DESCRIZIONE DESCRIPTION
“PROCEDIMENTO ED APPARECCHIATURA PER LA â € œPROCESS AND EQUIPMENT FOR THE
PANIFICAZIONE†BAKERY⠀
The present invention relates to a new process and the relative equipment for both artisanal bread-making, for productions in significant quantities, and industrial.
The bread-making process is known to consist essentially of three distinct phases: the dough which must be homogeneous, without lumps and reduce flour, water, yeast and salt to a homogeneous mass; leavening which generally takes place at temperatures between 22 and 30 ° C and cooking, usually at temperatures between 180 and 250 ° C. During the mixing phase the vegetable proteins in contact with water form a colloidal substance called gluten, in this phase the soluble compounds (sugars, salt) dissolve, while the insoluble ones, such as starch and gluten increase in volume . During the leavening phase the starch is attacked by some enzymes naturally present in the flour of most cereals, it breaks down into simpler sugars which are attacked by the yeast with the production of carbon dioxide. The dough swells due to the presence of the gas developed from the inside, while some secondary fermentation processes produce acids (lactic and acetic acid) which make the bread more digestible.
Finally, during the cooking phase the carbon dioxide escapes from the bread, leaving it porous (alveolation, or the holes that appear in the crumb), the sugars on the surface caramelize giving the golden color typical of the crust and the water partly evaporates giving consistency to bread.
An apparatus or plant on an industrial level for baking is therefore essentially composed, in operational succession, of the following devices: kneader, divider, moulder, leavening compartment and oven, whose respective functions are evident.
In baking, yeast can be of three types: natural, industrial and chemical. The first is made up of a mixture of water and flour prepared the day before and left to rest: at the action of the air, the bacteria make the dough acid (called sourdough or sourdough). This is added to the dough in the baking process and gives rise to leavening.
Industrial yeast, on the other hand, is generally brewer's yeast. It is a culture of living microorganisms, in particular spores of very small fungi (from the Latin name Saccharomyces cerevisiae) capable of transforming the starch present in the flour by developing carbon dioxide in the process. This gas "inflates" the dough which then becomes soft. The name brewer's yeast derives from the custom in the past of using the residue of the beer fermentation process as yeast. The name has remained even if today we prefer to use the product of sugar beet processing.
Chemical yeast, on the other hand, is the generic name of some substances capable of releasing carbon dioxide thanks to the action of an acid (eg cream of tartar) and heat. Unlike natural leavening, chemical leavening is instantaneous and requires no rest time for the dough.
Currently, both in artisanal production, but mostly in industrial production, in 90% of cases brewer's yeast is used as yeast or, at an industrial level, also chemical yeast.
This choice was determined by the lower cost of these yeasts, compared to natural yeast, as well as for its preparation, due to the longer rising times of the dough.
Literature and experts on the subject, however, have long been urging the return to the use, even at an industrial level, of natural yeast, having found that the bread obtained with this yeast is softer, lighter, more fragrant, tastier and more digestible. as it is better assimilated by the body, as well as having a longer shelf life of the physical and organoleptic characteristics, a characteristic of extreme interest in particular for industrial productions that require long-life bread.
These results are obtained because natural yeast, unlike brewer's or chemical yeast, transforms the substances that are part of the flour more completely and contains bacteria that transform the dough into more noble substances, generating a leavening greater development of the dough which favors, during cooking, a greater alveolation and, therefore, greater softness, lightness and, consequently, digestibility. On the other hand, a disadvantage of using natural yeast is that the dough is more hygroscopic than that obtained using other types of yeast and the higher water content can create problems as the residual moisture of the bread destined for! trade, after cooking, has limits set by law according to various pieces of bread. In fact, according to Italian law, the water content of bread when completely cooked, whatever the type of flour used in its production, for example, must not exceed 29%, for pieces of 70 grams, and 40% for pieces. equal to or greater than a kilogram.
The purpose of the present invention is therefore to provide a process and the relative equipment for bread making which allow, preferably but not exclusively, using natural yeast for the dough, to obtain a softer bread in industrial production, as it has an accentuated alveolation, lighter, more fragrant and tastier, with a longer shelf life and with a residual level of humidity in compliance with legal requirements.
Another purpose is to create a process which, as well as in the field of industrial production, is also applicable, with the same advantageous results, in an artisanal production of significant quantities. These objects are fully achieved by the process and apparatus for baking according to the present invention, which is characterized by the contents of the claims reported below. The technical characteristics of the invention, according to the aforementioned purposes, are clearly verifiable from the content of the claims reported below, and the advantages thereof will become more evident from the detailed description that follows, made with reference to the attached drawing (figure 1), which represents , in schematic form, a possible purely exemplary and non-limiting embodiment.
In the bread-making processes in use, one begins to prepare a reshuffle essentially of flour, water, yeast and salt, which must be without lumps and reduce to a homogeneous mass; this operation is carried out with a machine called a mixer. Subsequently the dough is "broken", possibly with a machine called divider, into single pieces of dough 1 corresponding to the size of the desired bread. In some cases it is possible to intervene, possibly with a forming machine, to give the pieces of dough 1 a particular shape according to the desired shape of the bread (loaf, braid, whisk, cream puff, etc.). At this point, the leavening phase of the dough pieces 1 is carried out, which normally takes place in static or tunnel leavening cells 2 with continuous transport means, at ambient or controlled temperature for the necessary programmed times.
Normally for leavening the pieces of dough 1 are arranged in parallel rows, spaced from each other, to allow them to grow without interfering with the adjacent pieces of dough, on moving racks or belts or in trays that collect several pieces . During leavening, the pieces double or triple in volume due to the development of carbon dioxide which thus forms the characteristic bubbles of the spongy structure of the crumb. Being a gas, carbon dioxide develops upwards, so experimentally it has been found that by forcing the leavening and volume growth of the piece of dough 1 only upwards at the end of the leavening process, the spongy structure it is more developed and homogeneous.
According to the invention, therefore, the bread-making process foresees that, after the dividing phase, each piece of dough 1 is introduced into a respective leavening pan 3 suitable to favor the development of leavening and the increase of upward volume of the piece. A single leavening pan 3 for each piece of dough 1.
The shape and dimensions of the tray 3 can be any in relation to the size and type of bread desired, but, for example, to allow the volume of the piece to increase upwards, the base width of the tray 3 may be less than the His Majesty.
After the leavening phase, the leavened pieces 10 are obtained and these, according to the invention, are transferred to respective other, distinct baking trays or molds 4 suitable for preserving the development and volume dimensions of the leavened piece 10 and its further growth during cooking.
Therefore, for each piece there is a different and distinct basin 3 from a baking pan or baking mold 4.
Said trays or molds 3 and 4 are preferably different from each other in shape and / or dimensions and can have shapes and shapes suitable for giving the bread, at the end of cooking, a certain shape.
According to the invention, each leavened piece 10 is transferred into the respective baking pan or baking mold 4 upside down with respect to the position it had in the leavening phase as illustrated in the attached figure 1.
This operation of overturning or overturning the leavened piece 10 before it enters an oven 5 is necessary to expose the lower area of the leavened piece 10 to the air which, in the leavening tray 3, has grown less and less developed, so that, in the time elapsing between the transfer from the levitation pan 3 into the baking pan or baking mold 4 and in the time it enters the oven 5 before reaching the cooking temperature, the leavening of this area can continue and improve relative sponginess.
Another advantage resulting from the overturning operation of the leavened piece 10 is to favor the loss of humidity (water of the dough) in the part of the piece that was not exposed to the air during the leavening phase.
Advantageously, each respective baking pan or baking mold 4, upon receiving the leavened piece 10, before being inserted into the oven 5, is hot and preferably has a temperature between 120 and 180 ° C.
This solution allows, before entering the oven 5, to complete the leavening of the leavened piece 10 and to start its cooking, at least on the parts adhering to the pan or mold 4, favoring the further significant reduction of the humidity present. These effects, in particular the loss of humidity, can, in addition, be increased by providing for the presence of holes or openings on the bottom surface of said baking pan or baking mold 4 (not shown in Figure 1).
In particular, said baking trays or baking mold 4 can be without the bottom surface by placing the leavened piece 10 in direct contact with the oven surface or with a net or belt 7 for movement along the oven 5. This procedure is particularly suitable to its industrial application with a continuous plant as schematically illustrated in the attached figure 1, limited to the leavening cell 2 and the oven 5. dough in pieces of dough 1 (known equipment and not represented in figure 1), according to the desired size, a leavening cell 2, and a baking oven 5 which, in continuous industrial processes, is usually a tunnel.
In this case, each piece of dough 1 released by the divider is placed in a respective leavening pan 3 having a shape and / or dimensions suitable to favor the development of leavening and the increase in volume of the piece upwards. and each leavened piece 10 is arranged in another, distinct, respective baking pan or baking mold 4, having a shape and / or dimensions suitable to preserve the development and volume dimensions of the leavened piece 10 and its further growth during cooking. , upside down with respect to the position it had in said respective leavening pan 3.
In practice, said leavening trays 3 are arranged adjacent in parallel continuous rows fixed on a rack or belt 6 for their movement along the leavening cell 2 for the programmed time necessary for the correct leavening of the pieces and said baking trays or molds. 4 are likewise arranged adjacent in parallel continuous rows fixed on a net or belt 7 for their movement along the oven 5 for the programmed cooking time. This solution allows greater compaction, compared to traditional techniques, of the pieces of dough 1, both in the leavening and baking phases, also allowing the advantage of a greater numerical productivity of loaves in the unit of time.
In the schematic representation of the attached figure 1 it can be seen that the belt or net 7 carrying the baking trays or molds 4, moves them back and forth inside the oven 5, in this way the empty baking trays or molds 14 come out from the oven 5, which operates at a maximum temperature of the order of 220-250 ° C, still hot and receive the leavened piece 10 when their temperature is preferably between 120 and 180 ° C.
According to the invention, means 8 are provided for transferring said leavened pieces 10 from the leavening trays 3 to the corresponding baking trays or molds 4. Said means 8 for transferring the leavened pieces 10 are preferably constituted by tilting devices 9 for the overturning of said trays 3, in correspondence with respective sub-baking trays or baking molds 4, causing the respective leavened pieces 10 to fall into the latter in an overturned position.
Advantageously, means (not shown) are associated with said means 8 for transferring said leavened pieces 10 to impart vibrations to the leavening trays 3 to favor the rapid and complete detachment and fall of the leavened pieces 10.
Naturalmente, come noto negli impianti industriali attuali, à ̈ altresì previsto un sistema automatico di controllo e gestione sincrona dell'impianto come descritto. Of course, as is known in current industrial plants, an automatic system for synchronous control and management of the plant is also provided as described.
According to the described procedure and apparatus, at the exit of the oven 5 a softer bread is obtained, as it has a marked alveolation, lighter, more fragrant and tastier, with a longer shelf life than packaged breads produced with the known processes and means, with any type of yeast used. In particular, said advantageous results will be further enhanced by using a natural yeast.
The process and the equipment described have a direct field of application in industrial bakery plants, but, as mentioned, they can also be applied in the artisan field for the production of large quantities of bread.
