Una delle esigenze più sentite, oltre ovviamente alla qualità del cibo preparato, à ̈ quella di fornire ai degenti dei menù che soddisfino il più possibile i loro gusti e le loro preferenze, e allo stesso tempo che siano compatibili con i regimi dietetici indicati dai sanitari in funzione del tipo di patologia a cui sono soggetti.
