[3]乳化剤を含まない、上記2に記載のアイスクリーム類、
[4]増粘剤を含まない、上記2又は3に記載のアイスクリーム類、
[5]粉末状のイヌリンを添加すること含む、上記1〜4のいずれか1に記載のアイスクリーム類の製造方法
である。

・大腸粘膜上皮細胞の増殖=感染防止効果
・ミネラル(Ca,Mg,Fe)吸収促進作用
等を挙げることができる。
即ち、イヌリンを含有させることによって、健康に良いアイスクリ−ム類を提供することができる。

そこで、本試験としてアイスクリーム類製造メーカーにイヌリン粉末(水分15%、オラフティー社GR)を提供し、イヌリン入りアイスの試作を委託した。そのアイスを財団法人十勝圏振興機構職員20名によって官能評価を行った。サンプルはA:コントロール(イヌリンおよび乳化剤が入っていない物)、B:15%イヌリン粉入り、C:増粘剤・乳化剤入りの3種類の試作品を使用した。設問を5つとし、舌触り、口どけ、甘さ、コクの強さ、総合評価について、それぞれ5点を最高点とし、20名の総合点を100点中の点数で評価した(図3)。その結果、口どけの良さに関する設問のみ他とは僅差であったが、全ての設問においてイヌリン入りの評価は70点以上であり、コントロールと増粘剤・乳化剤入りと比べても最も高い評価だった。コントロールは乳化不十分だったために氷結晶が出来てザラツキが感じられた。また、イヌリン配合率8、15及び18%のアイスクリームについても、同様の評価が得られた。
