た。2. Description of the Related Art Conventionally, sunflower has been used in the food field as edible sunflower oil by squeezing edible sunflower seeds. The only other usage in the food field was that the defatted material was used as livestock feed. By the way, sunflower oil contains a large amount of oleic acid, vitamins, minerals and other components that have the effect of relaxing saturated fatty acids in the body, and also has a unique flavor, making it suitable for use in foods other than sunflower oil. Was wanted.

It was found that the range of particle size is easy to uniformly mix with wheat flour, and that the oil content contained in the sunflower powder grains plays a so-called binder function and makes the noodles difficult to cut when it is made into noodles, and the texture is also good. The present invention has been completed. That is, the sunflower powder-containing food of the present invention is characterized in that the grain powder contains sunflower powder having an average particle diameter of 0.01 to 0.1 mm obtained by crushing sunflower seeds. Here, the sunflower seeds may be heat-treated. Further, the grain flour may be wheat flour. In the above, the content of the sunflower powder is 10
A range of 10 to 20 parts by weight is preferable with respect to 0 parts by weight.

Examples of sunflowers include varieties whose seeds are suitable for food, such as Russian sunflowers and edible sunflowers which have relatively large seeds. This kind of epidermis (shell) is removed and crushed by a mill or the like to obtain sunflower powder particles having an average particle size of 0.01 to 0.1 mm. Since sunflower seeds have a strong oil content, if they are made too small, the oil will ooze out, and when mixed with grain flour such as wheat flour, it becomes a paste and it is difficult to mix them uniformly in the grain flour. On the other hand, if the grains are too large, for example, the noodles are likely to break when they are made into noodles, which is not preferable. A little grain remains, you can see the grain visually,
It has a grainy texture, specifically an average particle size of 0.0
The range of 1 to 0.1 mm is preferable.

ましい。[0006] Here, the sunflower seeds may be used as they are, but it is preferable to roast the seeds once or to fried them in a vegetable oil such as sunflower oil because the flavor is further enhanced. Sunflower powder, for example, has a flavor intermediate between peanuts and cashew nuts. In the above,
If wheat flour is used as the grain flour, it becomes noodles and pasta like udon. Here, the powdery sunflower contains an oil component, and when it is used as noodles or pasta, it also functions as a so-called binder. In this case, the content of sunflower grains is preferably 5 to 30 parts by weight, more preferably 10 to 20 parts by weight, based on 100 parts by weight of the grain flour. If the amount is less than 5 parts by weight, the flavor of sunflower cannot be sufficiently imparted, and if the amount exceeds 30 parts by weight, the amount of granular components in the noodles becomes large and the noodles tend to break easily and the fragrance becomes too strong. . It is more preferably in the range of 10 to 20 parts by weight, which has an appropriate flavor and makes noodles difficult to cut.

Was prepared, the epidermis (shell) was removed from this seed, and the mixture was ground with a mill to obtain 1 kg of sunflower powder particles having an average particle diameter of 0.05 mmφ. To 10 kg of wheat flour, 1 kg of sunflower powder particles obtained above and salt water were added and uniformly mixed with a mixer to prepare a dough for sunflower noodles in which seed particles were slightly visible. When this was cut into a predetermined length and blanched and eaten, it was a sunflower noodle having a sunflower flavor.

である。As described above, according to the sunflower powder-containing food of the present invention, sunflower powder is uniformly mixed,
A food having a sunflower flavor can be obtained, and the sunflower seeds can be effectively used in the food field. When the heat-treated one is used as the sunflower seed, a food having an even more enhanced flavor can be obtained. If wheat flour is used as the grain flour, it is suitable as noodles and pasta containing sunflower grain.
