Premessa: Premise:
La macchina e'stata progettata con lo scopo di realizzare un processo tecnologico in continuo in grado di garantire la massima igienicita' ed al contempo di conservare intatte le proprieta'originarie del latte,cosa non consentita dalla tecnologia attua le. Infatti la nebulizzazione, generando goccioline finissime annulla quasi completamente il gradiente termico tra la parte acquosa e la parte solida in formazione , mentre il contatto diretto tra la corrente di aria prima compressa e poi espansa, per farla raggiungere una temperatura fino a -100?, genera istantaneamente dei soffici fiocchi di neve(non ghiaccio), che non alterano minimamente le struttura molecolare, preservando quindi tutte le proprieta'esistenti al momento del congelamento a condizione che non venga mai interrotta la catena del freddo (come naturalmente accade per tutti i prodotti surgelati). The machine has been designed with the aim of realizing a continuous technological process able to guarantee maximum hygiene and at the same time to keep intact the original properties of the milk, which is not allowed by the current technology. In fact, the nebulization, generating very fine droplets almost completely cancels the thermal gradient between the aqueous part and the solid part being formed, while the direct contact between the air stream first compressed and then expanded, to make it reach a temperature up to -100 ?, instantly generates soft snowflakes (not ice), which do not alter the molecular structure in any way, thus preserving all the properties existing at the time of freezing provided that the cold chain is never interrupted (as naturally happens for all products frozen foods).

Descrizione del processo come riportato dalla Tavola A del disegno allegato: Description of the process as reported in Table A of the attached drawing:
