症の予防に役立つだけでなく、栄養摂取上からも益する
ところが大きい。このため低コレステロール家禽卵の生
産や、その他コレステロール低減物質の研究が行われ、
多くの発明がなされてきた。例えば、特開昭54-29772号
公報には「ML-236A、ML-236Bあるいはこれらの誘導体を
投与して家禽の低コレステロール卵を生産する方法」
が、特開昭63-269967号公報には「低コレステロール含
量でありかつ人体内コレステロールの低減化を図ること
のできる漬け込み魚卵を製造する方法」が、特再平05-8
25702号公報および特再平10-820150号公報には「酵素処
理を行ってコレステロール低減化物質を製造する方法」
が、そして特開平11-332518号公報には「食用油脂抽出
法を改善した低コレステロール卵黄の製造方法」が記載
されている。

用してもよい。また培養方法は、固体培養法でも液体培
養法でも採用することができ、培養条件も紅麹菌が繁殖
きる条件であれば如何なる条件でも可能である。紅麹の
卵用鶏への与え方は、固体培養で製造した紅麹、紅麹の
麹菌を熱滅菌したもの、乾燥粉砕した粉体、紅麹を常法
により抽出したエキス、さらには液体培養で製造した紅
麹はスプレードライ法等により粉末化したものを飼料に
添加することが挙げられるが、その他にも、液体培養
液、或いは抽出エキス、粉末等を直接水に添加して飲み
水として与えてもよい。紅麹を添加する飼料は鶏に与え
ることが可能であるものなら如何なるものでもよく、例
えば、市販の汎用される飼料に適宜添加する。また、か
かる飼料への紅麹の添加量は飼料重量に対し、0.1〜10
%の範囲が特に好ましい。即ち、0.1%未満であれば卵
黄コレステールの低下が少なく、また10%を越えると、
飼料としての栄養バランスが崩れるために、卵重量、採
