La presente invenzione riguarda un processo per il trattamento e la valorizzazione di siero di latte. Più in particolare la presente invenzione riguarda un processo per il trattamento e la valorizzazione di siero di latte tramite un impianto integrato che produce, da una parte, un concentrato proteico in forma liquida e destinato all’alimentazione zootecnica e, dall’altra, energia termica ed elettrica mediante produzione di biogas. Il siero di latte, principale sottoprodotto dell’industria casearia, rappresenta uno dei maggiori problemi del ciclo produttivo. Esso, infatti, ha un elevato carico di inquinante organico (COD pari a circa 70.000 ppm/litro) ed, a parte una piccola quota destinata alla produzione di ricotta, à ̈ normalmente considerato uno scarto da destinare all'alimentazione animale o da inviare ad un impianto di trattamento aerobico dei rifiuti. L’elevata percentuale di lattosio e la tendenza ad acidificare per la degradazione del lattosio in acido lattico ad opera dei lattobacilli costituiscono un ulteriore problema in fase di conservazione, imponendo tempi di mantenimento il più possibile contenuti. L’utilizzo zootecnico del siero, pur essendo tradizionalmente diffuso in particolare per l’allevamento suino, genera a sua volta vari problemi soprattutto a causa dell’elevata diluizione e non à ̈ da considerarsi come una soluzione ottimale. Il trattamento aerobico per lo smaltimento risulta invece dispendioso dal punto di vista energetico ed impiantistico, in quanto richiede superfici estese e rilevante impiego di energia. Tra le altre possibili opzioni per l’utilizzo del siero, negli ultimi anni si à ̈ diffusa la possibilità di utilizzarlo come fonte proteica per l’estrazione di siero-proteine in polvere, da impiegare come ingrediente per la produzione di alimenti o integratori ad uso sia zootecnico che umano. Questa soluzione non risolve però il problema dello smaltimento, in quanto il refluo risultante dal processo di estrazione delle proteine à ̈ comunque molto voluminoso e ricco di lattosio e grassi, quindi con elevato carico inquinante. L’estrazione delle siero-proteine in forma secca comporta inoltre costi di investimento ed energetici rilevanti, con ritorni non sempre certi. La digestione anaerobica à ̈ un processo biologico complesso per mezzo del quale, in assenza di ossigeno, la sostanza organica viene trasformata in biogas, una miscela costituita principalmente da metano ed anidride carbonica. Nel caso del siero il processo di digestione anaerobica, in condizioni ottimali, permette di ottenere circa 23 litri di metano da ogni litro di siero grezzo utilizzato, ottenendo anche un abbattimento del COD attorno al 90%: a fine ciclo i fanghi risultanti possono essere impiegati a scopo agricolo. L’utilizzo del siero di latte a scopi energetici presenta però alcuni ostacoli, che ne hanno sino ad ora bloccato la diffusione a livello pratico se non in quote limitate insieme ad altri substrati: (1) il rendimento energetico del siero à ̈ minore rispetto a quello di altre sostanze facilmente reperibili; (2) l’elevato livello di diluizione comporta costi di trasporto e stoccaggio non trascurabili; (3) il livello di acidità del siero e la presenza di varie sostanze non utili al processo aerobico possono ostacolare il processo fermentativo; (4) l’esistenza di un valore economico, seppur teorico e discontinuo nel tempo, rende il siero di latte meno interessante di altri reflui come substrato energetico. Tale processo prevede una fase di fermentazione dei sottoprodotti di cui sopra per degradazione anaerobica con produzione di biogas, ed una successiva fase di utilizzo del biogas per la produzione di energia elettrica e/o termica.
