Abstract

Method for the continuous production of a granular food product based on cooked and expanded starch, comprising the phases of: subjecting to partial cooking a granular food product based on starch, by essentially saturated steam, in a first cooking chamber 20 maintained at a pressure at least equal to atmospheric; completing the cooking of the precooked food product thus obtained in a second cooking chamber 49, maintained under vacuum, in which said precooked food product is simultaneously subjected to expansion by evaporation of a portion of the moisture contained in it. The final product is a cooked granular food product, expanded and essentially sterile, which has a preferred use as semifinished product or ingredient in the preparation of complete foods, in particular, so-called "baby-foods" for infants. <IMAGE>
