In previsione di una possibile interazione tra l'ossigeno del monossido di azoto ed i doppi legami carbonio degli addi grassi presenti nella matrice, à ̈ stato ipotizzato, in fase sperimentale, quale conseguenza di un incremento dei perossidi costante nelle varie fasi dei tre prelievi di olio con diverso contento di gas disciolto, come legame intermedio la formazione di epossidi, per i quali à ̈ stato condotto un test di citotossicità , ed infine, di nuovi composti azotati e/o un miglioramento della matrice a seguito liberazione della frazione libera (attiva) dei biofenoli anche questi precedentemente testati. Infatti, sono stati eseguiti i test chimici, dei cui risultati, si à ̈ già avuto modo di scrivere.
