Abstract

PROBLEM TO BE SOLVED: To provide a cooker in which vapor is effectively generated, and it is not allowed to escape to the outside. SOLUTION: The cooker includes an evaporation vessel 16 which is formed of a material of low dielectric constant, and placed removably at an outlet 15 of a wave guide 14 for guiding a microwave into the oven chamber 11. In the cooker there are further included a fan 17 for circulating air in the chamber 11, and a heater 18a for heating the wall of the oven chamber 11. Water in the vessel 16 is evaporated to generate water vapor by dielectric heating by a microwave, the water vapor is heated by the heater 18a into superheated steam, and the rotation shaft of an agitation fan of the fan 17 is electromagnetically coupled. Accordingly, the steam does not escape at the rotation shaft to the outside of the chamber, and the steam can be used without waste.

2. Description of the Related Art Japanese Unexamined Patent Publication No. Hei 8-49854 discloses a heating cooker utilizing superheated steam. As shown in FIG. 7, an evaporating section 2 for evaporating water is provided at the bottom of an oven chamber 1, and the evaporating section 2 is heated by an induction heating coil 3 to generate saturated steam, and infrared rays are emitted from the oven chamber 1. The saturated steam is further heated by the infrared ray generating means 4 radiating into the inside to produce superheated steam, and by using the superheated steam as a heat medium, the heat transfer rate from air to food is increased and the cooking time can be reduced. It is.

[0003] Japanese Patent Application Laid-Open No. 8-128649 has disclosed a cooking device for heating food by steam and radio waves. As shown in FIG. 8, this is a steam container 8 with a lid detachably provided between the high-frequency generating means 6 and the food 7 in the heating chamber 5 by the high-frequency generating means 6 for irradiating the heating chamber 5 with radio waves. The water inside is heated by radio waves, the generated steam is released into the heating chamber 5 from the opening 9, and the food is wrapped in a high-humidity atmosphere. The radio wave heating and the steam heating prevent the moisture of the food from evaporating. The moist finish is heated.

However, in the above-mentioned conventional configuration, the heating cooker shown in FIG. 7 has an induction heating coil 3 for heating the bottom of the oven storage 1 and an infrared generating means 4 for heating the inside of the oven storage 1. In addition, it becomes necessary and expensive, and when the water evaporates, mineral components such as calcium dissolved in the water remain white at the bottom of the oven storage 1 as scale, and cleaning of the oven storage 1 is difficult. Also,
The cooking device shown in FIG. 8 is easy to clean up because the steam container 8 can be removed. However, since steam generated at 100 ° C. is not reheated, cooking with superheated steam cannot be performed, and steam condenses on the oven wall. As a result, there is a problem in that dew condensation water accumulates in the refrigerator, and light steam escapes from the upper fan rotation shaft gap.

[Example] Superheated steam cooking is a method of cooking food to be cooked by filling superheated steam, which is water vapor exceeding 100 ° C., in an oven, and condensed water is generated on the food surface when the food temperature is low. The food surface can be rapidly heated by the latent heat of water vapor, and the condensed water can be cooked without drying while giving moisture to the food. In addition, since steam has a higher specific heat than air, heat transfer to food is better with steam. Further, with superheated steam at a so-called reversal point of about 180 ° C. or more, the food surface can be dried faster than air.

With this configuration, a cooking device using superheated steam can be configured at low cost without adding a very large configuration to a heating cooker in which a microwave oven and an oven function are widely integrated under the name of a microwave oven in general households. can do. First, the walls of the oven chamber 11 and the air in the chamber are preheated by the heaters 18a, 18b, 18c and the blower 17. If the wall of the oven chamber 11 is kept at 100 ° C. or higher, water is always present as a gas when the temperature exceeds 100 ° C. at 1 atm. Therefore, even if steam is generated in the chamber, dew forms on the wall of the oven chamber 11. Can be prevented, and there is no need to install a dew-water receiver.

When the inside of the refrigerator is preheated to the target cooking temperature, the food to be cooked 12 is put in, and the water in the evaporation container 16 is boiled by the high frequency generating means 13 to generate steam. Since the evaporation container 16 is formed of a low dielectric constant material, the evaporation container 1
6 itself is not heated by the microwave, and only the water inside is heated by the microwave. Therefore, even if the heating efficiency is good and the amount of water is reduced, there is no fear that the evaporating container 16 will be over-baked due to the emptying of the evaporation container 16. By installing the evaporation container 16 at the exit 15 of the waveguide in the oven chamber 11, the food 12 to be cooked and the evaporation container 16
Despite the fact that both waters are in the oven chamber 11,
Only the water in the evaporation container 16 can be selectively microwave-heated. By making the evaporating container 16 detachable, cleaning is easy even if mineral components such as calcium dissolved in water remain in the evaporating container 16 as scale.

When water is turned into steam, the volume increases by about 1700 times. The oven chamber 11 itself has a structure in which a gap is eliminated so that water vapor does not leak, and a packing (not shown) is provided on the door to close the gap. In order to prevent leakage of water vapor from the rotating shaft of the blower 17, the blower 17 and a driving motor 22 provided outside the refrigerator are coupled by a pair of magnets 21 provided on both sides to eliminate a gap between the rotating shafts.

Here, by providing the air vent hole 19 below the oven chamber 11, water vapor having a specific gravity lower than that of the air is accumulated above the oven chamber 11, and the air vent hole 1 below the oven chamber 11 is provided.
From 9 the air is expelled. The ejection of steam from the air vent hole 19 indicates that the inside of the oven chamber 11 has been filled with steam. A temperature sensor 20 is provided in the air vent hole 19, and when the temperature rises due to the passage of water vapor through the air vent hole 19, the microwave output is reduced to reduce the amount of generated steam, and the steam ejected to the outside of the oven chamber 11. Reduce volume and prevent wasted power and water use.

(Embodiment 3) FIG. 4 is a diagram showing the configuration of a heating cooking apparatus according to Embodiment 3 of the present invention. A plurality of small projections 25 were formed inside the steam container 16. Since the small projections 25 form nuclei at the time of boiling and air bubbles are easily generated, when the water inside is heated by the microwave, the bumping phenomenon that occurs immediately before the boiling can be prevented. Thereby, steam can be generated safely and effectively without the water inside spilling out.

Since the nucleus at the time of boiling is formed by the foamed portion of the foamed sintered ceramic material 26 and bubbles are easily formed,
When the water inside is heated by microwaves, bumping phenomenon that occurs just before boiling can be prevented. Thereby, steam can be generated safely and effectively without the water inside spilling out. The handle 27 is made of the same material and is easy to manufacture, and since it is a low dielectric material, it is not heated by microwaves, so it is not heated and easy to handle.
