なお、従来技術の冷凍個食スパゲティの製造方法は以下の通りである。
1.スパゲッティ1.8mm(オーマイ社製)を沸騰湯浴中で歩留まり240〜270%になるまで茹でた。
2.茹でスパゲッティの品温が10℃になるまで水冷した。
3.水切り後、茹でスパゲッティ200gに対して麺線の乾燥とくっ付きを防止するため4gのサラダ油を加えて十分に混合した。
4.茹でスパゲッティに50gのナポリタンソースを添加し、十分に和えた。
5.電子レンジ加熱用容器にソース和え炒めスパゲッティを盛り付け、24gのナポリタンソースを上掛けし、ウインナーやピーマンなどの具をトッピングした後、−35℃の冷凍庫で凍結した。
8.これを密閉し、冷凍個食スパゲッティを製造した。

実施例1は上記の通り工程4において茹でスパゲティを炒めた後に工程5において炒めスパゲティに余熱でナポリタンソースを和える工程を含む、製造例1にしたがって製造した冷凍個食スパゲッティである。
比較例4は製造例1の工程4において茹でスパゲッティに製造例1の工程5で添加したのと同量のナポリタンソースを添加して炒め、工程5を行わなかった以外は製造例と同様に製造した冷凍個食スパゲッティである。得られた各冷凍個食スパゲッティについて上記評価方法により、評価した結果を下記表2に示す。

比較例3はソースを和えた炒めスパゲッティを工程6において真空冷却ではなく送風機で冷却し、風冷させた以外は製造例と同様に製造した冷凍個食スパゲッティである。
比較例4はソースを和えた炒めスパゲッティを工程6において真空冷却ではなく冷蔵庫で冷却した以外は製造例と同様に製造した冷凍個食スパゲッティである。得られた各冷凍個食スパゲッティについて上記評価方法により、評価した結果を下記表3に示す。
