Description

The present invention relates to an electric heating roaster apparatus for cooking food on a grill.

Many roaster devices for cooking food such as grilled meat on a grill net, regardless of the heating method such as electric heating, to collect the heating element and the heat of the heating element to the grill net below the grill net The mainstream is to provide a reflector and heat the food from the bottom, but in foods that contain a lot of fat such as meat, the oil dissolves and flows down by heating, and touches the heating element or reflector below. There is a problem that oil smoke is generated and the environment is deteriorated. As a countermeasure for this, it is necessary to provide an oil smoke suction device or the like in the roaster device to take measures to prevent oil smoke from leaking outside the device. . In addition, in the apparatus as described above, the oil and fat that has flowed down adheres to the lower heating element and reflector, so it is inevitable that the heating element and reflector are contaminated and the heating efficiency is reduced, and the apparatus is kept clean. Therefore, it is indispensable to frequently remove and clean the oil dirt adhering to the heat generating part and the reflector.

Therefore, in order to solve the above-mentioned problems, by avoiding direct contact with the heating element even if oil or fat falls, a roaster device that can suppress the generation of oil smoke without providing an oil smoke suction device or the like is provided inside the device. The thing of the structure which provides a heat generating body in the side surface is proposed. As such an apparatus, for example, a heating member is provided in an annular shape in a hollow base member, a heat collecting board is installed on the upper part of the base member, an upper lid body and a mounting net are installed thereon, and the high temperature of the heating member is set. The smokeless roaster (Patent Document 1) for heating the food on the loading net by means of the above, the electric heating element disposed at a position removed from directly under the heating object, and the heat ray radiated from the heating element There is an electric stove (Patent Document 2) including a mirror surface portion (reflecting plate) including a partial elliptical column surface portion that collects heat on the lower side, and according to the roaster device, the heating member (electric heating element) is a base member (Support plate) Because it is located on the side surface, even if oil or fat falls, it does not come into contact with the heating member or mirror part (reflecting plate) and falls on the water collecting board, etc. It is possible to suppress the generation of oil smoke You have me.
Noto 3107345 gazette JP 2002-340345 A

However, in the roaster device of the above-mentioned patent document, a heating member or a mirror surface portion (reflecting plate) serving as a heat source is disposed on the side surface of the lower base member away from the placement net, and the food is heated from the heating member. Because it relies on the rise of hot air and heat collection by reflection of the mirror surface part, it tries to collect hot air on the placement net with a heat collection board, or the shape of the mirror surface part is collected in the shape of collecting heat below the heated object Although it has been devised, there is a problem that the thermal efficiency is not necessarily good in terms of structure compared to direct heating by a heating element located in the vicinity. Moreover, in the apparatus using the conventional reflective plate including the mirror surface part of patent document 2, there exists a problem that the shape of this reflective plate tends to become complicated for efficient heat collection from the downward direction.

Accordingly, an object of the present invention is to provide a roaster device that is a smokeless type roaster device that can suppress the generation of oil smoke without using an oil smoke suction device or the like, and has a simple structure and high thermal efficiency.

The roaster device of the present invention comprises a hollow housing having an open upper surface, and a placing surface provided inside the housing, on which food to be heated is placed, the umbrella-shaped grilling centered on the top. A rod-like heating element that emits far-infrared rays in which a heating portion is arranged in a vertical direction at a height equivalent to that of the grilling net, and / or around the inner side surface of the housing, immediately below the center top of the grilling net, One or a plurality of ring-shaped heating elements that radiate far-infrared rays and are disposed so as to surround the grille and have a height equivalent to that of the grille, and an oil and fat tray provided at the bottom of the housing.

Further, it is preferable that the inner side surface of the hollow housing is provided with a reflection plate or a reflection part that surrounds the grille at the same height as the grille, and the reflection plate or the reflection part is provided in the width direction. It is more preferable that the cross section is formed by bending or bending into a concave shape.

In addition, when the heating portions of the rod-shaped heating elements are arranged in the vertical direction, it is preferable that the electric capacity (watt density) per unit surface area on the lower side is set higher than that on the upper side. The body and / or the ring-shaped heating element is more preferably formed of a far-infrared sheath heater or a sheath heater provided with a far-infrared coating.

(Function)
According to the roaster device of the present means, the grill is formed in an umbrella shape and is located at the same height as the rod-like heating element or the ring-like heating element serving as a heat source, and the heating element emits far infrared rays. By being a thing, the far-infrared heat ray emitted from a heating element is directly radiated to a grill (food), and the heating effect by far-infrared rays can be used efficiently. Conversely, if the heat source is disposed below the grill (food) as in the prior art, the effect of far-infrared radiation can hardly be expected.
In addition, the rod-shaped heating element is located in the lower part of the grille. However, since the heating element is installed in the vertical direction, the area of the upper surface of the heating element is small, and even if the oil falls, it contacts the heating element. Since the possibility is small, the generation of oil smoke can be suppressed. On the other hand, since the ring heater is located around the grill, it does not cause oil smoke.
Furthermore, by making the grille into an umbrella shape, in addition to increasing the surface area directly receiving the far-infrared effect compared to a planar grille, especially for the rod-shaped heating element provided in the center, Since the distance between the edge of the grill net and the heating element is shortened, the heat radiated from the heating element located in the center to the surroundings can be directly and efficiently transmitted to the grill net. Also, if the housing is higher than the food placement surface, it is expected that the food will be difficult to see from the outside, but because the placement surface has an umbrella shape, the visibility of food from the outside is good. Become. (See Figure 3)
In addition, the far-infrared effect can be used effectively for food heating, so the capacity of the heat generating part can be reduced compared to the conventional electric heating type roaster device, and the heating rises. Therefore, the structure of the apparatus can be facilitated by eliminating the need for a reflector that is often used and disposed below the grill, and the heat collecting plate used in Patent Document 1.

In addition, if the inner side surface of the housing is provided with a reflector or reflecting part that reflects far infrared rays at a height equivalent to that of the grill net, the far infrared heating effect from the side wall of the housing to the grill net is further enhanced by reflection of heat rays. be able to. Furthermore, if the cross section of the inner side surface of the housing is formed by bending or bending into a concave shape, the heat rays reflected by the reflecting plate or the like can be concentrated on the grill net located in the internal space of the housing. A heating effect can be expected. (Refer to FIG. 3) Further, the reflector (reflecting part) is provided with an equivalent height by surrounding the grille on the inner side surface of the housing, so that reflection heating from a position closer to the grille is possible. In order to collect heat well from the lower side of the grille to the lower side of the grille like the conventional reflector, the basic shape is compared to that formed in a complicated shape considering the angle of reflection etc. When the cylindrical shape is sufficient, the reflector can be easily manufactured.
The action of providing the reflecting plate is particularly effective in the case of an instrument provided with a heating element only in the central portion where the heating element is not provided on the side surface.

(図3参照)   Also, if the watt density on the lower side of the heating part of the rod-shaped heating element is set higher than the watt density on the upper side, the lower side with a longer distance to the grill will have a higher surface temperature and more heat radiation than the shorter upper side. Thus, the entire grill can be heated more uniformly. (See Figure 3)

According to the roaster device of the present invention, since the generation of oil smoke is suppressed by the above-described configuration and operation, there is no need to provide a special function for removing oil smoke, and the heat generator and the reflector (reflecting part) oil are used. Cleaning can be facilitated by reducing dirt.
In addition, since the far infrared heating effect can be effectively used as described above, a roaster device with high heating efficiency and a simple structure can be obtained.

Hereinafter, embodiments of the roaster device of the present invention will be described in detail with reference to the drawings. FIG. 1 is a perspective view showing the first embodiment, and FIG. 2 is a sectional view thereof.
The roaster device of this example is a cylindrical housing 1 having an open upper surface serving as an exterior of the device, and an umbrella-like shape having a central portion as a top portion 21 that is detachably installed above the internal space of the housing 1 ( A grill-like net 2 serving as a mounting surface on which foods are formed in a chevron shape, and a rod-shaped heating element that emits far-infrared rays directly below the top 21 of the grill net in a vertical direction perpendicular to the grill 2 ( In this example, the rod-shaped sheath heater 3 is basically composed of a sheath heater 3 and an oil tray 4 provided on the lower portion 12 (bottom portion) inside the housing 1, and the food 6 is placed on the grill 2. It is an apparatus which cooks this foodstuff 6 by electrically heating by.
In this apparatus, the oil droplets 7 that melt from the food containing fats and oils fall into the lower oil receiving tray 4 through the holes of the grill net 3 and hardly come into contact with the heat generating part 31 of the heating element 3, thereby suppressing the generation of oily smoke. be able to.

Next, each component will be described in detail.
The housing 1 forms the exterior of the roaster device, and may be of any material as long as it is heat resistant, and the shape is not specified, but in consideration of heating efficiency and heating uniformity, It is formed in the shape of a hollow cylinder so that the action of the present invention can be exhibited most effectively, and the upper part inside the housing 1 is used as a space for installing the grill net 2, and the bottom part of the lower part of the housing 12 is used as the installation part for the oil and fat tray 4 In addition, a net support 11 serving as a protrusion for placing the grill net 2 is provided in the middle part.
Further, a structure surrounding the grille 2 on the upper side inside the housing 1 and surrounding the grille, and reflecting the heat rays from the sheath heater 3 to the grille 2 at the same height. As a body, a reflector 10 having a mirror surface (in this example, a stainless steel plate having a mirror surface) was provided.
The shape of the reflecting plate 10 (housing 1) may be such that the cross-section in the width direction of the reflecting plate 10 is curved or bent into a concave shape as shown in FIG. The reflecting plate 10 may be an integral member, and an appropriate portion of the housing 1 may be a reflecting portion.

The grill net 2 is disposed in the upper space inside the housing 1 and, as described above, has an umbrella shape with the central portion as the top portion 21, that is, has a slope shape from the top portion 21 to the edge portion 22. In this example, the central top portion 21 is a flat surface having an appropriate area, and the top portion 21 includes a top portion 21 so that the oil droplet 7 does not fall on the heat generating portion 31 of the rod-shaped sheath heater 3 described later. It was set as the structure which does not provide a hole.
In consideration of ease of cleaning and the like, it can be removed, and is used by being placed on the net holder 11 of the housing 1 by the edge 22. In this example, in consideration of the heating effect, the top portion 21 has the same height as the upper end of the housing 1 and the entire grill net 2 is positioned inside the housing 1, but the heating effect is remarkably impaired. The upper part of the grill 2 may protrude from the upper end of the housing 1 as long as it is not.
In addition, the surface of the grill net has a general net shape, but may have a shape having a large number of small holes.

In the rod-shaped heating element of this example, a heating wire 33 is arranged inside a metal thin tube (sheath) called a sheath heater 3 or a cartridge heater, such as a tubular heat-resistant high nickel steel. An L-shaped rod-shaped heating element having a structure in which an insulating material such as magnesium oxide is densely packed around the sheath and a far-infrared coating is applied to the surface of the sheath is used. In addition, it was installed in the vertical direction so that the heat generating portion 31 was vertical.
Further, the lower limit position of the heat generating portion 31 of the heater 3 is kept at a height up to the edge portion 22 of the grill 2 so that the height of the grill 2 and the heat generating portion 31 of the heater are equal (horizontally). After the heat generating portion 31 (hatched portion in FIG. 2), the non-heat generating portion 32 (non-shaded portion in FIG. 2) is formed in an L shape and extends to the outside of the housing 1. As a result, the non-heat generating portion 32 crosses the lower side of the grille 2, but since it does not reach a high temperature, generation of oily smoke is limited even if the oil 7 falls off the grille 2.
In addition, as described above, the heat generating portion 31 is closer to the food 6 to be heated as the upper portion thereof, so that the winding density of the heating wire 33 is rough at the upper portion and is dense at the lower portion in consideration of heating uniformity ( 3), adjustment was made so that the watt density on the lower side of the heat generating portion 31 was increased, and the heat to the grill 2 was considered to be more uniform.
Of course, a temperature sensor for controlling the temperature, a control device, and the like are attached to the rod-shaped sheath heater 3, but these may be provided by known means.

The oil receiving tray 4 is detachably mounted on the bottom of the housing 1 and is a container for storing oil and fat dissolved from food, and further prevents generation of oily smoke by adding water as necessary. Can do.

FIG. 3 is a schematic diagram for explaining a part of the above-described operation.
By forming the grill 2 in an umbrella shape, the surface area of the grill 2 that directly receives the heat rays 8 by far infrared rays from the rod-shaped heating element (sheath heater) 3 is increased. It can be heated effectively.
Further, by making the winding density of the heating wire 33 of the heating part 31 sparse at the upper part and dense at the lower part, the watt density on the lower side becomes higher than that on the upper side, and the fringe edge 22 ( This shows the effect that the heat radiation to the lower side becomes larger than that on the top side, whereby more uniform heating can be realized.
Further, by providing the reflecting plate 10 on the inner side surface of the housing 1, the action of the heat rays 8 generated by the far infrared rays emitted from the sheath heater 3 is reflected, and the heat ray 9 reflected by making the side surface concave is provided. The operation concentrated in the internal space of the housing 1 (the portion where the grill net is installed) is shown, whereby a further far-infrared heating effect can be obtained.
In addition, the fact that the grill 2 has a slope shape has an effect of improving the visibility of the food from its own side.

FIG. 4 is a perspective view showing the second embodiment, and FIG. 5 is a sectional view thereof.
The roaster apparatus of this example is an apparatus provided with a ring-shaped heating element 5 for adding direct heating from the periphery of the grill 2 to the apparatus of the first embodiment, except for the ring-shaped heating element 5. Since these members are the same as those in the first embodiment, description thereof is omitted.
In the ring-shaped heating element 5 of this example, similarly to the rod-shaped heating element 3, a heating wire is arranged inside a metal thin tube (sheath) called a sheath heater, which is called a sheath heater, A heating element having a structure in which an insulating material such as magnesium oxide is densely packed around the heating wire, a far-infrared coating is applied to the sheath surface, and a rod-like heater is formed in a ring shape is used. Then, around the inner side surface of the housing 1, a ring shape is formed between the widths of the top portion 21 and the edge portion 22 of the grill net 2 (substantially the middle portion in this example) so as to surround the grill net 2. The heater 5 and the grill 2 are arranged so that their heights are equal (horizontally located), and both ends of the ring heater 5 are extended to the outside of the housing 1. Of course, a temperature sensor or a control device for temperature control is attached to the ring-shaped sheath heater 5, but these may be provided by known means.
Further, the ring-shaped sheath heater 5 provided on the inner surface of the housing 1 is not limited to one, and a plurality of the ring-shaped sheath heaters 5 may be provided in parallel. May be selected in consideration of the size of the heater and the heat capacity of the heater.
Thus, by providing the ring-shaped sheath heater 5, it is possible to provide a device having a higher heating effect than the device having only the rod-shaped sheath heater 3 of the first embodiment, and the rod-shaped heater. By adjusting the temperature with 3, optimum heating conditions such as strength switching can be set. Moreover, since it becomes the heating from a side surface, the baking condition of a foodstuff can be confirmed without turning over.

FIG. 6 shows, as yet another form, the apparatus of the third embodiment in which only the ring-shaped sheath heater 5 is used as a heating element, excluding the rod-shaped heating element 3 from the second embodiment. Since the configuration of this example overlaps with the first embodiment and the second embodiment, a detailed description thereof will be omitted.
In the case of this example, since there is no heating element in the lower part of the grill 2, the generation of oil smoke is further suppressed. Further, as for the shape of the grill net 2, it is not necessary to consider the far-infrared effect from the back side of the grill net 2. Therefore, the grill net may be provided with grooves or irregularities having an appropriate pattern without providing holes. . However, when the hole is not provided, the oil and fat that melts from the food is transmitted to the grill edge portion 22 along the slope, and therefore it is necessary to provide a means for the oil and fat to fall on the lower oil receiving tray 4 separately.
