表1に示す組成にて、実施例1と同様にして調理栗を得た。また、実施例4ではスクラロース、実施例5ではトレハロースを水に添加して、焼成剥き栗表面に該水分を施与した後、実施例1と同条件でレトルト加熱処理し、調理栗を得た。また、実施例2、3、6、7は水分施与量を変化させて、実施例1と同様にして調理栗を得た。

以上のように、実施例の調理栗は、色、風味共に良好で、そのまま喫食しても焼き栗と蒸し栗の風味を合わせ持った香ばしい、栗本来のおいしさを持つ調理栗であり、レトルト殺菌後も色調が保持されていた。また、異味異臭も感じられなかった。また、手でそのまま喫食しても、手がベタベタしたり、汚れたりすることはなかった。また、栗本来の形状を保持した調理栗であった。
これに対し、比較例のものは、渋味が感じられ、色も黒みをおびており、食感ももそもそしていた。また、手で喫食する際、手に澱粉質が付着し、調理栗として好ましくなかった。また、栗の形状は、割れていたり、手にとった時にもろい硬さもあったりするものが含まれていた。
