下記のサンプルを用意した。

対照品1:実施例1においてサイクロデキストリンを添加せず、その他は実施例1と同じ方法で試作した冷凍大根おろし。(無添加)
対照品2:実施例1の要領ですりおろしたのち濾布で30%の水分を排除した大根おろしに、乳化安定剤としてキサンタンガムを0.2%濃度となるように添加し、充分に撹拌したのち、加熱殺菌(72℃で45分間加熱、20℃で20時間放置、再び72℃で45分間加熱)し、これを充分撹拌したのち、合成樹脂製シートからなる袋に充填し、実施例1と同じ方法で凍結した大根おろし。(乳化剤添加、特許文献1によるもの)
対照品3:実施例1の要領ですりおろした大根おろしを、濾布を用いて質量比で固形分が1部、液体分が2部となるように分離し、液体分にはリンゴ酸ナトリウムを1%、酸性メタリン酸ナトリウムを0.2%、アスコルビン酸ナトリウムを2.5%の濃度となるように添加混合し、最後に固形分と液体分を混合して充分撹拌したのち合成樹脂製シートからなる袋に充填し、実施例1と同じ方法で凍結した冷凍大根おろし。(有機酸添加、特許文献2によるもの)
次に上記各サンプルを−25℃の冷凍庫で凍結し翌日からは−10℃の冷凍庫に30日間保管したのち取り出し、解凍してすぐに、それぞれのサンプルについて色調を観察すると共に、よく訓練した10名のパネラーにより食感と食味をテストしたところ表1の結果が得られた。
なお、このテストと同時に比較品として実施例1の要領ですりおろし、充分撹拌して得られた作りたての大根おろしのサンプルについても同様のテストをしたので表1にその結果を示す。

表1より、テスト品においては冷凍しても変色がなく、また食感と食味が作りたてのものと有意差のない、従来技術では得られなかった冷凍大根おろしが提供できることが理解できる。
なお、上記各サンプル(テスト品、対照品1乃至3)を凍結することなく10℃の冷蔵庫に5日間保管した後、取り出し、上記試験と同じテストをしてみたが、表1とほぼ同じ結果が得られたので、サイクロデキストリンの添加は冷凍品ばかりでなく冷蔵品にも有効であることがわかった。

さらに対照品(1)として、直鎖オリゴ糖(通常のデキストリン、商品名:フジオリゴG67、日本食品化工株式会社製)をそれぞれ0.1%、0.2%、0.5%、1.0%、2.0%となるように添加した大根おろしを実施例1と同じ方法で冷凍品とした。また対照品(2)としてテスト品(2)と同じ要領で一度冷凍した大根おろしを解凍し、直鎖オリゴ糖(通常のデキストリン、商品名:フジオリゴG67、日本食品化工株式会社製)をそれぞれ0.1%、0.2%、0.5%、1.0%、2.0%となるように添加した大根おろしを実施例2と同じ方法で冷凍品とした。
これらの各サンプルを−25℃の冷蔵庫で凍結し、翌日から−10℃の冷蔵庫に30日、3ヶ月及び6ヶ月保管後に取り出し、解凍したのち開封して試験例1と同じ方法で色調を観察したところ表2の結果が得られた。
