / distilled water collecting device 6 has a dimension from the top surface of the flange portion 62 to the boundary with the bottom portion 63 such that the dimension from the top surface of the flange portion 23 of the mounting device 2 to the bottom portion. It is approximately the same as or slightly larger than the dimension up to the bottom surface of 21.

In this embodiment, the flange portion 62 extends horizontally from the opening end opposite to the bottom portion 63 of the side wall portion 61 toward the outside, and the outer diameter thereof is as shown in FIG. In addition, the inner diameter dimension of the stepped portion 34 of the container 3 for collecting water vapor and edible liquid is larger. The upper surface of the flange portion 62 is flat so as to be able to contact the lower surface of the flange portion 23 of the mounting instrument 2 without rattling, and the lower surface of the flange portion 62 is also the upper surface of the step portion 34. It is flat so that it can come into contact with the backlash.

The bottom 63 has a mortar shape that gradually decreases from the side wall 61 toward the side opposite to the side wall 61. The bottom 63 has a conical outer shape so that the cross section is substantially V-shaped. The lower surface 63a has a shape. The inclination angle from the lower side to the upper side of the lower surface 63 a is the same as the inclination angle of the upper surface 52 of the cylindrical instrument 5.

And the aggregation part 64 has extended toward the downward direction from the site | part used as the lowest side of the lower surface 63a of the bottom part 63. As shown in FIG. The aggregation portion 64 has a cylindrical shape in this embodiment, but is not necessarily limited to this shape. For example, the shape of the aggregation portion 64 may be a cone or a truncated cone.

The dimensions from the upper surface 52 to the lower surface 51 of the tubular device 5 are as follows when the lower surface 63a of the bottom 63 of the steam cooling / distilled water collecting device 6 is placed on the upper surface 52 of the tubular device 5 as shown in FIG. In addition, for example, the tip of the concentrating portion 64 is close to the aromatic distilled water recovery container 4 and does not reach the opening of the aromatic distilled water recovery container 4.

A cooking utensil comprising the mounting utensil 2, the steam supply and edible liquid collection container 3, the aromatic distilled water collection container 4, the tubular utensil 5, and the steam cooling and distilled water concentrating utensil 6 shown above. An example of a process for producing the aromatic distilled water D, the processed product E, and the edible liquid F will be described with reference to FIG.

First, the mounting device 2 is placed on a water vapor supply and edible liquid recovery container 3 filled with about 700 cc of drinkable water B, and an aromatic distilled water recovery container 4 is placed in the center of the upper surface of the mounting device 2. The edible A is placed around the aromatic distilled water recovery container 4 on the upper surface of the placing device 2. Next, the cylindrical instrument 5 is placed on the periphery of the upper surface of the mounting instrument 2 so as not to hit the edible A, and the steam cooling / distilled water collecting instrument 6 is placed on the cylindrical instrument 5. Thereby, the distillation apparatus 1 which also serves as a cooking utensil has a closed space S surrounded by the mounting utensil 2, the cylindrical utensil 5, and the steam cooling / distilled water collecting utensil 6. Then, ice C is placed on the steam cooling / distilled water concentrating device 6 to cool the steam cooling / distilled water consolidating device 6 and the steam supply / food-derived liquid recovery container 3 is heated from below. The heating time is, for example, 30 minutes to 1 hour, but varies depending on the type of edible food and the conditions.

As a result, a part of the water B (for example, 200 cc) in the water supply / food-derived liquid recovery container 3 becomes the water vapor X1, and this water vapor X1 rises toward the placement device 2 and is placed. The edible A on the mounting device 2 is contacted through the through hole 24 of the mounting device 2. Thereby, the water vapor | steam X1 turns into the water vapor | steam X2 containing the aromatic component (volatile component) derived from the edible A. FIG.

And the water vapor | steam X2 containing a fragrance | flavor is water vapor | steam cooling / distilled water in the outer peripheral side among the obstruction | occlusion space S enclosed with the mounting instrument 2, the cylindrical instrument 5, and the water vapor | steam cooling and distilled water concentration instrument 6. It further rises toward the concentrating device 6 and is cooled by the steam cooling / distilled water consolidating device to become aromatic distilled water D. That is, the aromatic distilled water D is an aqueous solution in which an aromatic component is dissolved. After the aromatic distilled water D is collected in the concentrating portion 64 down the lower surface 63a of the bottom 63 of the steam cooling / distilled water consolidating device 6, The aromatic distilled water is dropped from the concentrating unit 64 onto the recovery container 4 and recovered. The aromatic distilled water D is also scented by the fragrant component (volatile component) derived from the edible A. The recovered amount of the aromatic distilled water D is, for example, 100 cc to 200 cc. However, the amount that has sufficient aroma as aromatic distilled water and is effective in terms of components is considered to be within 140 cc.

The edible liquid F formed by dripping the edible A itself by increasing the amount of water by heating the edible A placed on the mounting device 2 with the water vapor X1 and applying it to the water vapor X1 is the mounting device. 2 falls into the water vapor supply and edible liquid collection container 3 from the through-hole 24 and is mixed with the water (for example, 500 cc) remaining in the water vapor supply and edible liquid collection container 3 to be mixed. G. The mixed solution G in the water vapor supply and edible liquid collecting container 3 contains a volatile component or a hardly volatile component of edible material, but also has a fragrance derived from an edible aromatic component. In addition, the non-volatile component or the hardly volatile component contained in the edible liquid F is, for example, dietary fiber, high-molecular sugars such as starch, protein, and the like.

As described above, the edible A placed on the placing device 2 is applied to the water vapor X1 for a predetermined time to become a workpiece E. This processed product E is a fragrance component (volatile component) remaining at the time of edible A and / or a fragrance component newly generated by processing (volatile component), a non-volatile component or a hardly volatile component of edible A It contains what remains as an ingredient and an oil-soluble ingredient, and thus has a fragrance derived from the aroma ingredient. The non-volatile component or the hardly volatile component contained in the processed product E is, for example, flavonoids, tannins, amino acids, and the like.

That is, three kinds of scents can be obtained with the aromatic distilled water D, the mixed solution G in which the edible liquid F is mixed, and the processed product E, respectively.

In addition, in said description, although edible A was demonstrated on the assumption that it mounts on the mounting instrument 2, it is not limited to this. For example, in the case where the edible A is a thing that can fall from the through-hole of the mounting device 2 such as coffee bean powder, although not shown, the edible A is not placed on the mounting device 2. That is, the edible A is put into the water vapor supply and edible liquid collection container 3 from the beginning, and the water supply and edible liquid collection container 3 is heated from the bottom in this state. Thereby, the water vapor | steam X2 containing the aromatic component of edible A generate | occur | produces from the beginning, this water vapor | steam X2 passes through the through-hole of the mounting instrument 2, and the mounting instrument 2, the cylindrical instrument 5, and water vapor | steam cooling and distillation. The outer peripheral side of the closed space S surrounded by the water concentration device 6 further rises toward the steam cooling / distilled water concentration device 6 and is cooled by the water vapor cooling / distilled water concentration device, and the aromatic distilled water D is cooled. Will be.

Next, with reference to FIG. 7 and FIG. 8, the process of shifting the distillation apparatus 1 that also serves as a cooking utensil from the aspect of the evaporator to the aspect of the cooking utensil will be described below.

First, the steam cooling / distilled water collecting device 6 and the tubular device 5 are removed from the distillation apparatus 1. Thereby, as shown in FIG. 7, the workpiece E appears outside in a state of being placed on the upper surface of the mounting tool 2, and the aromatic distilled water recovery container 4 in which the aromatic distilled water D is stored is also mounted on the mounting tool. Appears on the top surface of 2. Thus, by removing the aromatic distilled water recovery container 4 in which the aromatic distilled water D is accumulated from the mounting device 2, the aromatic distilled water recovery container 4 can be used as it is, for example, as a container for food. On the other hand, when the mounting device 2 on which the workpiece E is placed is removed from the water vapor supply and edible liquid recovery container 3, the water supply and edible liquid recovery container 3 is, as shown in FIG. It becomes a simple substance and comes to play a role as a pan body. This steam supply and edible liquid collecting container 3 is in a state where the mixed liquid G mixed with the edible liquid F is still housed. Next, as shown in FIG. 8, for example, as shown in FIG. 9, the workpiece E is loaded from the mounting tool 2, and other cooking materials such as meat are loaded as necessary. Then, the steam cooling / distilled water collecting device 6 is placed on the container 3 for collecting steam and supplying food-derived liquid with the upside down so that the collecting portion 64 faces upward. Thereby, the steam cooling / distilled water collecting device 6 serves as a pan lid. And the steaming supply and edible liquid collection container 3 is heated from below, so that cooking E or the like can be performed based on the mixed liquid G mixed with the edible liquid F.

In the embodiment as a cooking utensil, the through-hole 65 formed in the steam cooling / distilled water collecting utensil 6 functions as a lid vent hole as shown in FIG. On the other hand, the through-hole 65 formed in the steam cooling / distilled water collecting device 6 is located outside the outer peripheral surface of the tubular device 5 in an aspect as an evaporator as shown in FIG. Therefore, in the process of cooling the steam X2 with the steam cooling / distilled water collecting apparatus 6 to obtain aromatic distilled water, the through hole 65 does not hinder the process.

Finally, the mode when the distillation apparatus 1 is not used will be described with reference to FIG. First, after placing the aromatic distilled water recovery container 4 in the center of the upper surface of the bottom 31 of the container 3 for recovering the steam supply and edible liquid, the cylindrical instrument 5 is supplied with water vapor in a form covering the aromatic distilled water recovery container 4. It is placed on the bottom 31 of the container 3 for collecting the edible food-derived liquid. At this time, the cylindrical instrument 5 is housed in the water vapor supply and edible liquid recovery container 3.

Next, the flange portion 62 of the steam cooling / distilled water collecting device 6 is placed on the stepped portion 34 of the steam supply / edible liquid collecting container 3. At this time, the upper surface 52 of the tubular device 5 may not be in contact with the lower surface 63a of the bottom 63 of the steam cooling / distilled water collecting device 6. On the other hand, the concentrating portion 64 of the steam cooling / distilled water concentrating device 6 does not reach the opening 41 of the aromatic distilled water recovery container 4.

Further, the flange portion 23 of the placing device 2 is placed on the flange portion 62 of the steam cooling / distilled water collecting device 6. At this time, the side wall portion 22 of the mounting device 2 is positioned on the inner side of the side wall portion 61 of the steam cooling / distilled water collecting device 6, and the outer surface of the side wall portion 22 has the same inclination angle as the inner surface of the side wall portion 61. It is in a state of confronting. The outer surface of the side wall part 22 and the inner surface of the side wall part 61 may or may not be in contact with each other.

As a result, the distillation apparatus 1 includes an aromatic distilled water recovery container 4, a tubular instrument 5, a steam cooling / distilled water concentrating instrument 6, and a mounting instrument 2 in a steam supply and edible liquid recovery container 3. Since it is almost stored, it can be placed on a kitchen shelf when not in use.
