DESCRIZIONE DESCRIPTION
annessa a domanda di brevetto per INVENZIONE INDUSTRIALE dal titolo: attached to a patent application for INDUSTRIAL INVENTION entitled:
PROCEDIMENTO PER CONFEZIONARE UN PRODOT-TO ALIMENTARE IN CONDIZIONE LIQUIDA E CONFE-ZIONE OTTENUTA CON TALE PROCEDIMENTO. PROCEDURE FOR PACKAGING A FOOD PRODUCT IN LIQUID CONDITION AND PACKAGING OBTAINED WITH THIS PROCEDURE.
The present invention relates to a process for manufacturing a package of a liquid or semi-liquid food product, such as a melted cheese packaged in a liquid condition, yogurt, cream and the like.
Currently, for the realization of a package for a melted cheese and the like, a casing made of heat-sealable plastic material is used, preferably starting from a first and a second opposing shells in internally peelable material, associated, along respective circumferential union bands, in such a way as to define a chamber for housing the food product in which the product is introduced in a melted liquid condition through an opening provided in the casing and opening inside said chamber for housing the product and towards the outside. Following the introduction of the melted cheese, the casing is closed by welding carried out in correspondence with said product entry opening.
According to the known art, during the aforementioned wrapping filling operations at least one air bubble is trapped inside the package, which, due to the movements and manipulations to which the package is subjected, migrates and moves within said chamber housing the product, before the cheese is completely solidified and provides the final solid product with a "pitted", non-uniform surface, which makes, when the wrapper is opened and the product extracted for use, the product the same decidedly unwelcome to the consumer.
Furthermore, due to the fact that a considerable portion of the product to be consumed comes into contact with this mobile air bubble within the package, which certainly contains oxidizing agents and could also contain contaminating agents of any nature, it occurs in the areas of product contacted by said bubble, with subsequent rapid extension to the neighboring areas, a premature alteration of the product which induces an excessively rapid deterioration of the entire commodity.
The object of the present invention is therefore to eliminate the aforementioned drawbacks.
The preceding objects are achieved with a process having the characteristics of claim 1. In particular a process for making a package of a food product packaged in a liquid or semi-liquid condition, in particular a melted cheese, yogurt, cream and the like; the process providing for using a casing defining a chamber for housing the food product and having a through opening opening inside said chamber for housing the product and outwards, for introducing the product in liquid condition into said housing chamber through the said through opening and to hermetically reclose, by reciprocally welding opposite surfaces of said casing, said casing; the process being characterized by the fact that in said filling step the wrapper is filled up to a predetermined level, and by the fact that the sealing of the package is carried out at or near the said predetermined filling level in such a way as to avoid that air bubbles remain in the product inside the package.
With the present invention, thanks to the fact that the sealing is carried out in such a way as to prevent any air bubble from remaining inside the package, it is possible to avoid the aforementioned inconveniences caused to the packaged product by said air bubble.
Furthermore, when a product that solidifies is packaged, such as cheese that is introduced, in melted condition, into the wrapping defining the package, the generation of those small holes in the surface of the product that make it unpleasant, even from the point of aesthetic view, the product to the consumer.
The present invention also relates to a package for a food product, obtained according to the present process.
The secondary claims refer to particular and advantageous embodiments.
Ulteriori caratteristiche e vantaggi del trovato risulteranno maggiormente evidenti nella descrizione dettagliata che segue, fatta con riferimento ai disegni allegati, che ne rappresentano una forma di realizzazione puramente esemplificativa e non limitativa, in cui: Further characteristics and advantages of the invention will become more evident in the detailed description that follows, made with reference to the attached drawings, which represent a purely exemplary and non-limiting embodiment thereof, in which:
la figura 1 illustra una vista frontale della confezione in condizione vuota; Figure 1 illustrates a front view of the package in an empty condition;
la figura 2 illustra una vista in sezione della presente confezione, presa secondo la linea ll-ll della figura 1 e mostrante la fase di riempimento della presente realizzazione preferita del trovato; Figure 2 illustrates a sectional view of the present package, taken along the line II-II of Figure 1 and showing the filling step of the present preferred embodiment of the invention;
la figura 3 illustra la fase di avvicinamento delle piastre di saldatura secondo la realizzazione preferita del presente trovato; Figure 3 illustrates the step of approaching the welding plates according to the preferred embodiment of the present invention;
la figura 4 illustra la fase di saldatura della presente realizzazione di procedimento; Figure 4 illustrates the welding step of the present method embodiment;
la figura 5 illustra in vista in sezione longitudinale la parte superiore della confezione ottenuta secondo il procedimento del presente trovato; Figure 5 is a longitudinal section view of the upper part of the package obtained according to the method of the present invention;
Figure 6 shows a front view of the upper part of the package obtained according to the method of the present invention.
With reference to Figures 1 and 2, it can be seen that the present preferred embodiment of the method of the invention provides for the use of a casing 10 made of thermosealable plastic material starting from a first and a second opposing shells 12, 14, in internally peelable material , shaped and associated by perimeter welding 16 (indicated by hatching in Figure 1) in such a way as to create a chamber 18 for housing the food product 19, in this case a melted cheese, introduced as illustrated in Figure 2 in a liquid condition inside said chamber 18, through a suitable opening 20 provided in the upper part of the casing 10.
As shown in Figures 1 and 2, the casing 10 also comprises a first 22 and a second 24 opposing fins for gripping and opening the casing extending from the respective peelable half-shells 12, 14 on the side opposite to that occupied by the inlet opening 20 of the product inside the chamber 18. Said grip flaps 22 and 24 can be grasped by the user who, by pulling said flaps 22, 24 in opposite directions, detaches the shells 12, 14 from each other, releasing the portion of cheese ready to be to be consumed in solid condition.
According to a preferred method of embodiment of the invention, a casing is used in which said introduction opening is formed by a tubular duct 26 extending above said chamber 18 for housing the product. Said tubular duct 26 has, by way of example, an internal diameter that can be around 10 mm or less.
The present process therefore provides, as shown in Figure 2, a phase of filling the chamber 18 in which the casing 10 is filled up to a predetermined level L, in correspondence with the said tubular duct 26 for introducing the product in a liquid condition.
According to the present preferred embodiment of the method, it is envisaged to carry out the hermetic sealing 28 for closing the package by welding opposite surfaces of the said casing located on said tubular inlet pipe 26, as shown in Figure 3, in an intermediate area of said pipe tubular 26 at, in particular slightly below, said filling level L in such a way as to avoid the formation of air bubbles in the product inside the package.
In order to carry out the closing welding 28, sealing means are used, in particular a first and a second sealing elements or plates 30, 32 opposite each other and having a respective transversal surface 34, 36 for mutual contact and welding of the portion of the tubular element 26 which is located positioned between them.
Preferably and advantageously, the transverse welding surfaces 34, 36 have, in correspondence with the transverse welding line, a thickness or height S equal to 2 mm.
Such an extension of the sealing area causes the product in liquid condition which is between the transverse sealing surfaces to be moved away from the surfaces in welding contact of the casing. A part of this product displaced by the sealing plates is pushed towards the housing chamber 18 and a remaining part remains in the non-welded upper part of said duct 26.
It is believed that a thickness S of the transverse contact and welding surface of said duct 26 varying between 1.7 and 2.3 mm can allow to obtain the aforesaid advantageous effect achieved with the preferred value of 2 mm.
According to the present process, it is also provided that the speed with which the said welding means 30, 32 engage the said tubular element 26 is such as not to cause the product 19 to escape above the said tubular element 26. The welding action is generally performed by approaching and contacting the sealing elements 30, 32 in approximately 1 s.
In particular, as shown in Figures 4 and 5, since this sealing crushing operation is performed at a speed that is not excessively high and by solidifying said product with a certain speed, the part 19 'of the product present in the welding area 28, which is moved as a result of said welding action above the same weld 28, is retained by the upper portion 26 'of said tubular element 26. Said portion 26' has, in fact, as a consequence of the welding action, a substantially goblet-shaped flared shape suitable for housing a certain amount of residual product.
As shown in figure 5, said upper flared portion 26 ’of said tubular element 26 located above said sealing seal 28 is advantageously removed, in particular sheared through the cutting means 38, from said casing 10.
As shown in Figures 3 and 4, the sealing elements 30, 32 also have a respective lower surface 40, 42 shaped such as to compress, upon contact with the tubular duct of the casing 10, the product in correspondence with the welding area towards the inside the chamber 18 for housing the product 19. The sealing means 30, 32 have in particular a respective lower compression surface 40, 42 which extends from the respective transverse contact and sealing surface 34, 36, with a downward inclination of a predetermined angle, preferably equal to 45 °.
The invention thus conceived is susceptible of numerous modifications and variations, all of which are within the scope of the inventive concept. Furthermore, all the details can be replaced by technically equivalent elements. In particular, it is possible that said tubular element on which the sealing welding is carried out is not obtained directly by shaping the said casing and is instead in the form of a separate tubular element, which is associated with said casing at the inlet opening. of the product. In this text, the term tubular duct must therefore be understood as also encompassing the latter aforementioned realization of a tubular element separated from the casing.
