I l presente trovato concerne una teglia per la cottura del pan di Spagna in forni a convezione, avente le caratteristiche enunciate nel preambolo della rivendicazione principale n. 1 . Nell’ambito tecnico della cottura di prodotti per pasticceria, ed in particolare per la cottura del pan di Spagna, sono tradizionalmente impiegati forni specifici, anche noti con il termine inglese “deck oven”. In tali forni il riscaldamento della camera di cottura, che è molto più bassa dei forni a convezione, viene normalmente ottenuto con elementi riscaldanti posti sia inferiormente che superiormente al prodotto da cuocere ed il calore viene trasmesso in modo prevalentemente statico all’impasto. Tale modalità tende ad assicurare la trasmissione di calore più idonea alla cottura della parte superiore ed inferiore dell’impasto, senza cuocere troppo le sue pareti laterali, determinando omogeneità ed uniformità di cottura del prodotto. Con riferimento iniziale alle figure 1 -4, con 1 è complessivamente indicato un primo esempio di teglia particolarmente concepita per la cottura del pan di Spagna in forni a convezione, realizzata secondo il trovato. Questi forni sono contraddistinti per la presenza di una ventilazione forzata deN’aria generata all'interno della camera di cottura, in cui la trasmissione di calore al prodotto da cuocere avviene principalmente per convezione, con scambio termico tra l’aria circolata nella camera e la superficie del prodotto da cuocere e dalla possibilità di controllare l’umidità al loro interno. Quest’ultima funzionalità è importante perché il pan di Spagna cuoce a circa 170°C ma durante la cottura è necessario estrarre dal forno l’umidità che fuoriesce dal prodotto. Con riferimento alla figura 3, in cui è mostrata la teglia 1 contenente l’impasto in essa versato preliminarmente alla cottura, si fa notare come l’altezza della teglia sia scelta per distanziare in modo opportuno la superficie superiore dell’impasto, indicata con 5a, dal bordo libero della teglia, al fine di controllare (limitandone gli effetti) l’influenza della ventilazione, presente all’esterno della teglia, sulla superficie 5a, impedendo una cottura eccessivamente rapida dello strato superiore dell’impasto in corrispondenza di tale superficie. Una cottura eccessivamente rapida di tale strato contrasterebbe infatti la libera espansione dell’impasto durante la cottura non raggiungendo gli spessori finali desiderati ed idonei a rendere il prodotto adeguatamente soffice e omogeneamente spumoso, come desiderato. Una possibile scelta può essere quella di prevedere una altezza di impasto all’incirca pari ad 1⁄4 dell’altezza di teglia. A fine cottura, come mostrato in figura 4, l’altezza dello strato di prodotto può estendersi approssimativamente per circa 1⁄2 dell’altezza della teglia. Ciò permette di ridurre pertanto l’ingombro verticale della teglia, potendo così limitare la distanza tra la superficie superiore dell’impasto ed il bordo superiore della teglia. Con tale riduzione di ingombro è possibile prevedere all’interno della camera la disposizione in reciproca sovrapposizione di corrispondenti teglie di cottura, aumentando così la quantità di prodotto che può essere cotta nel forno. La conformazione a più ripiani sovrapposti che contraddistingue tipicamente i forni a convezione può quindi essere sfruttata per la disposizione delle teglie secondo il trovato, preservando la qualità del prodotto finale. II trovato raggiunge così gli scopi proposti conseguendo i vantaggi enunciati sopra rispetto alle soluzioni note.
