本発明者らは、キャラメルの歯付きを防止するために鋭意研究を進めたところ、公知の技術では、中に分散させるグミやタブレットによるキャラメル生地の味への影響が大きく、甘さが強調されたり、味の相性が合わなかったりなど、キャラメル自身のおいしさを阻害させるという問題があることを初めて見出した。
したがって、本発明は、このような事情に鑑みなされたものであり、その目的とするところは、キャラメルの風味を損なうことなく歯付きを防止し、かつ新規の食感を有するキャラメル菓子及びその製造方法を提供することにある。

(4)キャラメル生地を炊き上げシートに成型する工程、前記キャラメル生地シート上にスナック類を分散させる工程、前記シートの成型工程と同様にして成型された、別に用意したキャラメル生地シートを、前記スナック類を分散させたキャラメル生地シートに重ね合わせることで、分散したスナック類をキャラメル生地シート間に包み込む工程を有することを特徴とするキャラメル菓子の製造方法
