2. Description of the Related Art Foods called so-called health foods and functional foods are different from ordinary foods, and are formed into tablets, granules, capsules, etc. for convenience of intake control, distribution and storage. Often. These foods are often coated for the purpose of preserving the useful components in a stable state, hiding off-flavors and off-flavors, facilitating handling at the time of ingestion, and the like.

[0003] When trying to coat food,
It is known to use water-soluble polymer substances such as natural gums and agar, polysaccharides and water-insoluble polymer substances such as shellac and zein, but in this case, cracks in the coating layer,
In order to prevent embrittlement, the addition of a plasticizer is indispensable, and glycerin, castor oil and the like have been conventionally used as a suitable plasticizer.

When coating with a water-insoluble polymer, for example, shellac, zein or the like, a large amount of organic solvent is required, which is not preferable in consideration of the safety of workers and environmental health. Also, in the case of coating with a water-soluble polymer substance such as natural gums, agar, pullulan, gelatin, etc., the spray speed must be set low due to the high adhesiveness, and the coating workability is low, and the plasticizer is used. There are undesired problems such as an increase in moisture permeability due to the effect of the addition, a coloring of the base, and a decrease in storage stability.

[0005] A coating agent using soybean-derived hemicellulose has been proposed in Japanese Patent Application Laid-Open No. 9-70285 and the like. In the case where glycerin exemplified therein is used as a plasticizer, a coating agent during coating operation is required. The occurrence of stickiness and the adhesion between coatings resulting therefrom, peeling of the film, or increasing the hygroscopicity of the coating,
Further, discoloration of the coated object, deterioration of the quality of the coated object, and the like are feared.

The composition is prepared by dissolving or dispersing sucrose fatty acid ester alone or a mixture of sucrose fatty acid ester and one or both of sorbitol and maltodextrin in purified water, and adding soybean-derived hemicellulose thereto. Or a method in which the hemicellulose to be added is dispersed in ethanol in advance and mixed and dissolved. However, as long as the method can be adjusted so that hemicellulose, sucrose fatty acid ester, sorbitol, maltodextrin, water and, if necessary, ethanol are uniformly contained in the composition at a predetermined ratio, a method other than the above method is used. Preparation methods can also be employed.

(Coating) Using a coating apparatus similar to that used in Example 1, 1000 g of a triangular tablet made of lactose and crystalline cellulose (“Avicel-101” manufactured by Asahi Kasei Corporation) was spray-coated with 600 g of the above coating solution. During the coating operation, no noticeable adhesion of the tablets was observed, but the obtained tablets had a rough surface. When the coating operation was performed by lowering the spray speed so as not to cause surface roughness, tablets having a smooth coated surface were obtained. In addition, as a result of an abrasion test of the coated tablet, the coating was good without any damage to the clothing.

As is clear from the above Examples and Comparative Examples, the use of the composition of the present invention solves the problems of the conventionally used water-soluble coating compositions for foods, and A coating having good film formability and strength can be obtained without using a plasticizer. Further, it is possible to avoid obstacles such as adhesion of tablets or granules during the coating operation and peeling of the coating film, and to obtain a film having physical properties that are sufficiently satisfactory in all of film forming property, workability, and film performance. it can.
