Abstract
Viene descritto un procedimento migliorato per la conservazione di prodotti alimentari fermentati a base di carne bovina, suina ed ovina, in particolare salumi e simili, in cui si elimina l'aggiunta dei nitriti e nitrati di necessari per l'arrossamento della carne e per ostacolare la crescita di batteri gram negativi e di clostridi solfitoriduttori, e durante la fase della salatura si inietta una combinazione di tre ceppi batterici assieme ad una sostanza non tossica in grado di far avvenire la reazione di arrossamento della carne.
