請求項1のアイスクリーム類用乳化剤は、ポリオキシエチレンソルビタン脂肪酸エステルからなるアイスクリーム類用乳化剤であって、上記の課題を解決するために、ポリオキシエチレンソルビタン脂肪酸エステルの構成脂肪酸のうち飽和脂肪酸が70%(重量%、以下同様)以上であるか、又は不飽和脂肪酸が50%以上であり、かつ、オレイン酸、ステアリン酸、ラウリン酸のうちのいずれか1種が主たる構成脂肪酸であるものとする。

【発明の実施の形態】
本発明で用いるポリオキシエチレンソルビタン脂肪酸エステルは、上記の通り、ポリオキシエチレンソルビタン脂肪酸エステルの構成脂肪酸のうち飽和脂肪酸が70重量%以上であるか、又は不飽和脂肪酸が50重量%以上であり、かつ、オレイン酸、ステアリン酸、ラウリン酸のうちのいずれか1種が主たる構成脂肪酸であるものであり、ここで「主たる構成脂肪酸である」とは、構成脂肪酸のうちで、オレイン酸、ステアリン酸、ラウリン酸のうちのいずれかが最大量を占めることをいう。上記の要件を満たす限り、これら3種以外の他の構成脂肪酸が含まれる場合を排除するものではない。
