上記乾燥漬け物素材に対し、食塩類を用いない、上記漬け込み用液による暗所における3週間以上の常温・密閉漬け込み処理を施すことによって、上記乾燥漬け物素材から、上記生鮮漬け物素材による漬け物を得る工程とを有することを特徴とする漬け物の製法。
