Abstract
Il presente trovato si riferisce ad un procedimento e ad un'apparecchiatura per la produzione in continuo di pasta, gnocchi o simili. Il procedimento consiste nell'eseguire in continuo l'idratazione e temperatura controllata e l'impastazione di una farina gelificata e l'estrusione dell'impasto attraverso una testa di estrusione per la formatura di pasta, gnocchi o simili. La pasta o gli gnocchi prodotti possono essere consumati subito oppure confezionati per essere consumati successivamente dopo una breve immersione in acqua calda.
